Whisk together the flour, baking powder, baking soda, salt, and spices.
Beat the butter, oil, sugars, and vanilla extract together until light in color and fluffy.
Add the eggs and the egg whites, one at a time, mixing after each addition.
Combine the dry ingredients with the batter. Then add in the bananas, pineapple, and pecans. Do not over mix.
Divide the batter between the cake pans and bake for 27-30 minutes.
Allow the cakes to cool for a couple of minutes in their pans before transferring to cooling racks.
Beat together the cream cheese and butter until smooth. Then mix in the powdered sugar and vanilla.
Spread frosting on top of the first cake layer before stacking the next layer on top and frosting.
Then repeat with the third layer, and frost the outside.
