This easy recipe is a light and fluffy cake that’s full of sugar cookie flavor! It has a frosted sugar cookie filling and is flavored with vanilla cookie creamer!

Simple Ingredients

Beat butter, oil, sugar, and vanilla extract in a large mixer bowl until light and fluffy.

Add the Eggs

Add the eggs one at a time, mixing after each. In a separate bowl, combine the dry ingredients.


Mix the dry ingredients, coffee creamer, and milk in the batter until smooth.


Divide the batter evenly between the cakes pans, and bake for 20-25 minutes. Then let cool completely.

Make the Filling

Combine butter, powdered sugar, sugar cookie crumbs, vanilla extract, coffee creamer, flour, salt, and sprinkles.

Make the Buttercream

Combine butter, powdered sugar, coffee creamer, and salt, and mix until smooth.

Remove Cake Domes

Remove the cake domes and place the first cake layer on a serving plate or a cardboard cake round.

Assemble the Layers

Spread ½ of the filling evenly on top of the cake. Add the second layer of cake and the other half of the filling.

Frost the Cake

Top with the remaining cake layer, and frost the outside of the cake with buttercream.


Press sprinkles into the sides of the cake. Pipe swirls of frosting around the top edge of the cake.


Place cookie halves between the swirls and add a few more sprinkles to the top of the cake.


Serve at room temperature or just slightly cool.
