Mini Cheesecakes

What Are Mini Cheesecakes?

These sharable treats have a smooth, creamy filling that sits in a buttery graham cracker crust, with a topping of fresh whipped cream and berries!

Simple Ingredients

You'll need a few ingredients to make this easy recipe, so round them up and let's get started!

Make the Crust

Combine the ingredients for the crust and press about 2 tablespoons worth into the bottom of each cupcake liner.

Bake the Crust

Bake the crusts for 5 minutes. Then let them cool on the countertop.

Make the Batter

Mix together the cream cheese, sugar, and flour. Then add in the sour cream and vanilla.

Add the Eggs

Add in the eggs, one at a time, mixing until smooth after each addition.

Bake

Divide the filling between the liners and bake for 15 minutes. Turn the oven off and leave the cheesecakes inside for 25-30 minutes.

Let Cool

Transfer them to the refrigerator to finish cooling. Then remove the cooled cheesecakes from the pan.

Decorate

Whip the heavy whipping cream, powdered sugar, and vanilla extract. Then pipe onto the tops of the cheesecakes and top with fresh fruit.

Enjoy!

Keep the cheesecakes in the fridge until you are ready to serve.
