This Pumpkin Spice Nutella Ice Cream Pie is creamy, light and delightfully pumpkiny with just the right amount of spice!
Two of the things I most look forward to come fall is pumpkin coffee creamer and pumpkin ice cream. Who says that because warm weather is on the way out that ice cream should be too? Not me! Bring on the pumpkin ice cream!
And because you all seem to like my ice cream pies and cakes so much, I decided to make it into an ice cream pie. The best of both worlds – ice cream and pie! Score!
The fact that it’s in a pie crust makes it the perfect substitute for those who don’t like actual pumpkin pie, but still like pumpkin flavor. You lose the texture of the pumpkin pie, and gain the creamy texture of ice cream – all in a yummy Oreo crust!
And guess what! No ice cream machine required! It’s one of the easiest things to make and nobody ever knows I didn’t use the machine. You could make it even easier if you wanted and buy a pre-made crust. Making ice cream this way is one of my favorites. Sometimes you just want something delicious and easy!
In fact, I’ve had multiple people (with the various times I’ve used the base of this ice cream – Snickers Peanut Butter Brownie Ice Cream Pie, Chocolate Chip Cookie Dough Ice Cream Pie, Copycat Birthday Cake Remix Ice Cream) be surprised to learn that the ice cream was made from scratch and not store-bought ice cream that I melted down. It’s just that good!
Speaking of things that are good – have you ever read “Heaven is for Real”? I just started reading it yesterday (I read when I workout on the elliptical). I got all teared up in the middle of the gym just reading the prologue. I probably looked totally crazy.
But it’s so good already! What an amazing story! Could you imagine your 3 year old telling you that they were scared so Jesus had angels sing to him while he sat on Jesus’ lap? I can’t wait to read the rest of the book. It’ll motive me to get my butt to the gym everyday, since that’s pretty much the only time I get to read.
But back to this pie – it totally rocks! You won’t want to stop eating it. I love everything pumpkin flavored and this ice cream pie is no exception! I know you’ll love it too. 🙂

Ingredients
PIE CRUST
- 1 1/2 cups Oreo crumbs (about 15 Oreos)
- 1/4 cup butter, melted
PIE FILLING
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 3/4 cup canned pureed pumpkin
- 1 1/2 tsp pumpkin pie spice
- 8 oz Cool Whip
- 1/4 cup Nutella
