Banana Cream Pudding in a Jar

These little individual Banana Cream Puddings in a Jar are such a fun, mini version of one my favorite desserts!
This summer I’m partnering with ALDI Grocery Stores for their virtual Summer Road Trip. After experiencing ALDI for the first time last fall and getting to go see their Test Kitchen, I fell in love. They have such great quality products at a great price. This summer they are “visiting” 5 different cities around the country and I’m representing Atlanta, GA. As a part of the road trip, I’ll be telling you all about southern food in Atlanta and some fun activities you can do if you ever visit.
Let’s start off today with some of my favorite Atlanta cuisine.
For me, Atlanta cuisine is all about the southern food. No where else will you find the best BBQ and fixings. Pulled pork is my favorite, but ribs are also very popular. Nothing beats that smoked pork that just falls right off the bone. Especially when paired with some great cornbread and fried pickles. In fact, fried pickles are one of my very favorites! It’s a pretty regular joke with my co-workers because whenever there are fried pickles around, I want them. And actually, you’ll find just about everything fried you can possibly fry in the South. Fried chicken is also a very popular one.
Fortunately, ALDI carries my favorite BBQ sauce for when I want to make pulled pork at home – Sweet Baby Rays. Though ALDI mostly has their own brand name products, they also have some national brands that are some of people’s favorites and that’s one of them. Yay!
Another favorite southern food of mine is shrimp and grits. Grits are totally a southern thing in my mind and I love them. The hubs and I actually had shrimp and grits as one of the food options on the buffet at our wedding. It’s a classic.
At a lot of Atlanta restaurants these days, you’ll actually find fun, modern twists on traditional southern food. One place in Atlanta that would be fun to visit is Two Urban Licks. There you’ll find pimento cheese hush puppies, smoked brisket and banana cream cheesecake. Seriously yum!
I haven’t had the banana cream cheesecake, but it’s on my list of things to try. Banana pudding, banana cream pie – those are some southern classics and I love them all. The hubs and I are huge fans of banana desserts.
So when I made Banana Cream Pudding in a Jar, the hubs about died. He and my dad loved them and so did I!
I’ve often made banana pudding from a mix, but there really is nothing quite like making it from scratch. It truly has that classic taste and it really is easy to make.
Sugar, cornstarch and milk are heated until it begins the thicken and bubble. You’ll simmer it for 2 minutes to allow it to further thicken. Then, a little bit of the milk mixture is added to the egg yolks. This tempers the egg yolks, meaning it warms them up slowly so they don’t cook too quickly, leaving you with scrambled eggs in your pudding. That wouldn’t be tasty. Once combined and warmed, the egg mixture is added to the milk mixture and boiled for another 2 minutes. Remove the milk mixture from the heat, add the vanilla and butter and allow it to cool. The pudding is done!
To keep these simple to make, just chop up some vanilla wafer cookies and place those into the bottom of the jars. Top the cookies with 2-3 slices of banana and fill the rest of the jar with pudding.
Refrigerate the pudding until firm, then finish them off with some whipped cream and another banana slice.
This is such a fun twist on a classic southern dessert and it’s so easy to make. It’s definitely one of our favorites!
