This Triple Chocolate Cookie Cake is seriously awesome and addictive! It might even be better than my regular Chocolate Chip Cookie Cake, Funfetti Cake Batter Cookie Cake and Oatmeal Raisin Cookie Cake. If nothing else, it’s some good competition.

Certainly there’s a cookie cake for everyone here!

But before we get too far into the cookie and can’t turn back, I want to share some exciting news. Today is the 1 year blogiversary for Life, Love and Sugar!

It’s hard to believe it’s been a year since my first posts (I posted 3 the first day so that it wouldn’t feel so empty 🙂 ). At the time, I hadn’t really narrowed down what I’d be blogging about. I was just starting to try and get pregnant so I thought I might have a little more of that mixed in but alas there’s no baby yet. And as time went on it became clear that food – mostly sweets with a little bit a savory mixed in – was what I wanted to do. I love all food, especially delicious treats, and it’s what you all seem to want too. What you want, you shall get!

And let’s be honest, you all are what makes this blog what it is. Without you wonderful readers, it’d be nothing.

So I want to send out a HUGE thank you to all of you who read, share, comment and make the recipes I post. Knowing you enjoy the recipes and find them great enough to share with people is what really makes my day and keeps me working to make the next best recipe.

The other super exciting news is that I am moving the blog from wordpress.com to a self hosted blog on wordpress.org. It’s so close to being ready and I can’t wait! That’s part of why I’ve been a little MIA the past week or so – so much to do! Hopefully I can make it official this weekend.

Truthfully it may not look much different to you initially. As time goes on, I’d like to do more. But the initial thing I think you will love and I’m adding just for you is a much better printing ability. I’ve received a number of emails about how the print button now prints the whole post as well as comments, so once I officially make the switch, that won’t be a problem anymore. Yay!!

The only thing is that I may loose some of my wonderful followers. I’m trying to get all my email subscribers transferred over, but those of you who follow via wordpress will no longer see my new posts unless you subscribe via email or another method, such as Bloglovin or Facebook. I just wanted to give you all a heads up! I don’t want you to miss out!

So of course if makes sense that I’d celebrate a blogiversary and an exciting change with a cake! And not just any cake, but a triple chocolate cookie cake. It is FULL of dark chocolate, semi sweet chocolate chunks and milk chocolate M&Ms. Yum!

And like I said before, so moist, chewy and chocolatey with the perfect texture. I didn’t want to stop eating it. Really.

Plus, I love the pop of color from the M&Ms. So pretty and happy! It might even be as happy as the sprinkle filled Funfetti Cake Batter Cookie Cake. 🙂

Triple Chocolate Cookie Cake

Description

This incredible Triple Chocolate Cookie Cake is made with a fudgy chocolate cookie base filled with M&M’s and topped with rich chocolate buttercream! It’s a chocoholic’s greatest weakness!


Ingredients

COOKIE CAKE

  • 3/4 cup (168g) salted butter, room temperature
  • 1/2 cup (72g) dark brown sugar, lightly packed
  • 1/2 cup (104g) sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups (163g) all purpose flour
  • 1/2 cup (57g) cocoa (I use Hershey’s Special Dark)
  • 1 tsp baking soda
  • 1/23/4 cup of chocolate chunks
  • 1/2 cup M&Ms

CHOCOLATE BUTTERCREAM

  • 1/4 cup (56g) butter
  • 1/4 cup (48g) shortening
  • 1/4 cup (29g) cocoa
  • 2 cups (230g) powdered sugar
  • 23 tbsp (30-45ml) water

Instructions

COOKIE CAKE

1. Cream butter and both sugars together until light and fluffy, about 3-4 minutes.
2. Mix in egg and vanilla extract.
3. Add flour, cocoa and baking soda and mix until combined.
4. Stir in chocolate chunks and M&MS. Dough will be thick and sticky.
5. Chill for at least 3 hours or overnight.
6. When ready to bake, preheat oven to 350 degrees.
7. Place a parchment circle in the bottom of a 9 inch cake pan to help the cookie not stick. Grease the sides.
8. Spread the dough out into the cake pan. Bake for 18-20 minutes.
9. Remove from oven and allow to cool completely in the pan, then carefully transfer to a serving plate.

CHOCOLATE BUTTERCREAM

1. Beat the shortening and butter until smooth.
2. Slowly add cocoa and half of powdered sugar. Mix until combined.
3. Add 1-2 tbsp water.
4. Add the rest of the powdered sugar and mix until smooth. Add water to get the right consistency.

    Why do you chill it for so long?? Now I have a solid lump of dough 😭 did you mean for us to put it in the pan first?

      While you don’t have to chill it first, it can make for a better cookie. That said, it’ll be firm after refrigerating, so you’ll need to bring it back to room temperature. You could also chill it in the pan, but I’d still recommend bringing it back to room temperature before baking it.

    This is great! Didn’t use M&Ms or make the buttercream, but used this recipe to make double chocolate cookie bars. Freezing for 20 minutes also works instead of refrigerating for 3 hours. Would definitely make this again!

    Hi, love this blog!
    The cake tasted delicious, but the texture was very strange. I went back to look over the recipe to see if I had missed an ingredient, and noticed that brown sugar was listed in the ingredients, but it wasn’t specified in the recipe when the brown sugar should be added. Should I have creamed it in with the granulated sugar and the butter?

      Glad to hear you enjoy it! You’ll want to add the brown sugar at the same time as the regular sugar and cream both with the butter.

    I doubled the recipe to make it in a 9×12 cake pan for my sons birthday tomorrow. It’s currently chilling and I’m wondering if the temp and cook time will differ since I’m not using a round pan and have double amount of batter. Any help would be appreciated! I don’t want to mess it up since I don’t have a backup plan! Thank you!
