One ingredient Strawberry Ice Cream

Whew! It’s been a crazy couple of weeks.

Between having family in town and trying to get the blog moved over to a self-hosted blog, I’ve been busy. Fortunately, the blog was transferred over and updated over the weekend. And I finally got all the email subscribers transferred over just a few hours ago. πŸ™‚

The new things I’m most excited about:

1. The home page looks a little different – less scrolling involved to get to more content

2. I’m using a new plugin to format the recipes that allows you to print them without having to print the whole post and the comments. Saving one tree at a time!

3. New ways to share the recipes at the bottom of each post


There are a few other little things that I notice, but you guys won’t. Hopefully I can bring even more to you over time. πŸ™‚

So I’m finally ready to bring you a new recipe! It’s a simple one, but simple is my favorite kind of recipe.

Have you seen my One Ingredient Banana Ice Cream? If you haven’t you should really check it out. Talk about a healthy and skinny ice cream!

Making ice cream from bananas had me wondering if I could do the same with other fruits. Since strawberries are one of my favorites and I thought they might work well, I gave it a shot.

I froze the berries and then tossed them in the food processor.


The results are awesome! Depending on how sweet your strawberries are, you could add a little sugar or other sweetener, but it’s up to you! And if you like things a little creamier, you could add a scoop of Cool Whip!

I think it’s best eaten right away, but you can freeze it for later if you want. Just know that is freezes pretty hard so you may need to microwave it for about 30 seconds before scooping it into a bowl.

Simple. Healthy. Skinny. Awesome.

And great for the little bit of summer we have remaining. πŸ™‚

One ingredient Strawberry Ice Cream

  • Yield: 1 Cup, Serves 1-2 1x
  • Category: Dessert
  • Method: No Bake
  • Cuisine: American


  • 2 cups chopped strawberries
  • 12 tsp sugar, optional


1. Chop strawberries in half.
2. Freeze strawberries
3. Put frozen strawberries into a food processor and blend. You may need to scraped down the sides a few times.
4. Keep blending until it smooths out into soft serve strawberry ice cream.
5. Eat immediately or freeze for later. Serve with your favorite toppings.


If you prefer something a little creamier, try adding a scoop or two of Cool Whip. Also, if you don’t eat it right away, you will probably need to microwave it for about 30 seconds before scooping into a dish – it freezes pretty hard.
