Pumpkin Cookies with Cinnamon Glaze

Pumpkin_Cookies_with_Cinnamon_Glaze-featured

These Pumpkin Cookies are full of cinnamon, spice and everything nice! Then they are topped with cinnamon glaze. They were a massive hit with all of my taste testers and have me craving all things pumpkin. :) As far as cookies go, these are certainly more of the cakey variety, but they are absolute cookie perfection. They are super moist, and the glaze makes them even moister. Plus, the spices in the cookie and the additional cinnamon in the glaze ramp up the flavor and will make you want to shove 5 cookies in your mouth at a time. I might have done it myself. Ok not really, I do have some self control. But it took all of it to not do that. :) One thing to note when baking these is that unlike the other cookie recipes I have where you want to under bake the cookies just slightly, you don't want … [Read more...]

Caramel Apple Cookie Cups

Caramel_Apple_Cookie_Cup-featured

These Caramel Apple Cookie Cups are my first real taste of fall! A brown sugar cookie cup is filled with caramel, then topped with cinnamon apples and it is SO good! Kind of like an apple pie in a cookie! The hubs went nuts over them and has officially named them the best thing I’ve ever made - with some serious enthusiasm. :) I have kind of fallen in love with cookie cups lately. There will be more to come. I love that they are a fun way to add more texture, layers and flavors to a cookie. The possibilities are endless when you have that little cup to fill with goodies. Since apples and caramel are the perfect pair, and I could just eat caramel with a spoon, I filled these cookie cups with it. Topped with cinnamon apples, these are some seriously dressed up cookies. Eaten warm, they are … [Read more...]

Monster Cookie Cheesecake Pie

Monster_Cookie_Cheesecake_Pie-featured

This Monster Cookie Cheesecake Pie is everything you'd want - a delicious, soft monster cookie stuffed with a creamy peanut butter cheesecake. The whole thing is chewy, peanut buttery and totally yummy! So I mentioned Friday that I was going to see Boyz II Men and En Vogue in concert Friday night and I just wanted to tell you - it was AMAZING! If they are coming to your city, you have got to go! First of all, the venue was awesome. I'd never been to Chastain Park, so we were totally unprepared, but it's totally unique. It's outdoors and has tons of space between each row, so shaking my tail feather was not a problem at all. :) And you can bring in tv trays and coolers. They even have signs outside letting you know the maximum dimensions for them. I so wish we'd known because all around us people … [Read more...]

Funfetti Cake Batter Chocolate Chip Cookies

Funfetti_Cake_Batter_Chocolate_Chip_Cookies-featured

These Funfetti Cake Batter Chocolate Chip Cookies are my very favorite cookies ever! Combine a cookie and cake and you have the perfect dessert! They don’t lack at all on the cake batter flavor either - they use an entire box of cake mix. Equally exciting is that I’ve teamed up with some other bloggers and we’ve got a Back To School giveaway for you today! With all the back to school supplies that are needed every year, we thought we’d help you out. The winner gets $400 in paypal cash towards back to school supplies! Yay! Lemon Cookie Cake

Lemon_Cookie_Cake-featured

This Lemon Cookie Cake is soft and chewy and has a lovely light lemon flavor! It’s topped with a lemon buttercream and is the perfect summer-y cookie cake! So summer tv is pretty lousy, am I right? There’s just not much on, with the exception of wonderful guilty pleasures like 'The Bachelorette'. To make up for the lack of interesting things to watch recently, I finally jumped onboard the Downton Abbey train. Hooked, I tell you! I finally finished the fourth season last night. Honestly, I found the end of the fourth season to not be nearly as exciting as the ends of seasons two and three, but certainly less depressing than the end of season three. When the hubs was out of town last weekend, I was constantly at war with myself over whether or not to bake or watch Downton Abbey. Most of the … [Read more...]

