Eggnog Cupcakes

Eggnog_Cupcakes-featured

These Eggnog Cupcakes are full of awesome eggnog flavor! They’ve got eggnog in the cupcake and the icing - yes! You know I like my flavors strong and these cupcakes are no exception. :) So we had a pretty nice, relaxing weekend. Saturday morning we were up way too early, but it was for a good cause. One of the women in our small group works for the fundraising department of St. Jude’s Childrens Hospital, so we joined in for the Give Thanks Walk. We brought Jessie and she loved the 2 1/2 mile walk and being outside with us. She totally could have gone another 2 1/2 miles. Then there was a food drive at church Sunday and they’ve been collecting Operation Christmas Child boxes, so we went and got food for the food drive and all kinds of things for the boxes. I love doing the OCC boxes. It always … [Read more...]

Frosted Sugar Cookie Bars

Sugar_Cookie_Bars-featured

These Frosted Sugar Cookie Bars are a classic! Everyone should have a go-to soft, chewy and delicious sugar cookie bar recipe. This is definitely that recipe! With the holiday season officially upon us, cookie plates are going to be going around like crazy. All the baked goods are definitely one of the best parts of the holidays - in my opinion anyways. I remember making cookies every year at Christmas with my mom and younger brother. We would actually do a few varieties of cookies. Some went to feed Santa on Christmas Eve and the rest were used for the Christmas party my parents hosted on Christmas Day. I always loved seeing which cookies got eaten first. One cookie that was always included was sugar cookies. We'd decorate them with Christmas colored icing. Sometimes we'd even use cookie … [Read more...]

Brownie Brittle Peppermint Chocolate Pie

This Brownie Brittle Peppermint Chocolate Pie is totally getting me in the holiday spirit! I've been holding out for as long as I can with all the Christmas flavors, but I can't resist sharing this pie with you any longer. Chocolate, peppermint and Brownie Brittle are just too good together. One of the things I love about this pie is that it's actually a no bake pie! No need to turn on your oven! You will use the stove, but not for long. This pie comes together so easily. I started of with one of my favorite things in the crust - Brownie Brittle. It was my first time using Brownie as a crust and oh em gee, was it a good call. It's like having a crunchy brownie crust without all the work of baking brownies. The taste is perfection. The Brownie Brittle and some melted butter are combined and … [Read more...]

These White Chocolate Dipped Cranberry Oatmeal Cookies are some of my very favorite cookies! Have you ever had a cookie dipped in white chocolate before? It’s the best! And these are absolutely perfect for this time of year. This weekend was a lot of fun. After spending some time with the folks from ALDI (which I’ll talk more about later this week), I got to spend the weekend with my cousin, who is expecting a baby any day now. We were all hoping that she’d have the baby while I was there, but the baby just was not going to cooperate. So by the time I was leaving yesterday, we were making our predictions for when it would finally make an appearance. The one good thing about the baby not coming yet was that I got to spend a little more chill time with my cousin and her husband. They are total … [Read more...]

Mint Oreo Cheesecake

This Mint Oreo Cheesecake is exactly as it sounds - a mint Oreo crust filled with chopped mint Oreos, chocolate sauce and mint cheesecake! It’s a mint chocolate lover’s dream! This cheesecake was made especially for my bloggy BFF, Julianne from Beyond Frosting. This Friday is her second blogiversary, so I wanted to help celebrate with something I knew she’d love. If there are two things I know she’s a fan of it’s mint chocolate and cheesecake, so this dessert is perfect for her! I love making cheesecakes. Certainly, I have always loved eating them as well. Growing up, cheesecake was well known to be my favorite. These days, it’s hard for me to pick a favorite type of cake because I love them all, but cheesecake remains a top lover. Thing is, I’m picky about my cheesecake. It must be thick, … [Read more...]

This Pumpkin Chocolate Chip Bundt Cake is super moist and a delicious way to eat your pumpkin. I hope you haven't had too much pumpkin yet, because you'll definitely want to try this! So you know how I mentioned almost a month ago that my phone broke and I was almost dying without it? Well I finally got my new one working on Tuesday night. We have phone insurance, but using it was not the most fun process and they sent me the wrong phone the first time. So it's taken a while, but I'm back in business! I finally have all my contacts again! Woohoo! Seriously, what did we do before cell phones? I know I was alive then and I remember not having them, but really - what did we do? Nutty. A co-worker was telling me a while back that his kids actually saw a pay phone recently and had to ask him what … [Read more...]

Mini Pumpkin Cheesecake Trifles

These Mini Pumpkin Cheesecake Trifles are a delicious combination of no bake pumpkin cheesecake, whipped cream and angel food cake! They are super light and festive - I just love them! So have you noticed how the price of buying groceries just seems to go up and up? It’s something my mom and I talk about regularly. It seems so crazy the amount that we spend to feed two people. Back in May, when I went to the BlogHer Food Conference, ALDI was a sponsor. They were handing out free bottles of wine to everyone attending the conference - they even had a Moscato! As with most things - I like my wine sweet. :) I heard from many other bloggers about how much they loved ALDI and their prices, but I’d never been to one myself. Fast forward a few months and I now know that there is one just down the road … [Read more...]

Pumpkin Chocolate Brownie Cheesecake

This Pumpkin Chocolate Brownie Cheesecake is perfect for fall and the holidays. If you haven’t noticed, I’ve been kind of obsessed with the pumpkin and chocolate combination. It’s just so good! This time I’ve got a delicious, moist brownie on the bottom and a no bake pumpkin cheesecake on top. It’s smooth, creamy, chewy and irresistible! So sometimes you have those moments where you are reminded to appreciate the little things. I had a cute little moment like that yesterday while flying home from Iowa. The guy next to me on my first leg of the flight sat down and told me it was his first time flying. He was about my age and so sweet. He seemed pretty excited to what it was like, commenting about everything. Once the flight took off, he said it was the coolest thing he’s ever experienced. He … [Read more...]

Pumpkin Chocolate Chip Cookie Sandwiches

Pumpkin_Chocolate_Chip_Cookie_Sandwiches-featured

Remember when I made this cake last week and said I needed to find another use for the pumpkin icing because it was so darn good? Well, I decided what to do. Sandwich it between two chocolate pudding cookies filled with chocolate chips. Pumpkin Chocolate Chip Cookie Sandwiches are where it's at. Asheville, NC is also where it's at. Or at least, it's where I'm at until later today. We've been on a work retreat since Tuesday - working, exploring, having a few laughs and eating entirely more than necessary. With the exception of a few hours of work each day, we've been spending a lot of time on activities. Bike tours, touring the Biltmore, wearing super cool muppet shirts. We've had some fun. I've been to Asheville before, but not the downtown area. We stayed in a place right downtown so that we … [Read more...]

Mint Chocolate Brownie Brittle Bark

Mint Chocolate Brownie Brittle Bark

This Mint Chocolate Brownie Brittle Bark is smooth, crunchy and super easy to make. It comes together in no time and is great as a snack and perfect for sharing! So with many of our friends starting to have kids, it seems one of the first things we do when we see the babies for the first time is try to decide who the baby looks most like. Mom or dad? Then, as they grow up, there's still those comments about who the kids are more like. And even as an adult, it happens. "oh, you get that from your father." Usually it's the bad stuff that one parent is blaming on the other. I totally get it. Whatever bad things our kids do one day, I'm definitely blaming on the hubs. And the truth is, I'm very much like my parents. The good and the bad. Today let's talk about ways that I'm like my dad. 1. … [Read more...]
