This easy recipe features ladyfingers dipped in a lightly-sweet champagne mixture, with strawberries and mascarpone filling!

Simple Ingredients

You'll need a few ingredients to make this easy recipe, so round them up and let's get started!

Make the Champagne Mix

Cook champagne and sugar in a saucepan, remove from heat and add water. Let cool, then combine with diced strawberries.

Make the Filling

Place egg yolks and sugar in the top of a double boiler and whisk to combine.

Continue cooking and whisking vigorously for about 5 minutes. Then set aside.

When the egg mixture has cooled, add the mascarpone cheese and gently fold together until combined.

Make the Whipped Cream

Add the heavy whipping cream to a large mixer bowl, and whip on high speed until stiff peaks form.

Gently fold the whipped cream into the mascarpone/egg mixture in two parts. Set mixture aside.

Dip the Ladyfingers

Dip ladyfingers in champagne mixture for 3-5 seconds, and lay them into the bottom of the pan to make the first layer.

Add Strawberries

Spread half of the strawberries evenly over the lady fingers.

Add Mascarpone

Spread half of the mascarpone filling evenly over the strawberries. Then repeat all of the layers.

Make the Whipped Cream

Whip the heavy whipping cream, powdered sugar, and vanilla extract in a large mixer bowl until stiff peaks form.

Use the whipped cream to decorate on top as desired. Then finish it off with some sprinkles and strawberries.

Refrigerate for 3-4 hours, or overnight, then serve.
