Raspberry Chocolate Cupcakes

Raspberry_Chocolate_Cupcakes-featured

These Raspberry Chocolate Cupcakes are a classic flavor combination! I used my favorite chocolate cupcake and topped it with a delicious raspberry icing that uses fresh raspberry puree. Delish! So you know how I mentioned last week that our air conditioning hasn't been up to par lately and we installed fans? Well we finally got someone out to the house yesterday to check things out. The hubs had a break from lessons and was able to be there, which was great. Turns out, we have a leak of the coolant, or whatever it's called, in the air conditioning unit. The good news is that it's still under warranty, so it can be replaced. The bad news is that he couldn't actually find where the leak was coming from and he has to find that before they can do whatever has to be done for the warranty. So … [Read more...]

Red Velvet Oreo Trifles in a jar

Red_Velvet_Oreo_Trifle_in_a_Jar-featured

These Red Velvet Oreo Trifles in a jar have layers of moist red velvet cake, chopped Oreos, no bake Oreo cheesecake and chocolate sauce! Chocolatey, easy to make and so tasty! So we had kind of a crazy Saturday night. We out on the boat during the day, which we hadn't done in a few weeks. It started out great - we took our black lab and our friends brought along their dog. It ended up not being too terribly hot, so the dogs actually did pretty well. The lake was pretty busy though so we waited until a little later to start tubing and wake boarding. The last tuber was the hubs, who decided he wanted me to come out and ride with him, so I did. Unfortunately, on our first run we hit a pretty big wave and when I came down on the tube, my chest hit first and my back bent, with my legs kind … [Read more...]

Thick and Chewy Chocolate Chip Cookies

Chocolate_Chip_Cookie-featured

These Chewy Chocolate Chip Cookies are thick and full of chocolate chips! The hubs and I are totally in love with them. I've already promised to make them again - stat! When I went down to Miami in May for the BlogHer Food Conference, I stayed with some friends the first night I got down there. My friend Natalie, being an awesome friend and knowing that I am obviously a massive sweets lover, had some of her favorite cookies waiting for me to try. They were delicious! Some of the things I noticed most about those cookies were how big and thick they were and how much delicious chocolate was in every bite! I knew I needed to make my own. Having just the right amount of chocolate chips is something we all try to get right. I've seen chocolate chip cookies with mini chocolate chips to try to … [Read more...]

Red Velvet Ice Cream Cake

Red_Velvet_Ice_Cream_Cake-featured

This Red Velvet Ice Cream Cake might just be my new favorite cake, period. I couldn't decide if I want to give it all away so that I couldn't eat it all or just give in and eat it every last bite. The longer it stayed in the house, the more I ate. And not only do I have a great cake today, I joined together with some other bloggers for a giveaway! Woohoo! But back to the cake for a minute... One of my great taste testers said, and I quote, "You told me it was good, but you didn't tell me it was this good!" Well friends, you can't tell me I didn't tell you now. It is that good! I utilized my favorite, super moist red velvet cake, originally from Bakerella but with a tad more cocoa. The cake alone is amazing. The cake layers sandwich ice cream that is just full of red velvet cake crumbs, as … [Read more...]

Mint Chocolate Cookie Cups

Mint_Chocolate_Cookie_Cups-featured

These Mint Chocolate Cookie Cups are little bites of heaven. A soft, chocolate cookie with an Andes mint stuffed in the middle is topped with mint buttercream and a chocolate drizzle. They were devoured by all. Have you ever had one of those days where you went out on the lake and had a lovely, relaxing day. You ate good food, enjoyed good company, got a little sun kissed, went tubing for the first time in a year since you can't ski or wakeboard, then you totally crash that night, completely exhausted but grateful for the fun day you had, then you dream about sunscreen and afternoon naps only to wake up in the morning and not be able to move your arms because you are so sore from said tubing? Yea, yesterday was that morning. Oh. my. goodness. My arms and chest. Putting on clothing was a … [Read more...]

