Oreo Cookies and Cream Cookie Cake
Not only do I have an awesome Oreo Cookie Cake to share with you today, but I’ve also got a wonderful giveaway going on to celebrate my friend Carrian’s (from Oh Sweet Basil) birthday! What a great way to celebrate – with this delicious cake and an awesome giveaway for a Microsoft Surface! Yay!
So how was your Easter weekend? I hope it was awesome! We had my mother and sister-in-law in town and had a nice, relaxing weekend.
It might have been the first weekend in…well, I don’t know how long, that I didn’t do blog baking. Just baked and cooked for our Easter meal.
It was kind of nice. I love baking for the blog, but I totally messed up the pie crust for my Strawberry Cream Pie. And when normally I’d have been frustrated because I’d have to redo it, it was nice to just not care. It might not have looked great, but we still inhaled it. SO good.
We went and saw “Heaven is for real” in theaters. Not bad, but as usual, the book is better. I also think it had more detail about Colton’s experience than the movie showed.
We went to church and the hubs helped out with the 2 year olds that I volunteer with. He got to see what that was all about. Apparently, it’s much easier than having 20 kids on a tennis court. Maybe I should join him one day to see? 😉
So since it’s been a while since I shared a cookie cake, I figured it was time.
I grew up on all kinds of cake – regular cake, ice cream cake, cookie cakes. My dad was always the cookie cake guy and I loved them all. I had a solid rotation for my birthdays.
Now, I love making fun variations. There’s all kinds of cake and ice cream cake variations you can buy and make, but there really aren’t a variety of cookie cakes. *sad face*
They are delicious – and easy to make – so I have started my own little collection. Some of previous faves are the Funfetti Cookie Cake and Reeses Peanut Butter Cookie Cake – yum! And even though they aren’t as fancy as a regular cake, you can totally dress them up.
Like this Oreo Cookies and Cream Cookie Cake, for example.
It’s just full of crushed Oreos. Then it’s topped with Oreo icing, more Oreos and drizzled with chocolate. All dressed up for a party in my belly. 🙂

COOKIE CAKE
- 3/4 cup salted butter, room temperature
- 1/4 cup brown sugar, lightly packed
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 3/4 cups all purpose flour
- 1 tsp baking soda
- 1 cup of crushed Oreos (about 12 oreos)
- 1/2 cup chocolate chunks
ICING
- 6 tbsp butter
- 6 tbsp shortening
- 3 cups powdered sugar
- 3/4 tsp vanilla extract
- 3/4 cup Oreo crumbs (about 9 Oreos)
- 2–3 tsp milk or water
- additional Oreos for topping, cut in quarters

I see most of your cookie cake recipes are baked in 9 inch cake pans. Have you ever tried making them on a cookie sheet? I need a few more servings, so am looking for a bit larger size cookie without having to double the recipe or make two cookie cakes. I assume a cookie sheet would make it less thick and require less baking time.
You could try a cookie sheet, but it should also bake fine in a 10 inch pan. And yes, less baking time.
I made this tonight as a ‘test’ cake for my friends birthday next weekend. Â It was so easy and I’m so impressed by how gorgeous the finished cake looks that I’ll be making it again on Friday. Â Your cakes are beautiful and decadent :).

I’m gonna make this for my bf’s birthday. I was wondering if I can only use butter instead of shortening? I don’t really know what shortening is and I haven’t used it before, so would prefer to stay with something I’m familiar with.

Yes, you can use just butter instead. The cookie cake is fairly dense.
