What is Pastry Cream?

Pastry cream, also known as crème pâtissière, is a versatile, velvety, and sweet dessert that's similar to a custard.

Beat the Egg Yolks

Gently beat the egg yolks together in a bowl. Set aside.


In a saucepan, whisk together the sugar and cornstarch until lump-free and then whisk in the milk.


Cook the milk mixture over medium heat until it barely simmers, then remove from the heat.

Temper the Egg Yolks

Whisk a bit of the milk mixture into the egg yolks, then whisk the egg mixture back into the milk mixture.


Return the pan to heat, bring its contents to a light boil, and boil for 1 minute.

Finish It Off

Remove the pan from the heat and whisk in the butter and vanilla extract.


Pour the contents of the pan into a bowl, cover with clear wrap, and chill.


When ready to use, whisk or stir the pastry cream until smooth.
