Cinnamon Apple Pie Skillet Blondie

So this week we’ve got two dogs in the house. My brother’s family’s dog is staying with us and it’s always pretty fun to have her. Jessie and her are from the same litter and spend a fair amount of time together. When they stay together they share water bowls, chew opposite ends of a bone, you name it. In fact, right now they are taking turns being the one to chew on a deer antler. The only kind of fighting they do it play fighting.

When they dropped her off on Friday, my nieces found our furminator. For those that aren’t familiar, it’s sort of a brush that you use on dogs. I brush Jessie with it sometimes, but I actually tend to use it to get her hair off of our stairs when cleaning the carpet. I’ve been through many vacuums that say they get up dog hair on stairs and the furminator does it best.

Well, when my nieces saw it they ran off and started cleaning the stairs. They were having the best time and we were just laughing. When do kids ever clean for fun? My sister in law was trying to leave and they were begging her to clean just a few more stairs. The hubs and I were like, you’re welcome to leave them here! 🙂

I think it’s time they came over for a cleaning party sleepover. I pay in cake, cookies and skillet blondes. 🙂

In fact, the last skillet cookie I made, Snickers Chocolate Chip Skillet Cookie by Recipe Girl, they absolutely loved. Sadly they didn’t get to try this blondie, but I’m sure it could arranged.

One of the great things about baking a blondie in a skillet is that you can eat it right out of the skillet while still warm. When topped with some ice cream, cinnamon apples and caramel sauce it is to die for. And to make it even better, it’s super easy to make.

As with most things I make, the first version wasn’t the final one. However that didn’t matter to our church group. Group was at our house the night I made the first one. The blondie had come out of the oven shortly before they got there and they couldn’t wait to dig in to, despite me calling it a “fail.”

They didn’t care one bit! I’ve never seen so many grown men with spoons huddled around a blondie before to get their bite. 🙂

Well the final version is even better, so you’ll definitely want to make this and be sure to get your bite too.

This Apple Cinnamon Skillet Blondie is a spiced blondie filled with warm baked apples and topped with ice cream & more cinnamon apples! It’s the ultimate Autumn dessert recipe.



  • 6 tbsp salted butter
  • 3/4 cup brown sugar
  • 1 1/2 tsp vanilla extract
  • 1 egg
  • 3/4 cup flour
  • 1/4 tsp cinnamon
  • 1/2 tsp apple pie spice
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 apple, chopped


  • 1/2 apple, chopped
  • 1/2 tsp cinnamon
  • 1 tbsp brown sugar
  • ice cream, optional
  • caramel sauce, optional


1. Preheat oven to 350 degrees.
2. Melt the butter in a microwave safe bowl, then transfer to a mixing bowl.
3. Add brown sugar and whisk to combine.
4. Add the vanilla extract and egg and whisk until incorporated
5. In another bowl, combine dry ingredients.
6. Slowly add dry ingredients to wet ingredients until combined.
7. Fold in chopped apples.
8. Pour blondie batter into an 8 inch skillet.
9. Combine chopped apples, cinnamon and brown sugar for apple topping and add to a small, oven safe dish like a ramekin.
10. Add blondie and ramekin to oven and bake blondie for about 35-40 minutes, removing ramekin about halfway through, or when apples look cooked.
9. Allow blondie to cool for about 30 minutes (it will continue to cook a little as it cools), then top with cinnamon apples, ice cream and caramel sauce.

    This recipe is delicious!! My son asked for it as his birthday dessert and I am so glad he did! The blondie is wonderful and the apple cinnamon topping completes the awesomeness. I sautéed the apples in the skillet a few minutes just to soften them a bit then added the dough and then it went into the oven. It was a hit with all of us. Thank you for the wonderful recipe.

    This looks looks like an awesome recipe but i would love to know what kind of apples were used in this recipe or if that even matters thyu 8-}.


      I think with skillets, if they are already seasoned there’s no need to grease it. If it’s a new pan, you may want to season it first or just use a little butter.

    Every now and then, I con my kids into cleaning the kitchen. They like wiping the floor. But then they lose interest and it’s me all over again! I should get that brush. It might be fun to see what happens, even though we don’t have dogs. We all shed anyway, right?
    Too bad they missed out on this cookie. This cookie is pretty amazing.
