Easy No-Churn Cake Batter Ice Cream
Nothing hits the spot like ice cream on a hot day. My family has always been obsessed with the Birthday Cake Remix ice cream from Cold Stone, so I set out to recreate it at home. Thank goodness I did! It’s the perfect copycat – and I love the fact that I don’t have to cook anything or bother with an ice cream machine.
If you frequently go out for ice cream in the summer, this recipe is the budget-friendly solution you’ve been searching for. So save yourself the trip! Every bite of this creamy, refreshing cake batter ice cream is loaded with brownie, sprinkles and chocolate syrup. You’ll be licking it off of your bowl!
What You’ll Need

- Milk: 2% or whole milk is best.
- Funfetti Cake Mix: Since extra sprinkles will be added, you could also use plain vanilla.
- Cream Cheese: Softened.
- Granulated Sugar
- Cool Whip: Thawed – or Homemade Whipped Cream.
- Rainbow Sprinkles: I recommend using jimmies-style sprinkles or another kind that won’t bleed into the ice cream (avoid the small round nonpareils).
- Large Brownies: Broken into pieces. You can buy pre-made brownie chunks if preferred.
- Chocolate Sundae Syrup: Or Homemade Hot Fudge Sauce.
How to Make Birthday Cake Ice Cream
This decadent ice cream comes together with minimal effort. The hardest part is waiting for it to freeze!
- Combine Milk, Cake Mix, Cream Cheese & Sugar: Combine the milk, cake mix, cream cheese and sugar with a mixer. Mix until smooth.
- Add Cool Whip: Add in the Cool Whip and mix until combined.
- Add Sprinkles & Brownies: Add the sprinkles and brownie chunks and mix until combined.
- Stir in Chocolate Syrup: Stir in the chocolate sundae syrup. Stirring a little less will give you more of a ribbon throughout the ice cream. Stirring more will make it more uniformly chocolatey.
- Freeze: Transfer the ice cream to a freezer-safe container and freeze it for at least 4 hours.
- Enjoy! Scoop and serve.

- Use High-Fat Milk for the Creamiest Texture: While plant-based milk or low-fat milk would work in this recipe, you’ll get creamier results with 2% or whole milk. Without the extra fat, your ice cream would also become icy more quickly.
- Make the Mix-Ins From Scratch: You don’t have to use homemade whipped cream, brownies or hot fudge sauce, but if you do, your ice cream will be unbeatable. It’s more than worth the extra time!
- Let It Set: This ice cream has to chill in the freezer for 4-5 hours to reach the proper consistency. The back of the freezer tends to stay colder than the front, so putting it there might help speed up the process.

- Switch Up the Add-Ins: Go ahead and use any mix-ins you’re craving – just try not to stuff too many different things into one batch. M&Ms, nuts, chocolate chips, Oreo cookie pieces or Edible Cookie Dough would be delicious.

There are already so many goodies in this ice cream, it really doesn’t need anything extra on top. But if you’re serving it for a birthday or another special occasion, you might as well go all out! Try topping it with extra sprinkles, chocolate sauce or whipped cream for a quick finishing touch. If you’re a big sweet tooth, you’ll love how it tastes with a drizzle of Brown Sugar Caramel Sauce.

Ingredients
- 1/2 cup milk
- 1 3/4 cup vanilla or Funfetti box cake mix
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 8 oz Cool Whip, thawed – or Homemade Whipped Cream
- 1 1.75 oz container of sprinkles (about 5 tbsp)
- 2 1/2 large brownies, broken into pieces
- 2 tbsp chocolate sundae syrup or Homemade Hot Fudge Sauce
Instructions
- Mix the milk, cake mix, cream cheese and sugar together with a mixer. Mix until smooth.
- Add the Cool Whip and mix until combined.
- Add the sprinkles and brownies (you can use store-bought or homemade brownies) and mix until combined.
- Stir in the chocolate sundae syrup. Stirring a little less will give more of a ribbon of chocolate to the ice cream. Stirring more will make it more uniformly chocolatey.
- Transfer mixture to a freezer-safe container and freeze for 3-4 hours, then scoop and serve.
