Taco Lasagna

So for the past couple weeks, there has been a lot of baking going on in our house. This is isn’t really anything out of the ordinary, but it’s been a little more than usual.

It’s been for a very good reason though! I’ve been getting ready for next week!

What is next week you ask? I’m actually super excited to tell you that next week is going to be funfetti week!!

Yes, that’s right. FUNFETTI WEEK!! Who’s excited?!?

So with all the cake batter that’s been flying around our kitchen and into our bellys, I decided it might be nice to make something for dinner than didn’t include cake batter. The hubs doesn’t complain, but a good meal seemed to be a good idea.

So I made one of our faves – Taco Lasagna! We are both big mexican fans. Cheese, beans, salsa, and more cheese. Oh my! 🙂

It’s really delicious and not difficult to make.

I hope you like it! And make sure to come back next week for all the funfetti goodness!! There will be new recipes everyday.

Best comfort food EVER! Not only did I make this for a friend recovering from surgery, but I had enough to make a small one for me. We both agree that this is definitely a repeat recipe in the near future!
