This Watermelon Elderflower Cocktail is made with Georgia watermelons, cucumber and lime juice – it’s the perfect refreshing drink for summer!

Watermelon Elderflower Cocktail
Watermelon is one of those fruits that just screams summer. It reminds me of watermelon eating contests and spitting the seeds all over the driveway.

Of course that was when I was a kid. Now that I’m all grown up, I like to spike my watermelon. 🙂
When I decided to make a watermelon cocktail, I knew I wanted to include Elderflower. I tried it for the first time about 6 months ago and fell in love.

When combined with some lime juice and cucumber, the watermelon and Elderflower make what is my new favorite cocktail. It’s so delicious and would appeal to so many. It’s sweet with the watermelon, but not too sweet. And very light. It was fun to play around with it and get it just right.

Watermelon Elderflower Cocktail

Ingredients
- 2-3 slices cucumber
- 1 oz lime juice (1-2 limes)
- 1 oz St. Germain Elderflower Liqueur
- 1 oz rum
- 4 oz watermelon juice
Instructions
- Slice cucumber and remove seeds.
- Pour elderflower and lime juice into a glass.
- Add cucumber slices to glass and muddle.
- To make watermelon juice, mash cubed watermelon, then drain the juice out. Add watermelon juice and rum to glass, then stir to combine.
- Serve over ice.

Great refreshing cocktail! I had watermelon juice, and cucumber gin to use up – mixed equal parts cucumber gin, lime juice and elderflower liqueur, then topped up with watermelon juice … delicious!
