Reeses Peanut Butter Chocolate Cookie Cups

Happy Halloween! I figured I’d celebrate with a candy filled cookie today, so I’m sharing these delicious Reeses Peanut Butter Chocolate Cookie Cups! Yay for candy and costumes! I don’t really remember too many of the costumes I wore as a kid. I think I was a witch a few times. Probably my favorite costume (that I can remember at least - how old am I? what happened to my memory?) was in college when I dressed up as Michael Jackson. I love him. Best performer of all time. I assume most college towns are this way, but in Chapel Hill (go heels!) the main street going through campus was always JAM PACKED on Halloween. Everyone was dressed up and milling around checking out the costumes. There were usually some pretty funny and original ones. I’ve always been a big Michael Jackson fan. I remember … [Read more...]

Giant Cinnamon Roll Cookie Cake

Cinnamon Roll Cookie Cake

This Giant Cinnamon Roll Cookie Cake has all the cinnamon deliciousness of a cinnamon roll in cookie form, covered in a sweet vanilla glaze! And since cinnamon rolls are breakfast food, this cookie totally passes for breakfast too. ;) So we all have our things that we are a bit anal about, right? I think I have a few. But the one that the hubs makes fun of pretty much every night is my obsession with our sheets and covers on our bed. For some reason, our fitted sheet won't really ever stay in place. We've even tried different sheets and it's always the same. Every morning, it's moved around and wrinkly underneath me. So before we go to bed, I always fix it. Always. I've even made the hubs get out of bed after he's laid down so that I can fix it. After 5 years, he seems to finally be over being … [Read more...]

Candy Corn Chocolate Chip Cookie Cake

Candy_Corn_Chocolate_Chip_Cookie_Cake-featured

This Candy Corn Chocolate Chip Cookie Cake is perfect for a Halloween party or for baking with your kids. It's easy to make, festive and who doesn't like a giant chocolate cookie? If it was ok to hand out homemade things to trick or treaters, I might even hand out slices of this cookie cake. I personally think it'd be much more fun than a 10th little bag of skittles. But alas, homemade things probably would be regarded quite skeptically and not eaten, unless it was a neighbor that knew me. And I get it - if I had kids and some lady was giving out something and I didn't know what was in it, I probably wouldn't want them to eat it either. The fact is, there are some weird people out there who do not so nice things. Unfortunate, but true. Fortunately, I can share this recipe with you and you can make … [Read more...]

Pumpkin Chocolate Chip Cookie Sandwiches

Pumpkin_Chocolate_Chip_Cookie_Sandwiches-featured

Remember when I made this cake last week and said I needed to find another use for the pumpkin icing because it was so darn good? Well, I decided what to do. Sandwich it between two chocolate pudding cookies filled with chocolate chips. Pumpkin Chocolate Chip Cookie Sandwiches are where it's at. Asheville, NC is also where it's at. Or at least, it's where I'm at until later today. We've been on a work retreat since Tuesday - working, exploring, having a few laughs and eating entirely more than necessary. With the exception of a few hours of work each day, we've been spending a lot of time on activities. Bike tours, touring the Biltmore, wearing super cool muppet shirts. We've had some fun. I've been to Asheville before, but not the downtown area. We stayed in a place right downtown so that we … [Read more...]

Nutella Cheesecake Chocolate Cookie Cups

Nutella_Chocolate_Cookie_Cups-featured

These Nutella Cheesecake Chocolate Cookie Cups have a soft, chewy chocolate cookie base and are filled with the creamiest no bake Nutella cheesecake. They are so delicious and the perfect little treat for sharing - or not. You might decide to keep them all to yourself, which is perfectly acceptable as well. :) So we just got back last night from spending a long weekend in Hilton Head, S.C. with my family. Hilton Head is an annual trip for us. We’ve been going since I was a kid and it holds so many memories for me. Even the hubs has been coming with my family since we were in college. It’s such a great beach for families - so clean and laid back. I look forward to hopefully being able to bring our kids to Hilton Head one day. Before we left yesterday, the hubs and I decided to spend as much time … [Read more...]

Pumpkin Cookies with Cinnamon Glaze

Pumpkin_Cookies_with_Cinnamon_Glaze-featured

These Pumpkin Cookies are full of cinnamon, spice and everything nice! Then they are topped with cinnamon glaze. They were a massive hit with all of my taste testers and have me craving all things pumpkin. :) As far as cookies go, these are certainly more of the cakey variety, but they are absolute cookie perfection. They are super moist, and the glaze makes them even moister. Plus, the spices in the cookie and the additional cinnamon in the glaze ramp up the flavor and will make you want to shove 5 cookies in your mouth at a time. I might have done it myself. Ok not really, I do have some self control. But it took all of it to not do that. :) One thing to note when baking these is that unlike the other cookie recipes I have where you want to under bake the cookies just slightly, you don't want … [Read more...]

Caramel Apple Cookie Cups

Caramel_Apple_Cookie_Cup-featured

These Caramel Apple Cookie Cups are my first real taste of fall! A brown sugar cookie cup is filled with caramel, then topped with cinnamon apples and it is SO good! Kind of like an apple pie in a cookie! The hubs went nuts over them and has officially named them the best thing I’ve ever made - with some serious enthusiasm. :) I have kind of fallen in love with cookie cups lately. There will be more to come. I love that they are a fun way to add more texture, layers and flavors to a cookie. The possibilities are endless when you have that little cup to fill with goodies. Since apples and caramel are the perfect pair, and I could just eat caramel with a spoon, I filled these cookie cups with it. Topped with cinnamon apples, these are some seriously dressed up cookies. Eaten warm, they are … [Read more...]

Monster Cookie Cheesecake Pie

Monster_Cookie_Cheesecake_Pie-featured

This Monster Cookie Cheesecake Pie is everything you'd want - a delicious, soft monster cookie stuffed with a creamy peanut butter cheesecake. The whole thing is chewy, peanut buttery and totally yummy! So I mentioned Friday that I was going to see Boyz II Men and En Vogue in concert Friday night and I just wanted to tell you - it was AMAZING! If they are coming to your city, you have got to go! First of all, the venue was awesome. I'd never been to Chastain Park, so we were totally unprepared, but it's totally unique. It's outdoors and has tons of space between each row, so shaking my tail feather was not a problem at all. :) And you can bring in tv trays and coolers. They even have signs outside letting you know the maximum dimensions for them. I so wish we'd known because all around us people … [Read more...]

These Funfetti Cake Batter Chocolate Chip Cookies are my very favorite cookies ever! Combine a cookie and cake and you have the perfect dessert! They don’t lack at all on the cake batter flavor either - they use an entire box of cake mix. Equally exciting is that I’ve teamed up with some other bloggers and we’ve got a Back To School giveaway for you today! Lemon Cookie Cake

Lemon_Cookie_Cake-featured

This Lemon Cookie Cake is soft and chewy and has a lovely light lemon flavor! It’s topped with a lemon buttercream and is the perfect summer-y cookie cake! So summer tv is pretty lousy, am I right? There’s just not much on, with the exception of wonderful guilty pleasures like 'The Bachelorette'. To make up for the lack of interesting things to watch recently, I finally jumped onboard the Downton Abbey train. Hooked, I tell you! I finally finished the fourth season last night. Honestly, I found the end of the fourth season to not be nearly as exciting as the ends of seasons two and three, but certainly less depressing than the end of season three. When the hubs was out of town last weekend, I was constantly at war with myself over whether or not to bake or watch Downton Abbey. Most of the … [Read more...]
