Pumpkin chocolate chip cookies are packed with rich pumpkin puree, warm fall spices (i.e. cinnamon, nutmeg, ginger, etc.), and, of course, chocolate chips!

Whisk together the flour, baking soda, salt, and spices in a medium-sized bowl.
In a large bowl, mix together the butter, granulated sugar, and brown sugar until everything is well combined.
Stir in the vanilla and pumpkin puree and whisk thoroughly.
Mix the dry ingredients into the wet ingredients, and then add in the chocolate chips.
Refrigerate the dough for an hour, then scoop 2 tablespoons at a time into balls, and place them on a cookie sheet.
Press the cookie balls down to the desired thickness, then bake them for 10-15 minutes, until they're just barely fully baked.
Let the cookies cool on the baking sheet for 5-10 minutes, then transfer them to a cooling rack.
