No Bake Eggnog Icebox Cake

This post is sponsored by Walkers Shortbread, but all opinions are my own. This Eggnog Icebox Cake has layers of a light and airy eggnog mouse, Walkers Shortbread, and whipped cream. It's no bake, so it's nice and easy to put together and is perfect for sharing for the holidays!I don't know about you, but we've been indulging in eggnog since it arrived in stores. I'm pretty sure we've been through at least 10 cartons of it already. I'm not even kidding. If you can't tell, we are big eggnog fans. So naturally the idea of eating it in a delicious icebox cake was perfect! :)We are also shortbread fans. The hubs loves dipping shortbread into tea and I love baking with it. The smooth, creamy orange cheesecake with the sweet but tart cranberries is to die for. If you've never tried these two flavors before, it's a must! Can you believe Thanksgiving is Thursday?! I can't even. My head is so not in that mode yet.Between all the baking for the cookbook and for the blog, I have cake on the brain. I was at the grocery store over the weekend getting baking ingredients (as I do most days) when I realized while walking through the meat department that there were turkeys in the section that normally has the ground beef. Then it hit me.Thursday! Thanksgiving is Thursday! And I need a turkey - like now. It has to thaw for … [Read more...]

Gingerbread Cheesecake Cookie Cups

These Gingerbread Cheesecake Cookie Cups are the perfect way to start off Christmas flavors on the blog! I hope it's not too early, because I've been dying to share these with you. A soft, chewy gingerbread cookie cup is filled with a brown sugar spiced no bake cheesecake. So good!So yesterday was our sweet Jessie's 5th birthday. For those who don't know, she's a black lab. :) To celebrate her birthday she got extra long walks, a big bone and a couple baked doggie treats. I figure the walks were needed to offset the treats. She wasn't a huge fan of getting her picture taken before she could dig in to the treats, but she managed. We got her when she was about 10 weeks, so it hasn't quite been 5 years yet that we've had her. I wasn't really a dog person before we had her, which is a shocker now … [Read more...]

With all the flavors of cinnamon, honey and walnuts, it’s a fun way to mix together two delicious desserts into one!So if you follow on instagram or twitter, you may have noticed that I was at a food blogging conference over the weekend. It was a ton of fun! It was great to see old friends and meet new ones, and of course I always learn so much and leave feeling renewed.Well normally hotel sleeping is all good for me but this weekend I struggled a bit. See I wake up regularly at night to go to the bathroom. At least once, often twice. It’s annoying, but true. Well this weekend that didn’t go so well for me. There was a little piece of wall that you had to walk around to get from the beds to the bathroom and one night … [Read more...]

Milk Tart

Milk Tart (also known as Melktert) is a traditional South African dessert. The crust is a soft, cakey crust topped with a cinnamon infused milk custard. It is delicious and was one of my favorites that we tried on our trip.Back when the hubs and I went to South Africa in May to visit his family, I naturally tried all the traditional South African foods and desserts I could. Not only do I like to try new foods, but I’d heard the hubs talk about so many favorite foods he had as a kid and I was so curious to experience them with him.I found milk tart to be a very common dessert option. The first night we arrived, we stayed with the hubs’ aunt and uncle and they served on for dessert. I love cinnamon, so naturally I was a fan. We had it at a few other places we stayed too, so I was excited to try a … [Read more...]

Pumpkin Spice Donut Cheesecake Trifle

This Pumpkin Spice Donut Cheesecake Trifle is so fun for fall! Made with Pumpkin Spice Donuts from Dunkin' Donuts, it's super easy to put together and was a big hit!So this past weekend, the hubs and I went to the local fair with my brother and his family. We'd never been and it was pretty fun to go with them. My nieces had a lot of fun riding the rides and us adults got to eat the good fair food. :)You know the stuff I'm talking about. Funnel cakes, fried oreos (so good, by the way!) and a tower of sliced fries covered in cheese and bacon. That's the stuff that adult dreams are made of kids. Good, outrageously awesome food.I figure this trifle is somewhat similar in it's outrageous nature. I mean, it's layered with donuts. Legit, full on donuts. It's basically breakfast in dessert form. … [Read more...]

Between the Pumpkin Butterscotch Chip Cookies I shared last week and now this coffee cake, it's fall on the blog, my friends. The cool temperatures are making dog-walking a much more enjoyable activity and pumpkin spice coffee in the morning has become a regular. The only thing that could make my mornings better is this coffee cake every time.I absolutely love the base of this coffee cake. I've used it for my Blueberry Streusel Coffee Cake and my Toffee Almond Coffee Cake and both were awesome. I altered it to this delightful pumpkin version.Because pumpkin is a natural leavener and adds a fair amount of moisture it … [Read more...]

Pumpkin Butterscotch Chip Cookies

These Pumpkin Butterscotch Chip Cookies are the perfect pumpkin cookie! I'm totally in love with how dense, moist and chewy they are and the butterscotch chips are the perfect compliment to them! You'll definitely want to make these over and over.So there are two things I don't recommend when going grocery shopping. The first one you've surely heard before - don't grocery shop hungry. That's a sure way to end up buying all the things. My cart ends up full of cookies, cakes and anything else that looks enticing when I'm hungry. No good. The next one, and more common for me, is to not grocery shop without a list. Seriously. It's like I'm totally lost in the grocery story without a list. I was at the store the other day and had forgotten what I'd needed to get. In addition, I needed to get a couple … [Read more...]

I love that. And her realness totally shows in her cookbook which is full of stories about her family and growing up baking.
