Double Mint Chocolate Cookies

These soft and chewy Double Mint Chocolate Cookies are FULL of Andes mints and mint Oreo pieces. They are so perfectly minty and chocolaty, it’s hard to not eat the entire batch right out of the oven!

These Cookies Are Perfect For Mint Chocolate Lovers

The cookie itself is soft and chewy – my favorite! This a very similar recipe to the one used for my Triple Chocolate Cookie Cake. These cookies have mint though and it’s a serious party in your mouth.

I mean look at that picture below! All that deliciously melty mint chocolate – yum! Especially when eaten warm, the cookies just melt in your mouth. Seriously moan-worthy.

I made my cookies pretty big. I like big cookies. That way I get more. But you could totally make them smaller.

I’m actually a little torn on whether it’s better to have larger or smaller cookies. Here’s my thinking on that – if I make smaller cookies, I inevitably eat at least 2 at a time. One small cookie just isn’t enough. Then I feel like a fatty because I ate two cookies when I told myself I’d only eat one.

That seriously never happens.

But with bigger cookies, they’re bigger so you’re more likely to eat just one, right? Then, you feel less guilty because you only ate one like you said you would.

Yea I know. Who am I kidding? No matter what size they are I eat them until they’re gone. It’s a problem. But how can I not? Do you see that soft chocolaty center?

On another note, I feel like I’ve been kind of absent recently. I’ve been missing out on a lot of my normal link parties, haven’t been keeping up with my favorite bloggers and what they’re up to and I don’t feel like I’ve been as quick to respond to comments and questions. I hate that and it’s been bugging me, but know that there is a reason that I’ll hopefully be able to share next week. It’s been a bit of a crazy couple weeks but I think I’m finally getting it back together. And it’s definitely something I want to talk about, so more on that later.

Double Mint Chocolate Cookies

Description

These soft and chewy Double Mint Chocolate Cookies are FULL of Andes mints and mint Oreo pieces. They are so perfectly minty and chocolaty, it’s hard to not eat the entire batch right out of the oven!


Ingredients

  • 3/4 cup butter, room temperature
  • 1/2 cup dark brown sugar, lightly packed
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 cup cocoa
  • 1 tsp baking soda
  • 1/2 cup andes mints, chopped
  • 3/4 cup mint oreos, chopped

Instructions

1. Cream butter and sugar together until light and fluffy, about 3-4 minutes.
2. Mix in egg and vanilla extract.
3. Add flour, cocoa and baking soda and mix until combined.
4. Stir in Andes Mint pieces and chopped Oreos . Dough will be thick and sticky.
5. Chill for at least 2 hours or overnight.
6. When ready to bake, preheat oven to 350 degrees.
7. Make balls about the size of golf balls (or smaller if you prefer, just remember to adjust the bake time). Flatten out a bit and place onto a cookie sheet lined with parchment paper.
8. Bake for 8-10 minutes, or until the edges look firm but the center is still soft.
9. Cool for 1-2 minutes on cookie sheet, then finish cooling on a cooling rack

Notes

The colder the cookie dough, the less it will spread during baking. If your dough is pretty cold and you want larger cookies, I suggest flattening them out a bit before baking.

    I love love LOVE Andes Mints. They are so good. I remember when I was a kid there was a restaurant my family would go to and they had Andes Mints in a little tray buy the cash register. I always took one but I always wanted more!

    Made these yesterday night-pretty good! Although, how do you get your cookies to be so flat and round? I made them into the size of golfballs but when they were done, they came out like small mounds.

      It would probably help to flatten them a bit, especially if the dough is still pretty cold. The colder the dough, the less they spread when baking.

    Lindsay, these are a mint-chocolate lovers dream! I love all of the textures; gooey melted andes mints, crunchy oreo, and the soft-chewy cookie! The debate over small or large cookie has an important texture impact (as well as possible waist line impact šŸ™‚ ). I find that only in larger sized cookies do I get that wonderful firm-crisp edge and soft chewy center. The small ones get stale faster too. For care packages I always go big on cookie size. These will very soon find there way into a care package for my son! Thanks.

    Know what you mean with the size issue, eat a large one you feel bad but eat one small one you instantly reach for another one because their so small then you eat 4 in a row. I love the choc and mint combo, such a delicious classic. Pinning!
