Moist Chocolate Cupcakes with Ganache Filling

These Moist Chocolate Cupcakes are only made more delicious by the ganache filling in the middle. They are moist, a little fluffy, a little dense and oh so chocolatey! And they got rave reviews.

If there’s one thing everyone loves, it’s good, moist chocolate cupcakes. It’s a necessity. I didn’t even like chocolate cupcakes until I finally had a good one.

And while I totally love this chocolate cake recipe and have used it time and time again as a cake and cupcakes, I’ve been wanting to make a chocolate version of my vanilla cupcake for a while and finally decided it was time.

One of the things I love about this recipe is that it’s all made it one bowl and is so easy to put together. It also uses regular ingredients that you normally have. I’m sometimes asked with the vanilla cupcakes if the sour cream can be subbed for something else. The answer is yes, you can use milk instead, but the sour cream adds so much moisture. It’s one of the main ingredients I wanted to have in my cupcake when developing them. So obviously I’d recommend keeping it, if you can.

As for texture, this chocolate recipe is going to be a little denser than my other chocolate cake. It’s still nice and light, but different. It’s more of what you think of when you think of chocolate cake. The other one is intensely chocolatey, crazy moist and definitely fluffy. Both are awesome, its just a matter of which one you want. I’ll definitely be using both at different times. I like options. 🙂

The ganache filling is such a good call. Yes, you could leave it out, but it’s soft, delicious and adds just enough richness to take these cupcakes over the top. Chocolate, chocolate and more chocolate. Yes, please.

And the frosting? Well the hubs, who will normally removes icing from a cupcake before eating it, actually ate this icing. A miracle, I tell you. He loved it.

The icing recipe calls for a mixture of butter and shortening, which is how I prefer to make my icing. When I use all butter, I feel like it tastes pretty buttery, which isn’t my preference. I also like this it’s a more stable icing this way. If you don’t like shortening though, or can’t find it where you are, you can definitely use all butter.

So if you’re a fan of my vanilla cupcake, you’ll love this chocolate version. My family and I couldn’t stop eating them and they disappeared in no time. The chocolate ganache in the center takes them over the edge so that they will satisfy your biggest chocolate craving. Yum!

Moist Chocolate Cupcakes with Ganache Filling

Yield: 12-14 cupcakes

Ingredients

Cupcakes
1 1/3 cups all purpose flour
1/4 cup cocoa (I use Hershey's Special Dark Cocoa)
1 cup sugar
1/4 tsp baking soda
1 tsp baking powder
3/4 cup salted butter, softened but not fully melted
1 egg white
1 egg
1 tsp vanilla extract
1/2 cup sour cream
1/2 cup milk

Ganache
6 oz semi-sweet chocolate chips
1/4 cup heavy whipping cream
3 tbsp salted butter

Icing
1/2 cup shortening
1/2 cup salted butter
4 cups powdered sugar
1/4 cup + 2 tbsp cocoa
5-6 tbsp water or milk

Instructions

Cupcakes
1. Preheat oven to 350 degrees.
2. Whisk together flour, cocoa, sugar, baking soda and baking powder in a large mixing bowl.
3. Add butter, egg white, egg, vanilla, sour cream and milk to the dry ingredients and mix on medium speed just until smooth. Do not over mix.
4. Fill cupcake liners a little more than half way.
5. Bake 18-20 minutes.
6. Allow to cool for 1-2 minutes, then remove to cooling rack to finish cooling.

Ganache
1. Put chocolate chips into a microwave safe bowl.
2. Add heavy whipping cream and butter to bowl with chocolate chips. Heavy cream should mostly cover the chocolate chips.
3. Microwave mixture until cream begins to boil, about 1-2 minutes.
4. Whisk mixture until chocolate is completely melted. Set aside to cool for about 5 minutes, until the chocolate begins to thicken.
5. When thickened, cut out a hole in the center of the cupcakes. I used a cupcake corer. Pour ganache into whole, filling it.

Icing
1. Combine butter and shortening and mix until smooth.
2. Add 2 cups of powdered sugar and mix until smooth.
3. Add cocoa and 3-4 tbsp of water or milk and mix until smooth.
4. Add remaining powdered sugar and mix until smooth.
5. Add more water or milk until desired consistency is reached.
6. Top cupcakes with icing.

Note: You may notice little bits of butter in the batter, but that's ok. They will melt into the cupcake as they bake.
