Overnight Birthday Cake French Toast Casserole
The best overnight french toast casserole - made with cake mix! The perfect easy breakfast for a birthday or celebration!
Ingredients
Casserole
- 1 loaf Sourdough Or French Bread (cut into chunks)
- 8 large eggs
- 2 ½ cups (600ml) milk
- ½ cup (120ml) heavy whipping cream
- 2 cups Funfetti cake mix
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 5 tablespoons sprinkles
Streusel Topping
- 1 cup Funfetti cake mix
- ½ cup (112g) salted butter (cut into pieces)
Additional
- Rainbow Chip Frosting or Maple Syrup
Instructions
- Grease a 9×13 inch casserole dish.
- Add the bread chunks to a large bowl and set aside.
- In another large bowl, whisk together the eggs, milk, cream, cake mix, cinnamon and vanilla extract.
- Pour the egg mixture over the bread chunks, then gently stir to combine.
- Pour the bread mixture into the prepared casserole dish and spread evenly. Spread the sprinkles evenly over the top of the casserole. Cover the casserole and store in the fridge overnight.
- When ready to bake the casserole, preheat the oven to 350°F (176°C).
- Bake the casserole for about 25-30 minutes. While the casserole bakes, cut the additional cake mix for the topping into the butter for the topping until it's crumbly.
- Remove the casserole from the oven and crumble the streusel over the top of the casserole.
- Continue baking the casserole for another 10-25 minutes, or until it's at your desired level of doneness.
- Serve the casserole warm with frosting or syrup. To use the frosting, heat it in the microwave until pourable.