Thick and Chewy Chocolate Chip Cookies

Chocolate_Chip_Cookie-featured

These Chewy Chocolate Chip Cookies are thick and full of chocolate chips! The hubs and I are totally in love with them. I've already promised to make them again - stat! When I went down to Miami in May for the BlogHer Food Conference, I stayed with some friends the first night I got down there. My friend Natalie, being an awesome friend and knowing that I am obviously a massive sweets lover, had some of her favorite cookies waiting for me to try. They were delicious! Some of the things I noticed most about those cookies were how big and thick they were and how much delicious chocolate was in every bite! I knew I needed to make my own. Having just the right amount of chocolate chips is something we all try to get right. I've seen chocolate chip cookies with mini chocolate chips to try to … [Read more...]

Root Beer Float Cookie Cups

Root_Beer_Float_Cookie_Cups-featured

These Root Beer Float Cookie Cups are super cute and totally delicious! The root beer flavor is spot on! So the hubs and I like to give each other a hard time. It’s pretty much second nature to me since I grew up in a family that knows little about how to communicate other than to give each other a hard time. It’s all in good fun though. Sarcasm - it’s an art. And for us, it sometimes allows us to discuss our frustrations in a non-fight-y way. The other day was one of those moments. Like most people, the hubs has certain ways he likes certain things done. I do too, of course, and our “things” tend to clash. I want to do one thing one way and he wants to do it another. I’m always right, of course, but try convincing him of that. :) So the other day we were riding in his car and he had the … [Read more...]

Mint Chocolate Cookie Cups

Mint_Chocolate_Cookie_Cups-featured

These Mint Chocolate Cookie Cups are little bites of heaven. A soft, chocolate cookie with an Andes mint stuffed in the middle is topped with mint buttercream and a chocolate drizzle. They were devoured by all. Have you ever had one of those days where you went out on the lake and had a lovely, relaxing day. You ate good food, enjoyed good company, got a little sun kissed, went tubing for the first time in a year since you can't ski or wakeboard, then you totally crash that night, completely exhausted but grateful for the fun day you had, then you dream about sunscreen and afternoon naps only to wake up in the morning and not be able to move your arms because you are so sore from said tubing? Yea, yesterday was that morning. Oh. my. goodness. My arms and chest. Putting on clothing was a … [Read more...]

Lemon Raspberry Cookie Sandwiches

Lemon_Raspberry_Cookie_Sandwich-featured

These Lemon Raspberry Cookie Sandwiches are a delicious blend of two flavors! The lemon cookie is light, super soft and perfectly complimented by the light raspberry icing filling. Today, I am celebrating Cathy from Lemon Tree Dwelling with a bunch of other bloggers. She is due with a beautiful baby girl very soon, so we are celebrating with a Virtual Baby Shower! Though I’ve not actually met Cathy in person (us bloggers tend to live far away from each other, making it hard to meet in person), I love her delicious recipes! In fact, I loved her Lemon Raspberry Meltaways so much, they inspired the flavor combo for these cookies. And the pink of the raspberry is perfect for a baby girl, don’t you think? Honestly, you could just eat these lemon cookies on their own. They are super yummy. But of … [Read more...]

Oreo Cookies and Cream Cookie Cake

Oreo_Cookies_And_Cream_Cookie_Cake-featured

Not only do I have an awesome Oreo Cookies and Cream Cookie Cake to share with you today, but I've also got a wonderful giveaway going on to celebrate my friend Carrian's birthday! What a great way to celebrate - with this delicious cake and an awesome giveaway for a Microsoft Surface! Yay! So how was your Easter weekend? I hope it was awesome! We had my mother and sister-in-law in town and had a nice, relaxing weekend. It might have been the first weekend in...well, I don't know how long, that I didn't do blog baking. Just baked and cooked for our Easter meal. It was kind of nice. I love baking for the blog, but I totally messed up the pie crust for my Strawberry Cream Pie. And when normally I'd have been frustrated because I'd have to redo it, it was nice to just not care. It might not have … [Read more...]
