This Monster Cookie Cheesecake Pie is sinfully delicious. A soft and delicious monster cookie is stuffed with a creamy peanut butter cheesecake!

Peanut Butter Cheesecake Cookie Pie

So I mentioned Friday that I was going to see Boyz II Men and En Vogue in concert Friday night and I just wanted to tell you – it was AMAZING! If they are coming to your city, you have got to go!

First of all, the venue was awesome. I’d never been to Chastain Park, so we were totally unprepared, but it’s totally unique. It’s outdoors and has tons of space between each row, so shaking my tail feather was not a problem at all. 🙂 And you can bring in tv trays and coolers. They even have signs outside letting you know the maximum dimensions for them. I so wish we’d known because all around us people had bottles of wine, party platters and so much tasty food – some people even brought candles and vases of flowers to decorate their table. And it wasn’t a huge venue, so it had a cool, intimate vibe.

And of course the show was totally awesome. It might just be my favorite concert I’ve ever been too. It makes sense in part because it was totally the kind of show you are going to just dance at. That’s my kind of show.

And the music was awesome. En Vogue totally rocked it. They played all my faves, including “Don’t Let Go”. They started with some of their hits, then the middle was a mix of some of my very favorite hits – some Motown, Tina Turner (including Proud Mary, which my dad and I danced to at our wedding – he LOVES Tina Turner). It rocked! Then they finished with more of their hits.

Boys II Men followed a similar format and played most of my faves – “Motown Philly”, “Bended Knee”, “End of the Road, “Water Runs Dry”. They played “Open Arms” by Journey, and other hits. They joked around a lot with the crowd. I didn’t want the show to end. Even the next day, I wished I could travel to their next city and see them all over again.

And I can’t wait to go back to that venue. Next time, I’ll be sure to bring all kinds of tasty food – maybe even a slice or two of this sinfully delicious cookie pie.

Why I Love This Cookie Pie

It’s a seriously tasty dessert! The peanut butter flavor is obvious, but not too strong. The cookie is soft and chewy and has just the right amount of oatmeal. The cheesecake is creamy and adds moisture and smooth texture to the cookie. The M&Ms and chocolate chips add some crunch. What more could you need? 🙂

It’s a fun mixture of two delicious treats and perfect for both kids and adults!

Monster Cookie Cheesecake Pie

Description

This Monster Cookie Cheesecake Pie is sinfully delicious. A soft and delicious monster cookie is stuffed with a creamy peanut butter cheesecake!


Ingredients

Scale

COOKIE

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 cup peanut butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups quick oats
  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 cup M&Ms
  • 1/2 cup chocolate chips

CHEESECAKE

  • 8 oz cream cheese
  • 1/4 cup brown sugar
  • 1/4 cup peanut butter
  • 1 egg
  • 1 tbsp milk

PEANUT BUTTER ICING 

  • 1/2 cup butter
  • 1/3 cup peanut butter
  • 2 cups powdered sugar
  • 12 tbsp water or milk
  • chocolate sauce, if desired


Instructions

1. Grease a 9 inch pie pan and preheat oven to 350 degrees.
2. To make cookie dough, cream butter and sugars together until light and fluffy, about 3-4 minutes.
3. Mix in peanut butter, eggs and vanilla extract.
4. Add oats, flour, baking soda and making powder and mix until combined.
5. Stir in M&Ms and chocolate chips. Set cookie dough aside.
6. To make cheesecake, beat cream cheese, brown sugar and peanut butter until smooth.
7. Add egg and milk and beat until combined.
8. Press about 3/4 of cookie dough evenly into the pie pan and up the sides.
9. Spread cheesecake mixture evenly over cookie dough.
10. Spread remaining cookie dough on top by dropping spoonfuls of cookie dough on top of cheesecake.
11. Top with a sprinkle of M&Ms
12. Bake for 20-25 minutes, then refrigerate until firm.
13. To make icing, cream butter until smooth.
14. Add peanut butter and mix until smooth.
15. Add powdered sugar and mix until smooth.
16. Add water or milk as needed to get the right consistency for the icing.
17. Pipe icing around the edges of the pie.
18. Serve with chocolate sauce, if desired.

  6. I love Chastain! It’s been forever since I’ve been there and both times we had lawn seats and beaucoup food! Let’s talk about this pie and how I am in love.
