Lemon Cookie Cake

Lemon_Cookie_Cake-featured

This Lemon Cookie Cake is soft and chewy and has a lovely light lemon flavor! It’s topped with a lemon buttercream and is the perfect summer-y cookie cake! So summer tv is pretty lousy, am I right? There’s just not much on, with the exception of wonderful guilty pleasures like 'The Bachelorette'. To make up for the lack of interesting things to watch recently, I finally jumped onboard the Downton Abbey train. Hooked, I tell you! I finally finished the fourth season last night. Honestly, I found the end of the fourth season to not be nearly as exciting as the ends of seasons two and three, but certainly less depressing than the end of season three. When the hubs was out of town last weekend, I was constantly at war with myself over whether or not to bake or watch Downton Abbey. Most of the … [Read more...]

Thick and Chewy Chocolate Chip Cookies

Chocolate_Chip_Cookie-featured

These Chewy Chocolate Chip Cookies are thick and full of chocolate chips! The hubs and I are totally in love with them. I've already promised to make them again - stat! When I went down to Miami in May for the BlogHer Food Conference, I stayed with some friends the first night I got down there. My friend Natalie, being an awesome friend and knowing that I am obviously a massive sweets lover, had some of her favorite cookies waiting for me to try. They were delicious! Some of the things I noticed most about those cookies were how big and thick they were and how much delicious chocolate was in every bite! I knew I needed to make my own. Having just the right amount of chocolate chips is something we all try to get right. I've seen chocolate chip cookies with mini chocolate chips to try to … [Read more...]

Root Beer Float Cookie Cups

Root_Beer_Float_Cookie_Cups-featured

These Root Beer Float Cookie Cups are super cute and totally delicious! The root beer flavor is spot on! So the hubs and I like to give each other a hard time. It’s pretty much second nature to me since I grew up in a family that knows little about how to communicate other than to give each other a hard time. It’s all in good fun though. Sarcasm - it’s an art. And for us, it sometimes allows us to discuss our frustrations in a non-fight-y way. The other day was one of those moments. Like most people, the hubs has certain ways he likes certain things done. I do too, of course, and our “things” tend to clash. I want to do one thing one way and he wants to do it another. I’m always right, of course, but try convincing him of that. :) So the other day we were riding in his car and he had the … [Read more...]

Mint Chocolate Cookie Cups

Mint_Chocolate_Cookie_Cups-featured

These Mint Chocolate Cookie Cups are little bites of heaven. A soft, chocolate cookie with an Andes mint stuffed in the middle is topped with mint buttercream and a chocolate drizzle. They were devoured by all. Have you ever had one of those days where you went out on the lake and had a lovely, relaxing day. You ate good food, enjoyed good company, got a little sun kissed, went tubing for the first time in a year since you can't ski or wakeboard, then you totally crash that night, completely exhausted but grateful for the fun day you had, then you dream about sunscreen and afternoon naps only to wake up in the morning and not be able to move your arms because you are so sore from said tubing? Yea, yesterday was that morning. Oh. my. goodness. My arms and chest. Putting on clothing was a … [Read more...]

Lemon Raspberry Cookie Sandwiches

Lemon_Raspberry_Cookie_Sandwich-featured

These Lemon Raspberry Cookie Sandwiches are a delicious blend of two flavors! The lemon cookie is light, super soft and perfectly complimented by the light raspberry icing filling. Today, I am celebrating Cathy from Lemon Tree Dwelling with a bunch of other bloggers. She is due with a beautiful baby girl very soon, so we are celebrating with a Virtual Baby Shower! Though I’ve not actually met Cathy in person (us bloggers tend to live far away from each other, making it hard to meet in person), I love her delicious recipes! In fact, I loved her Lemon Raspberry Meltaways so much, they inspired the flavor combo for these cookies. And the pink of the raspberry is perfect for a baby girl, don’t you think? Honestly, you could just eat these lemon cookies on their own. They are super yummy. But of … [Read more...]

What a great way to celebrate - with this delicious cake and an awesome giveaway for a Microsoft Surface! Yay! So how was your Easter weekend? I hope it was awesome! We had my mother and sister-in-law in town and had a nice, relaxing weekend. It might have been the first weekend in...well, I don't know how long, that I didn't do blog baking. Just baked and cooked for our Easter meal. It was kind of nice. I love baking for the blog, but I totally messed up the pie crust for my Strawberry Cream Pie. And when normally I'd have been frustrated because I'd have to redo it, it was nice to just not care. It might not have … [Read more...]

Fruit Cheesecake Sugar Cookie Cups

Fruit_Cheesecake_Sugar_Cookie_Cups-featured

These Fruit Cheesecake Sugar Cookie Cups are fresh, fruity and totally perfect for spring! Easter dessert maybe? The combination of moist and chewy sugar cookie, smooth no-bake cheesecake and fresh fruit is such a wonderful mix of taste and texture. I want them all to myself! :) I recently got the chance to try a bag of Zulka Morena Pure Cane Sugar. It's a non-GMO verified and vegan morena sugar. A morena sugar is one that doesn't undergo conventional refining processes, which remove the complexity and flavor in raw sugar cane after it's been processed. Zulka's sugar has a more natural, slightly brown color to it. The granules are also bigger than regular granulated sugar, but it's completely interchangeable with regular sugar -> 1 cup regular sugar = 1 cup Zulka sugar. And it packs a big, … [Read more...]

Baileys Chocolate Cookies

Baileys_Chocolate_Cookies-featured

These Baileys Chocolate Cookies are so moist, chewy and flavorful, you will not want to share. They have just the right amount of Baileys flavor - not too overpowering, but definitely there. And the white chocolate on the outside gives it that extra boost of chocolate flavor, as well as a bit of crunch and variety in texture. I think these might be my new favorite cookie. They are definitely the hubs’ new favorite. I got up last Saturday morning to make them before we left to go do some things that he need to do. I was trying to hurry since I didn’t want to make him late. I was starting to think I was going to be short on time and have to put the dough in the fridge and finish the other half of the cookies later. Then he tasted one of the cookies. All of a sudden he was trying to eat all … [Read more...]

Moist and Chewy Banana Oatmeal Cookies

Banana_Oatmeal_Cookies-featured

These Banana Oatmeal Cookies are hands down the best banana flavored cookie I've ever had. Not only are they moist and chewy for days, they are unmistakably banana-y. Banana can be one of those flavors that can get lost when you bake with it. It can be really subtle flavor. It always bums me out when that happens, because I LOVE the taste of banana. And so does the hubs. So when good flavored banana treats come along, we go a little crazy for them. These cookies make the list of banana things to go crazy for. Without a doubt. And they're so moist, they almost melt in your mouth. Plus, with both banana and oats in them, they're basically healthy, right? ;) And perfect for breakfast! Making them is just as easy as eating them. You've got the usual suspects - butter, brown sugar, white … [Read more...]
