    S’mores Pizza

After making my Chocolate Chip Cookie Dough Pizza a few months ago on a pie crust, I knew I’d be using pie crust for another pizza some time soon.

The buttery, flaky crust gives extra flavor and because it’s so thin, you don’t have a ton of bread dough taking away from the flavors piled on top. It’s surprisingly awesome and gives new meaning to the phrase “pizza pie”. 🙂

It’s also quite easy to make.

How to Make The Best S’mores Pizza

Obviously, you start with the pie crust. Lay that flat on a pie pan or cookie sheet that is large enough.

Melt one tablespoon of butter and spread that onto the pie crust, then top it with 1/4 cup of graham cracker crumbs. That gets baked until the crust is almost done. You want to take it out of the oven just before the edges start to brown. We’ll be baking it again once all the topping are on and you don’t want the crust to end up burned.

You should have a nice, crispy crust.

While the crust baked, I got everything else ready. You’ll need to make the chocolate ganache, which sounds scary but is the easiest thing in the world to make. Just put your cream in a microwave safe bowl, heat until it starts to bowl, then pour it over your chocolate chips in another bowl. Cover the bowl with saran wrap for 5-7 minutes, which the heat from the cream melts the chocolate. Then whisk away! Easy peasy.

Let it sit for a few minutes to begin to thicken.

You’ll also want to combine the rest of the melted butter with the rest of the graham cracker crumbs and mix it all together.

Once the crust, graham cracker crumbs and chocolate ganache are ready to go, the layering begins!

Start with the chocolate ganache. Spread that on there!

Then sprinkle on the graham cracker crumbs. Yummy!

Next, add even more chocolate in the form of pieces of a chocolate bar – because it’s essential to a good s’more! I used Hershey’s because it’s classic, but any will do.

Top it with a few more pieces of graham cracker. I took about 2 and a half full graham cracker rectangles and broke them into pieces.

Then cover it all in marshmallows and bake!

You get a gooey, melty delicious s’mores pizza! Obviously you want to eat it warm! And be careful, the marshmallows are sticky! You might want to put a little shortening on your knife before you slice it so it doesn’t stick as much.

And just in case you don’t finish it all in one sitting (how could that happen?!) you can always reheat it. I put it back in the oven while it was cold, set it to heat up to 350 degrees, and by the time it reached temperature, it was heated beautifully and melty all over again. Yum!

    Description

This S’mores Pizza is melty, gooey and dripping in chocolate, marshmallow and graham cracker crumbs. It’s the perfect summer dessert to make without needing a campfire! And it’s all on top of a crumbly pie crust.

    Ingredients

    • 1 Pillsbury refrigerated pie crust
    • 7 tbsp butter, melted, divided
    • 1 1/4 cup graham cracker crumbs
    • 6 oz semi sweet chocolate chips (about 3/4 cup cup)
    • 1/3 cup heavy whipping cream
    • three 1.55 oz Hershey’s chocolate bars
    • 23 full graham cracker rectangles, broken into pieces
    • 2 cups mini marshmallows
    • chocolate sauce, for drizzling, optional (the one I used)

    Instructions

    1. Preheat oven to 350 degrees.
    2. Unroll one Pillsbury pie crust. Lay flat on a 12 inch pizza pan and poke all over with a fork.
    3. Spread 1 tbsp melted butter onto pie crust, then cover with 1/4 cup graham cracker crumbs.
    4. Bake pie crust for about 9-10 minutes, removing from oven just before edges start to brown.
    5. While crust bakes, place chocolate chips in a metal bowl.
    6. Microwave heavy cream until it starts to boil. Remove from microwave and pour over chocolate chips.
    7. Cover bowl with saran wrap for 5-7 minutes.
    8. While the chocolate sits, combine melted butter and graham crackers. Set aside.
    9. Whisk chocolate and cream until smooth.
    10. Allow ganache to sit for about 5 minutes, to thicken slightly
    11. Remove pie crust from oven when done and allow to cool until chocolate ganache is ready.
    12. Pour ganache over the pie crust and spread into an even layer.
    13. Add graham cracker crumbs in an even layer on top of the chocolate ganache.
    14. Top with pieces of Hershey’s chocolate bar, pieces of broken graham cracker and a layer of marshmallows.
    15. Bake at 350 degrees for about 4-5 minutes, until marshmallows get puffy. The switch oven to convection bake at 350 degrees for about 2-3 minutes.
    16. All to cool for about 5 minutes. Serve warm.

We’ve made this 3 times now, each time a little different, but each time great! The first time I misread the directions regarding the graham crackers, but we still lived it. The second time, I think I made it exactly as written. Tonight, the third time, I made it in a pie pan instead of on a pizza pan. (And I substituted evaporated milk for heavy cream because I was out.) Both changes worked out great! We actually like S’mores Pie better than S’mores Pizza. Thanks for the recipe! It’s a family favorite!

I made this last night with my kiddos. I loved how fun and easy it was! It turned out lovely even though I don’t have a convection oven…I just watched it closely after the initial cooking time so the marshmallows didn’t over-brown. It was great cold next day too.
