This Buffalo Broccoli Salad is a fun, spicy twist on the classic broccoli salad! It’s made with a combination of broccoli, red onions, bacon, blue cheese, cheddar cheese and buffalo dressing!

Buffalo Broccoli Salad

This Buffalo Broccoli Salad came about in kind of a funny way. I’ve been working on losing the baby weight from having the twins since around the end of February. Not an easy task, I tell you. I’ve lost weight plenty of times in my life – it seems a never ending cycle – but this is definitely the hardest it’s ever been. Between the regular lack of sleep and seeming to never have a minute to myself, making time in the mornings before the boys get up to work out is a little brutal sometimes.

Add that to not eating much that’s fun and it’s a bit of a bummer. It’ll be worth it though! If you’re wondering, I’ve lost 30 pounds and have 14 to go. A work in progress.

Well, one of the things I’ve been eating too much of is buffalo chicken. I am a big fan of buffalo everything, so that should be no surprise. First, I was eating my buffalo chicken as a salad. Then one day I was out of lettuce and left wondering what to do. I looked through my fridge and freezer and noticed some frozen broccoli. I thought it sounded promising, so I heated that up, added the buffalo chicken and covered it in blue cheese dressing. It was delicious! I haven’t gone back to salads. All broccoli over here.

Your New Go-To Salad Recipe

So when I was brainstorming recipes, broccoli salad popped into my head and I thought it sounded fun to turn my typical lunch into a fun twist on the classic. And I’m so glad I did, because it’s so good! If you’re a fan of buffalo sauce and blue cheese, you’ll love this easy side dish.

This Buffalo Broccoli Salad is super easy to put together, making it even better. Just combine the broccoli, red onion, bacon, blue cheese and cheddar dressing in a large bowl. From there, combine some buffalo sauce with blue cheese dressing and pour it over the combination. Toss it all together and you’re done!

Of course this is plenty easy to change up, if you like. It definitely has a kick to it, so if you’d prefer it to be a little less spicy, you could reduce the amount of buffalo sauce and increase the blue cheese dressing. Even ranch dressing would work, if you aren’t a fan of blue cheese.

And if you wanted to turn this into more of a meal, you could chop up some chicken and add it to the mix. A great lunch option to make ahead for the week!

What is Buffalo Sauce?

Buffalo sauce is sort of like hot sauce, but with a few other things mixed in. You’ll often find that recipes for it include melted butter, vinegar, Worcestershire sauce, garlic and maybe cayenne pepper. I don’t typically make my own though. I purchase Buffalo sauce at the store.

This Buffalo Broccoli Salad is a little different, but a ton of fun! It’s got lots of great flavor and plenty of kick! A great dish for buffalo lovers!

Buffalo Broccoli Salad

Description

This Buffalo Broccoli Salad is a fun, spicy twist on the classic broccoli salad! It’s made with a combination of broccoli, red onions, bacon, blue cheese, cheddar cheese and buffalo dressing!


Ingredients

6 cups broccoli florets (about 2 heads of broccoli)
1/2 cup shredded sharp cheddar cheese
1/2 cup blue cheese crumbles
1/2 cup crumbled bacon*
1/3 cup diced red onion
1/2 cup ranch or blue cheese dressing
1/2 cup buffalo sauce
1 tbsp sugar, optional


Instructions

1. Combine broccoli florets, both cheeses, bacon and red onion in a large bowl.
2. In another small bowl, combine the dressing, buffalo sauce and sugar and stir until well combined.
3. Pour the dressing over the broccoli mixture and toss to combine.
4. Serve salad immediately, or store in the fridge for at least one hour for the best flavor. Toss salad again prior to serving.


Notes

I used bacon bits for the bacon. Feel free to make your own bacon.
