This Taco Lasagna has amazing flavor and is easy to make! A perfect weeknight dinner.

So for the past couple weeks, there has been a lot of baking going on in our house. This is isn’t really anything out of the ordinary, but it’s been a little more than usual.

It’s been for a very good reason though! I’ve been getting ready for next week!

What is next week you ask? I’m actually super excited to tell you that next week is going to be funfetti week!!

Yes, that’s right. FUNFETTI WEEK!! Who’s excited?!?

So with all the cake batter that’s been flying around our kitchen and into our bellies, I decided it might be nice to make something for dinner than didn’t include cake batter. The hubs doesn’t complain, but a good meal seemed to be a good idea.

So I made one of our faves – Taco Lasagna! We are both big mexican fans. Cheese, beans, salsa, and more cheese. Oh my! 🙂

It’s really delicious and not difficult to make.

Ingredients
 

  • 1 ½ pounds ground beef
  • 1 package taco seasoning
  • ½ cup water
  • 1 can black beans (drained and rinsed)
  • 1 can Campbell’s Condensed Fiesta Nacho Cheese Soup
  • 2 tablespoons cilantro
  • 2 tablespoons jalapenos (or more depending on how spicy you like it)
  • 1 package of tortillas
  • 2 cups salsa
  • 1 package shredded cheese
  • Taco sauce (optional)
  • Sour cream (optional)

Instructions
 

  • Brown the ground beef in a large nonstick pan until no pink remains.
  • Add taco seasoning and water to the beef. Cook 1-2 minutes to reduce liquid.
  • Stir in beans, cheese soup, cilantro and jalapenos. Cook and stir for 2-3 minutes until hot.
  • Put half the beef mixture in the bottom of a 9×13 casserole dish.
  • Make a layer of tortillas over the beef.
  • Spread 1 cup of salsa over the tortilla layer.
  • Repeat steps 4-6. Top with shredded cheese.
  • Cook at 350 degrees for 10-15 minutes or until hot.
  • Serve with taco sauce, salsa and sour cream.

    Best comfort food EVER! Not only did I make this for a friend recovering from surgery, but I had enough to make a small one for me. We both agree that this is definitely a repeat recipe in the near future!
