Oatmeal Chocolate Chip Cookie Ice Cream

I’m also in love with my new bowl for my KitchenAid stand mixer. We were shopping in Macy’s yesterday and I happened to find a new 6 quart bowl and I couldn’t pass it up! How awesome it will be to have 2 bowls!

I couldn’t find the price, but knew I’d buy it as long as it wasn’t more than $100.

Well, it rang up at $0.01! Whhhaaaaat?!? It apparently wasn’t supposed to be out, but since it was and their policy is that they can’t sell something for a penny, I got the bowl for $15! I’ll take it!

I did a happy dance right then and there. Two-bowl happiness! You know what else makes me happy dance? This ice cream. I can’t even stand how good this it is. Talk about cinnamon-y! I could basically coat everything in cinnamon and sugar, so if ice cream could talk, this one would speak my language.

The Story Behind This Ice Cream Recipe

It’s actually inspired by an ice cream from our grocery store, Publix. We had Publix when we lived in Florida too and this was easily my favorite ice cream. I got it once when my dad was visiting because I knew he’d love it and he literally went about bought another carton for eat for the week. No joke, the best ice cream ever.

Why they stopped making it I will never know. I mean, I assume they stopped making it because I’ve looked for it all over and never found it. 🙁

But have no fear! I’ve finally made my own version!

I’ve been wanting to do it forever and finally got around to it. I’ve been promising the hubs, who also loved the original and he was thrilled when tasted it. Amazing. Might even be better than the Publix brand.

I came home last week to find dirty bowls that had been full of the ice cream all over the house. He’s not normally into eating ice cream all the time, but he couldn’t resist this one.

It’s smooth and creamy, but has some texture from the soft oatmeal cookies and some crunch from the mini chocolate chips.

I used fresh baked cookies from the bakery, but if you have a favorite oatmeal cookie, go with it.

And I definitely recommend the mini chocolate chips as opposed to full size. Much easier to bite into when frozen.

And as if it couldn’t get any better – you don’t need an ice cream machine! Score!!

Super easy, super flavorful and prefect for summer! Must. make.

Description

This homemade Oatmeal Chocolate Chip Cookie Ice Cream is made with a cinnamon ice cream base. Add mini chocolate chips, oatmeal cookie pieces, and a cinnamon swirl, and you have a full-blown ice cream masterpiece. I’m in love!


Ingredients

Scale
  • 8 oz cream cheese, softened
  • one 14 oz can sweetened condensed milk
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 tbsp cinnamon
  • 12 oz Cool Whip (OR homemade whipped cream)
  • 1/2 cup mini chocolate chips
  • 3/4 cup oatmeal cookies, broken into pieces

CINNAMON SWIRL

  • 1/2 cup light corn syrup
  • 1 1/2 tbsp cinnamon
  • 1 1/2 tbsp sugar


Instructions

1. Combine cream cheese and sweetened condensed milk in a large bowl and mix until smooth.
2. Add brown sugar, vanilla and cinnamon and until until incorporated.
3. Fold in Cool Whip until well combined.
4. Fold in mini chocolate chips and oatmeal cookies.
5. In a small bowl, combine corn syrup, cinnamon and sugar.
6. For layering the ice cream and cinnamon swirl, you’ll need a large container for freezing the ice cream. Place 1/3 of the ice cream mixture into the container.
7. Add about 1/3 of the cinnamon mixture on top of the ice cream.
8. Repeat with the ice cream and cinnamon two more times, for a total of 3 layers of both ice cream and cinnamon swirl, ending with cinnamon swirl on top.
9. Freeze for 4-5 hours or overnight.

Notes

To substitute homemade whipped cream for Cool Whip, beat 2 cups of heavy whipping cream until stiff peaks form.

  3. Publix totally has the BEST ice cream ever! When I lived in Lakeland, I worked for Publix corporate over in the Deli Kitchen offices. We used to get free ice cream for the department from the Dairy Plant. Our break room freezer was full of it! Those were some of the best snack break times ever!
