My husband has declared this to be his new favorite dinner. I’m not really surprised given that it has such a delicious combination of 3 meats. What man doesn’t like a meat pie?
I made it for dinner the day he started his new job about 2 and a half weeks ago. We had a little date night that Friday to celebrate, but I wanted a yummy meal for the first night too. I was so excited and happy for him and I wanted him to know how I awesome I thought he and his new job were. So I was glad he liked it so much.
He actually couldn’t stop talking about all the great new things about his job – for like, 3 days. It was awesome! He got tired of hearing himself talk about it and begged me to talk about something else. I tried, but I really loved hearing him excited about it.
Part of the reason it was so exciting was that he had been pretty bummed after leaving his previous job. He loved all the people he worked with and wasn’t sure if this new job would measure up. I was more than a little relieved that it did. Heck, it surpassed it! And did I mentioned I was excited? Because I was. I truly believe there are a lot of great things ahead for him. I’ve been praying about it and it feels right.
So again, who’s excited? That’s right. Me.

Description
This Three Meat Italian Pie is quick and easy to prepare, full of flavor and makes a great weeknight dinner!
Ingredients
- 1 1/4 lb ground beef
- 1 tsp dried Italian seasoning
- 1 (10-oz) box frozen chopped spinach, thawed
- 6 slices (1 1/2 oz) salami, cut into bit size pieces
- 1/4 cup diced pimientos, drained
- 1/4 cup (1 oz) pepperoni, cut into bite size pieces
- 1 (13.75-oz) jar bruschetta spread
- 2 eggs
- 2 cups shredded Italian-blend cheese
- 1 pie crust (I use Pillsbury)

Notes
If bruschetta spread is really liquidy, drain some of it. You don’t want to end up with too soupy of a mixture.
