Gingerbread Cheesecake Cookie Cups

These Gingerbread Cheesecake Cookie Cups are the perfect way to start off Christmas flavors on the blog! I hope it's not too early, because I've been dying to share these with you. A soft, chewy gingerbread cookie cup is filled with a brown sugar spiced no bake cheesecake. So good!So yesterday was our sweet Jessie's 5th birthday. For those who don't know, she's a black lab. :) To celebrate her birthday she got extra long walks, a big bone and a couple baked doggie treats. I figure the walks were needed to offset the treats. She wasn't a huge fan of getting her picture taken before she could dig in to the treats, but she managed. We got her when she was about 10 weeks, so it hasn't quite been 5 years yet that we've had her. I wasn't really a dog person before we had her, which is a shocker now … [Read more...]

Triple Chocolate Chip Cookie Cake

This Triple Chocolate Chip Cookie Cake is super soft and chewy. It's basically your new favorite giant cookie - filled with chocolate chips, white chocolate chips and peanut butter chips. Get you some!So after being gone this past weekend for an extended weekend, the hubs was ready for me to come home. Apparently without me home it's starts to smell too much like "dude" and it's too quiet. He wanted my girly smell back and the constant sound of the mixer.Come again? You actually missed the sound of the mixer?Plus, it was apparently too dark because nobody was here to open the blinds - ha!And of course in typical hubs fashion, he had a surprise waiting for me at home and he couldn't wait to show me.In typical me fashion, I walked in the house and didn't pick up on it. He told me to … [Read more...]

Pumpkin Butterscotch Chip Cookies

These Pumpkin Butterscotch Chip Cookies are the perfect pumpkin cookie! I'm totally in love with how dense, moist and chewy they are and the butterscotch chips are the perfect compliment to them! You'll definitely want to make these over and over.So there are two things I don't recommend when going grocery shopping. The first one you've surely heard before - don't grocery shop hungry. That's a sure way to end up buying all the things. My cart ends up full of cookies, cakes and anything else that looks enticing when I'm hungry. No good. The next one, and more common for me, is to not grocery shop without a list. Seriously. It's like I'm totally lost in the grocery story without a list. I was at the store the other day and had forgotten what I'd needed to get. In addition, I needed to get a couple … [Read more...]

Apple Cinnamon Oatmeal Cookies

These Apple Cinnamon Oatmeal Cookies are now one of my favorite cookies. They are fall in a cookie. I think I could make them weekly and watch them disappear in no time. They were a big hit!We had quite a bit of rain yesterday. Then last night when our church group was over (we meet on Wednesday nights) it was storming again, but this time with thunder and lightening and the whole bit. The next thing we knew the lights were flickering and eventually went out.Fortunately, we already had a candle lit. It's a new wine scented candle that the hubs loves. :)So I went and grabbed more candles to light and it reminded me of how much I've always thought losing power was kind of fun. I always associate it with a sense of peacefulness. I mean, when the power is out things kind of slow down and … [Read more...]

Rosette Sugar Cookies

These Rosette Sugar Cookies are such a soft and chewy sugar cookie topped with a yummy buttercream icing. A classic cookie with simple decoration - I love them!So you may or may not figured this out by now, but I have a sweet tooth. ;)I have always loved my cake, cookies, you name it - with icing. That's just how I roll. In fact, often the cake, cookie, etc is really just the delivery method for a delicious icing.Case in point: Betty Crocker recently brought back their Rainbow Chip icing. Please tell me you know what it is and have had it before! It is the best!Yes, yes, I know. How can I possibly say that a canned icing is the best?! I bake from scratch (mostly). But I tell you - I have been eating that icing since I was a kid and it's the only canned icing I really eat. And you guys I … [Read more...]

I blog over at Beyond Frosting.Over the past year, I have gotten to know Lindsay on a deeper level than her blog. She is a true and dear friend to me, and I am not quite sure that blogging for me, would be the same without her. To think I never would have met her if I hadn’t found her on the internet is pretty … [Read more...]

German Chocolate Cookie Stacks

These German Chocolate Cookie Stacks are layers of German chocolate cookies and coconut pecan frosting layered into fun cookie stacks. They are delicious and I'm dying to make them again already. So the other weekend, an unusual thing happened. The hubs and I were hanging out and he wondered aloud what desserts we had because he wanted something. While that's somewhat unusual, the really unusual thing was that I actually didn't have anything for him. What?! How does that happen in our house?Since I didn't have anything, we decided to go get something. There's a McDonald's right by our neighborhood so we went there first. The ice cream machine wasn't working. :(So we went to Wendy's. And then I was reminded of a beef I have with Wendy's. Do you know what it is? I have one word for you - … [Read more...]

Salted Caramel Stuffed Chocolate Cookies

These Salted Caramel Stuffed Chocolate Cookies are to die for! A dark chocolate cookie is stuffed with half of a Simply Caramel Milky Way, then sprinkled with sea salt.So yesterday the hubs and I finally got around to starting to stain our fence that was installed in January. We'd waited for it to warm up and finally stop raining, so now it's time. And it is going to be a big job. Like whoa.We got a quote for someone to do it for us and decided to do it ourselves. With the expense of our upcoming trip to South Africa, we decided to save a little, but it's going to take several weekends. It's a pretty big fence. I do love the color we picked though and I can't wait to see it done. The only thing is, now that it's warm, we aren't the only ones to come out of hiding. The bugs are out in … [Read more...]

Berry Lemon Cheesecake Cookie Cups

These Berry Lemon Cheesecake Cookie Cups are light, delicious and perfect for spring! The cookie cup and cheesecake have an awesome lemon flavor that is totally there, but not overkill. And the berries add the perfect compliment - both in flavor and beauty! We are getting into my favorite time of year to bake! Spring and summer means all kinds of delicious fruit! I am totally into fruity desserts. Plus, they are just so happy! How can you not look at beautiful, fresh fruit and not be happy and want to eat it?Well, I guess if you're my mom. She's not really into fruit, but she's a weirdo. ;)I had actually intended to have these at the American party I threw for the hubs last Saturday to celebrate his citizenship. I had them all ready to go - and then forgot about them in the outside … [Read more...]

No Bake Coconut Caramel Nest Cookies

These No Bake Coconut Caramel Nest Cookies are super easy to make and so cute for Easter! They are made with a mix of cornflakes, caramel and coconut, giving a fun blend of texture and flavors. So in case you missed it last week, the hubs officially became a U.S. citizen last Wednesday. We went to the ceremony, which only lasted about an hour, but started two hours late. They did a nice job. There were 159 people from 61 countries that received their citizenship during that ceremony. They listed all the countries and it was pretty crazy to think about all the people with such different backgrounds together in one room with one thing in common - becoming U.S. citizens. It's pretty amazing to think about what people go through to achieve that and so many of them just had their excitement all over their … [Read more...]
