Simple Ingredients

Prep

First, dissolve sugar in champagne, add water, and let cool. Then, toss diced strawberries in sugar to coat.

Make the Filling

Combine egg yolks and sugar in a double boiler or metal mixer bowl over simmering water, whisking until well combined.

Continue Cooking

Cook and whisk vigorously for approximately 5 minutes until the mixture grows in volume, thickens, and turns pale yellow.

Cool

Set the egg mixture aside to cool to a little warmer than room temperature.

Add Mascarpone

When the egg mixture has cooled, add the mascarpone cheese and gently fold together until combined.

Make the Whipped Cream

Whip heavy whipping cream on high speed until stiff peaks form while the egg mixture cools.

Fold

Gently fold the whipped cream into the mascarpone/egg mixture in two parts.

Assemble

Dip ladyfingers into champagne mixture for 3-5 seconds, then place them in a 9x13 pan to create the first layer.

Add Strawberries

Spread half of the strawberries evenly over the lady fingers.

Repeat

Spread half of the mascarpone filling evenly over the strawberries. Then repeat the layers.

Decorate

Use whipped cream to decorate on top as desired. Then finish it off with some sprinkles and strawberries.
