Chicken and Sausage Foil Packets

These Chicken and Sausage Foil Packets are easy to make and the perfect summer dinner! A mix of meats, veggies and flavors fill foil packets and are cooked in the oven for a meal that’s packed with flavor!

    Chicken and Sausage Foil Packets

    What’s not to love about these foil packets? First, they are super easy to put together. You just toss everything together, place it in individual packets and bake! You could even cook them on the grill. And it makes clean up a breeze! No casserole dishes or anything, just foil packets that are thrown away after dinner.

    And then they are full of summer favorites – chicken, sausage and corn on the cob. With the other fresh veggies and herbs in there, the flavors are wonderful. There’s something for everyone and you could easily leave certain things out of own packet and add new things to others. So adaptable!

    Ingredients

    The ingredient list is somewhat long, but only because of all the great fresh veggies included and the fresh herbs and spices that give it so much flavor. Certainly not a difficult list.

    • Chicken: I used skinless, boneless chicken breasts, but you could also use chicken thighs.
    • Sausage: You could use all kinds or flavors of sausage. I used an andouille sausage.
    • Red Bell Pepper
    • Onion: I used red onion.
    • Lemons
    • Garlic
    • Corn on the Cob
    • Green Beans: Definitely recommend fresh green beans.
    • Fresh Thyme and Cilantro: For great flavor.
    • Dried Oregano
    • Smoked Paprika
    • Salt and Pepper
    • Olive Oil

    How to make Chicken and Sausage Foil Packets

    1. Preheat Oven: To 400 degrees.
    2. Combine Ingredients: In a large bowl, add chicken, sausage, bell pepper and onion. Juice the lemons and add the juice and lemons. Add the garlic cloves, corn slices, green beans, thyme, coriander and oregano.
    3. Mix Together: Toss everything together and season with smoked paprika, salt, pepper and oil.
    4. Prep Foil: Prepare 4 large sheets of foil. Divide the mixture into 4 portions among the foil with each foil pack getting 1 chicken breast.
    5. Bake: Seal the foil and place all of them on a baking sheet. Bake for about 20-30 minutes or until the chicken reaches 165 degrees F and veggies are tender. Open the foil a little bit by using a knife so that you don’t burn yourself and let broil for 1-2 minutes.
    6. Serve: Remove from the oven and open carefully. Be careful not to burn your fingers when steam escapes. Serve immediately.

    Tips for Foil Packets

    • Prep Ahead: You can prep the packets ahead to make dinner time even quicker. Prep the ingredients and assemble in the packets. Close well and refrigerate for up to 12 hours before cooking.
    • Side Dish: These foil packets are a meal of their own, but feel free to serve them with rice or garlic bread or even add some potatoes to the packets.
    • Customize: Since the packets end up being individual servings, feel free to add what you like to each packet for individual preferences.
    • Storing: Store leftovers in the fridge for up to 4 days.

    Ingredients

    • 4 skinless boneless chicken breasts
    • 9 oz chicken sausage, thickly sliced
    • 2 medium red bell peppers, cubed
    • 1 large red onion, quartered
    • 2 lemons, quartered
    • 8 garlic cloves, peeled and crushed
    • 2 ears fresh sweet corn, cut in 6-8 pieces
    • 3.5 oz fresh green beans, trimmed
    • 8 fresh thyme sprigs
    • ½ cup fresh cilantro, chopped
    • ½ tbsp dried oregano
    • 1 tsp smoked paprika
    • Sea salt
    • Black pepper
    • ¼ cup olive oil

    Instructions

      I assume the is recipe can be put on the grill? Are there any adjustments I should make if I keep temp to 400F?
