Add the 2 pounds of strawberries to a food processor or blender and puree until smooth.
Cook the puree in a medium saucepan, then pour it into a measuring cup and refrigerate to cool completely.
Combine the sweetened condensed milk, cooled strawberry reduction and vanilla extract in a large bowl.
Add the heavy whipping cream to a large mixing bowl and whip on high speed until stiff peaks form.
Fold the whipped cream into the sweetened condensed milk mixture. Add the chopped strawberries, if using.
Pour the ice cream into the prepared pan, cover, and freeze.
When you’re ready to serve, let the ice cream sit out for a few minutes to soften so it’s easier to scoop.
