Copycat Birthday Cake Remix Ice Cream
This is a copycat recipe of one of my very favorite ice creams – Brithday Cake Remix from Cold Stone. If you’ve never had it before, it is the jam. Like, for realises. SO good. Ever since we had it for the first time years ago, it has been in the ice cream cakes we get from Cold Stone for our birthdays every year. We will seriously fight over the last piece.
So I decided to make my own. And one of the great things about this recipe is that it doesn’t require an ice cream maker. I love being able to quickly throw the ingredients in a mixer and then freeze it. No cooking or lengthy freezing and mixing instructions to work through. That’s my kind of recipe!

Ingredients
- 1/2 cup milk
- 1 3/4 cup vanilla or funfetti box cake mix
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 8 oz Cool Whip, thawed
- 1 1.75 oz container of sprinkles (about 5 tbsp)
- 2 1/2 large brownies, broken into pieces
- 2 tbsp chocolate sundae syrup

The consistency of mine is more like marshmallow cream than ice cream. am I doing something wrong? It’s been in the freezer for several hours.
