Pumpkin Chocolate Chip Cookie Sandwiches
These Pumpkin Chocolate Chip Cookie Sandwiches are so cute, fun and delicious! Two soft double chocolate chip cookies are sandwiched together with creamy homemade pumpkin frosting!
Ingredients
Chocolate Chip Cookies
- 3/4 cup salted butter (room temperature)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1 package (3.4 oz) dry instant chocolate pudding mix
- 2 tbsp natural unsweetened cocoa powder
- 1/2 cup chocolate chips
- 2-3 tsp milk
Pumpkin Icing
- 1/2 cup butter
- 1/2 cup shortening
- 4 cups powdered sugar
- 1/4 cup + 2 tbsp pumpkin puree
- 3/4 tsp pumpkin pie spice
Instructions
- Preheat oven to 350℉.
- Cream butter and sugars together until light and fluffy, about 3-4 minutes.
- Mix in egg and vanilla extract.
- With the mixer on low speed, add flour, cornstarch, baking soda, dry pudding mix and cocoa powder.
- Stir in chocolate chips. Add milk, if needed. Dough will be thick.
- Make balls of about 1 tbsp and then flatten a bit into thick discs and place on cookie sheet. They will spread a little while they bake.
- Bake for about 7-8 minutes.
- Remove from oven and allow to cool for 2-3 minutes on cookie sheet, then transfer to cooling rack to cool completely.
- While cookies cool, make icing. Beat the shortening and butter until smooth.
- Slowly add 3 cups of powdered sugar. Mix until combined.
- Mix in the pumpkin puree and pumpkin pie spice.
- Add the rest of the powdered sugar and mix until smooth. Add more water until it's the right consistency.
- Once cookies are cool, make cookie sandwiches.
