Heat brown sugar, heavy whipping cream, butter and baking soda in saucepan until melted. Then bring to a boil for about 1 minute.
Remove pan from heat, pour into mixer bowl, add sifted powdered sugar, and beat until fudge holds shape but is soft.
Stir in pecans and spread fudge evenly in a prepared pan. Add additional pecans on top, if desired.
Allow to cool completely at room temperature or in the fridge. Then remove from pan and cut into pieces.
Store in an air-tight container on the counter at room temperature or in the fridge.
