Baileys Hot Chocolate Ice Cream Pie

Well I hope everyone had a happy Thanksgiving! I know we had a great one, despite all the crazy driving and traffic. Now we get to look forward to Christmas – my favorite holiday and also my birthday. I wish I could say I’m kicking the week off with a fabulous Christmas themed treat, but alas I haven’t quite been on the ball yet. I plan to hop on it this week though.

Instead I bring you another wintery treat inspired by a ski trip that the hubs and I took back in February. We were out at Lake Tahoe, which is absolutely gorgeous, but much better skiing than we are skiers. I actually got WAY overconfident in my abilities and decided to try snowboarding with my husband. It did not go well. I ended up with a bruised behind and a nice walk down the mountain and back to the rental place to get back my trusty skis. As fun as it would be to snowboard alongside my husband, I just don’t see that happening. I almost died. Not really, but it felt that way.

Anyways, to get back to the point, one of our favorite things while we were out there was drinking hot chocolate with a shot of Baileys. You’d think we’d have had this before, but it didn’t seem that way. Every chance we got that was what we ordered. The combo of amazing chocolateyness (yes, it’s a word) and smooth Baileys was perfect.

So I made this wonderful ice cream pie in it’s honor. It certainly doesn’t skimp on the Baileys, so be ready for that kick. I suggest sitting down with a slice of this and a cup of the real thing. :)

Baileys Hot Chocolate Ice Cream Pie


15-20 oreos
1/4 cup butter, melted

1/4 cup milk
8 oz cream cheese, softened
1/2 cup sugar
1/2 cup cocoa
3-4 tbsp Baileys, depending on flavor preference
8 oz Cool Whip, thawed
2 1/2 cups marshmallows


1. Crush the oreos into a fine crumb.
2. Mix the oreo crumbs with the melted butter.
3. Press into the bottom of a greased 9 or 10 inch pie pan. Set in the freezer while you make the filling.

1. Mix the milk, cream cheese, and sugar together with an electric mixer. Mix until smooth.
2. Add cocoa and Baileys and mix well.
3. Gently fold in Cool Whip.
4. Remove pie crust from freezer and add half of the pie filling into the crust.
5. Add a layer of marshmallows.
6. Add the remaining pie filling.
9. Freeze overnight.
