This trifle is like all my dreams come true in a dessert. It was torture to have it in our house. One of the tough things about making all the recipes I have on my site is that they are all so good (in my opinion, obviously) and I want to eat every bite. I simply can’t do that since I would gain a million pounds. So I end up tortured. I taste things (sometimes I taste them too much), but then I stop. The rest I try to give things away to people the hubs works with or slice things and freeze them for my mom to give away.

Anyhow, this trifle is so darn good I just wanted it all. It’s rich, indulgent and amazing. If you don’t have a big sweet tooth, this baby might not be for you. If you do have a solid sweet tooth, just grab a big spoon and dig in!

How to Make a Caramel Cheesecake Brownie Trifle

So to get started with this trifle, you’ll need brownies. I started with my Quick and Easy Brownies that I love and use often. They are one of my favorite brownies and so simple to put together. While they are super quick to make, you could also buy some ready-made brownies if you were short on time.

Next up is the caramel cheesecake filling. The base of the filling is made with cream cheese and whipped cream that are combined. The caramel flavor comes from the addition of brown sugar, some vanilla extract and caramel sauce. I used a caramel topping that can easily be purchased from the grocery store, but if you want to spend a little more time on it, I’d recommend my Homemade Caramel Sauce. So good!

The final thing to make is the homemade chocolate whipped cream! All you need is some heavy whipping cream, cocoa powder, powdered sugar and a little vanilla extract. Whip it on it high speed until you’ve got stiff peaks. Works like a dream and tastes amazing! The cocoa and powdered sugar not only give it flavor, it also helps keep the whipped cream stable so this trifle lasts for several days without any wilting whipped cream. Yay!

Between all those layers you’ll also find more caramel sauce, chocolate sauce and some caramel candies. I used Health candy bits and chopped Rolos and I have to say that the Rolos were one of my favorite parts of the trifle. I LOVED the chewiness they added, along with the additional caramel. It went perfectly with the chewy brownies. Yum, yum, YUM!

Seriously, this is a trifle you need to make. It’s perfect for sharing with a crowd and such an easy dessert to make ahead. And there’s no doubt it’ll be a hit! Such an amazing creamy caramel filling, chewy brownies, chewy candies and yummy sauces – how could you wrong?

  • 1 1/2 cups (336g) unsalted butter, melted
  • 2 cups (414g) sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 1/2 cups (195g) all purpose flour
  • 3/4 cup (85g) unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Caramel Cheesecake Filling

  • 16 oz (452g) cream cheese, room temperature
  • 1/2 cup (113g) brown sugar, packed
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cups caramel sauce
  • 1 1/4 cups (300ml) heavy whipping cream, cold
  • 1/2 cup (58g) powdered sugar

Chocolate Whipped Cream

  • 1 1/4 cups (300ml) heavy whipping cream, cold
  • 1/2 cup (58g) powdered sugar
  • 3 tbsp natural unsweetened cocoa powder
  • 1 tsp vanilla extract



1. Preheat oven to 350°F (176°C). Grease a 9×13 inch (23×33 cm) baking pan.
2. To make the brownie, combine the butter, sugar and vanilla extract in a medium sized bowl.
3. Add eggs and mix until well combined.
4. Combine flour, cocoa, baking powder and salt in another medium sized bowl.
5. Add the dry ingredients to the egg mixture and mix until well combined.
6. Pour the batter into the prepared pan and spread evenly.
7. Bake for 24-27 minutes, or until a toothpick comes out with a few moist crumbs. Set aside to cool.
8. To make the cheesecake filling, add the cream cheese and brown sugar to a large mixer bowl and mix until well combined and smooth.
9. Add the vanilla extract and caramel sauce and mix until well combined. Set aside.
10. In another bowl, add the heavy whipping cream and powdered sugar to make the whipped cream. Whip on high speed until stiff peaks form.
11. Fold about 1/3 of the whipped cream into the cream cheese mixture until combined.
12. Add the remaining whipped cream to the cream cheese mixture and fold until combined. Set aside.
13. To layer everything together, cut the brownie into small pieces. Add a little less than half of the brownie pieces to the bottom of the trifle dish.
14. Drizzle 3-4 tablespoons of chocolate sauce over the brownies.
15. Add about half of the caramel cheesecake filling in an even layer on top of the brownies and chocolate sauce.
16. Drizzle 3-4 tablespoons of caramel sauce over the cheesecake filling, then add a layer of your choice of candies. I added about 2-3 tablespoons of health bits and 10 Rolos that were cut into quarters.
17. Repeat with another layer of brownies, chocolate sauce, caramel cheesecake filling, caramel sauce and candies.
18. To make the chocolate whipped cream for the top of the trifle, add the heavy whipping cream, powdered sugar, cocoa powder and vanilla extract to a large mixer bowl. Whip on high speed until stiff peaks form.
19. Spread about half of the chocolate whipped cream into an even layer on top of the trifle, then use the remaining whipped cream to pipe swirls on top. Use any remaining brownie pieces, candies and sauces to decorate the top of the trifle.
20. Refrigerate trifle until ready to serve. I like to let it all set together for a few hours before serving. Trifle is best when stored well covered in the fridge and eaten within 3-4 days.

    Is the cocoa used in the brownies the same thing that is used in the chocolate whip cream? I’m making my grocery list and just wanted to know if I needed to be looking for both “cocoa” and “unsweetened cocoa powder” because I feel like they’re the same thing, but I don’t do much baking so wanted to make sure.

    Can you make this the night before an event and store it in the fridge? Or does the whipped cream destabilize? 


    I need this!!! This is my kind of dessert and it looks so good :). I completely agree that food blogging sure does make it find to hard balance as far as the baking and the eating. Sometimes I wonder if people get sick of me bringing them a plate of treats, but treat-giving is just how I show my love. AND with only two of us around sometimes we just need help with the eating!