Layered Red Velvet Cheesecake Bundt Cake

Red_Velvet_Cheesecake_Bundt_Cake-featured

This Layered Red Velvet Cheesecake Bundt Cake is the perfect red velvet cake! Perfectly moist and tasty, the cheesecake swirl layered in it makes it even tastier! Red velvet + cheesecake = match made in heaven. But before I dive into the recipe, I must tell you about what happened when shopping with the hubs this weekend. Nothing ground breaking, but he always manages to surprise me - and make me laugh. :) We were running a marathon of errands. And no errand run would be complete without a trip to Target. Is it even possible to walk out of Target without buying something you didn’t go in planning to buy? Nope! Especially with that little section near the door where you can always find super cute sprinkles for $1. For once, I’d almost made it! BUT! As the hubs and I are walking through the … [Read more...]

Red Velvet Cupcakes with Cream Cheese Frosting

Red_Velvet_cupcakes_cream_cheese_frosting-featured

Red Velvet cupcakes are a classic - especially with a delicious cream cheese frosting. And these cupcakes are super moist and stay that way for a number of days! I didn't really grow up eating red velvet cupcakes, despite growing up in the south. But the last few years, since diving into the sweets world, I've known a few people that are BIG fans. One them being a co-worker of mine. Last summer I think it was, we were in D.C. for work. We had some downtime and found ourselves on the same road where Georgetown Cupcakes and Sprinkles Cupcakes are. Being the crazy cake fan I am, I ended up with like 15 cupcakes to sample. I LOVE trying different flavors and comparing. And believe it or not, we hit the stores at just the right time - no lines! Seeing that I didn't grow up eating red velvet, I … [Read more...]

Soft and Chewy Eggnog Cookies

Eggnog_Cookies-featured

These Eggnog Cookies are fantastic. They are insanely soft and chewy and you need to make them. That is all. Ok that's not really all. I'm sure you need more than that to believe me, but it's true. Eggnog is one of my favorite holiday flavors. I love them all, but as soon as eggnog hits the store we start drinking it. We've been through more cartons than I can count and it's not from baking, except for these cookies. We're even picky about our brand of eggnog. They are not all the same. Our favorite is the Southern Comfort brand (it doesn't have alcohol in it already in case you're wondering). I have to make special trips out of the way to Wal-Mart to get it. Because of that, we've tried multiple other brands, but they just aren't the same. So I keep going out of my way for the good … [Read more...]

Peppermint Pretzel Crunch

This Peppermint Pretzel Crunch is covered in semi sweet chocolate, white chocolate and Andes Peppermint Crunch Pieces! It's a wonderful combo of sweet and salty and is a great snack mix for the holidays. It's also quick and easy to make - even better! Things have been pretty busy for us around here trying to get ready for the holidays. Trying to get the house decorated, all the shopping. There's never enough time! We finally got the Christmas tree decorated over the weekend when there was a break in all the rain we've been having. After getting it decorated - which is a very long process for me since I analyze the placement of every ornament like a crazy person - our tree literally fell over Monday night. Craziness! We were about to go to bed and I was getting all my stuff together to take … [Read more...]

Gingerbread Caramel Gooey Bars

Caramel_Gingerbread_Gooey_Bars-featured

These Gingerbread Caramel Gooey Bars might just be my favorite bars to date. They are so chewy and flavorful, it's hard to stop eating them. And with all the brown sugar, molasses and sweetened condensed milk in them they stay soft for no less than a week. Even though they won't last this long, I think they'd even be soft after two weeks. That's legit, my friends. My inspiration for these bars came from one of my favorite bloggers - Dorothy, from Crazy for Crust. When I saw her Pumpkin Toffee Gooey Bars I almost fell out of my chair. I knew I had to make a version myself and gingerbread seemed like the perfect way to go. I mean how do you make something gooey and delicious even gooier? Add molasses and caramels. Chewy city. You start out with a yellow cake mix. Nice and easy. It quickly gets sticky … [Read more...]
