S’mores Chocolate Pie
Over the summer, my work (the day job) changed offices.
At first, I was pretty excited about it. It cut my commute from about an hour to about a half hour. Who wouldn’t love that?!
The only problem is we went from having our own office space with pretty much a full kitchen, to kind of a shared space.
It was initially just for the summer, but they liked the mobility of it so much that it’s now permanent – at least for 6 months. I’m totally cool with it – I like the space and it’s so much closer (even though traffic is less awesome now that school is back – our house is surrounded by schools!).
My only problem is the lack of a kitchen. Without a fridge or microwave, it makes it hard to bring lunch with you, which I always did.
They try to offset that problem by taking us to lunch most days (there’s only 4 of us in this office). That also sounds nice, right? Well, it is. At first.
Then you realize you are always eating more than you should be, and with a higher calorie content because you are always eating out. Even a salad at a restaurant tends to have two or three times the calories of one I’d bring from home.
I’ve been trying to bring stuff from home that doesn’t need to stay cold or be heated, but let’s face it, the list of options is short and I tire of them quickly.
Between having a dessert blog and eating out too much for lunch, I am struggling to figure out some balance.
I know, I know, I need better self control. But I love food! I blog about it for goodness sake! Self control when it comes to food is not my strong point.
And this pie did not help me, but boy is it good. 🙂
We may be heading into fall, and pumpkin and apple recipes may be flying, but who says smores can’t move into the cooler weather with us, too?
With this pie can you can still have your favorite smores flavor, but without the campfire and sticks.
The chocolate filling is so silky smooth, it’s a great contrast to the crumbly graham cracker crust and sticky marshmallow topping.
And it’s pretty much a no bake pie, as well. Can’t beat that. It comes together quickly. The hard part is waiting while it sets.
The crust is nice and easy – my favorite way to be. Naturally, it’s made with graham crackers. This is smores pie, after all!
You crush up the graham crackers, add butter and press into the bottom of a pie pan. Done! Moving on!
The filling is nice and simple too, needing only 4 ingredients. It’s pretty much just melted chocolate mixed with milk, vanilla and cornstarch. It’s all heated on the stove, so no need for the oven.
You bring it all to a boil to get it to thicken and that’s it!
To top it off, just toast some marshmallows on top. This is the only time you need the oven, and it’s for less than 10 minutes to brown the marshmallows.
And isn’t the marshmallow top so pretty?! I stood all my marshmallows, but you could turn them on their sides if you want.
I used 41 regular-sized marshmallows (not mini or jumbo)! All that mallow is not at all overkill. Really! It balances the chocolate beautifully.
Once it’s all put together, you refrigerate it so that the filling gets a little firm.
The texture of the filling is awesome. Silky smooth and just melts in your mouth.
Personally, I like to cut a slice and put it in the microwave for 5-10 seconds before eating it. Just long enough that the marshmallows get all melty again, but the pie still holds together.

Description
With a graham cracker crust and creamy chocolate filling piled high with perfectly toasted marshmallows, this S’mores Chocolate Pie is an absolutely addicting chocolate tart recipe. The perfect way to enjoy indoor s’mores year round!
Ingredients
CRUST
- 2 cups graham cracker crumbs
- 6 tbsp butter, melted
FILLING
- 2 cups milk
- 2 tbsp + 2 tsp cornstarch
- 1 cup chocolate chunks
- 1/2 tsp vanilla extract
TOPPING
- about 40 regular sized marshmallows (not mini or jumbo)
Instructions
- Add melted butter to graham cracker crumbs and mix until combined.
- Press graham cracker mixture evenly into the bottom and up the sides of a 9 inch pie pan, then set aside.
- Whisk the cornstarch and 1/4 cup milk together in a small bowl. Set aside.
- Add chocolate chunks to a small bowl and microwave in 30 second increments, checking to make sure it doesn’t burn, until melted.
- Add melted chocolate, remaining milk (1 3/4 cup), and vanilla extract to a pan and whisk over medium heat until well combined and warm.
- Add the cornstarch mixture to the chocolate mixture.
- Bring the mixture to a boil, stirring constantly with a rubber spatula. It will begin to thicken.
- Once boiling, stir continuously for about 2 minutes, until fully thickened.
- Pour mixture into crust.
- At this point, you can refrigerate until set and then add the toasted marshmallows right before serving, OR go ahead and toast the marshmallows on top and then refrigerate. Either way, here is how to add the marshmallows:
- Place a layer of marshmallows on top of pie filling.
- Bake at 350 degrees for about 5 minutes.
- Turn oven to broil for 2-4 minutes, watching closely to remove the pie when the marshmallows are browned to your liking.
Notes
If you chose to refrigerate the pie with the marshmallows already on it and cut a piece when you want it, I like to microwave my piece for 5-10 seconds before eating to get the marshmallows a little bit melty again.
