Valentine’s Day Strawberry Cream Cheese Bars

So I’m on a bit of a strawberry kick after making the Valentine’s Day Strawberries and Cream Puppy Chow. I’ve always been a strawberry fan and pink is the perfect Valentine’s Day color! It’s the perfect color for any occasion actually.

My favorite way to eat a strawberry cake is with cream cheese icing, hands downs. But I didn’t want a cake. I wanted a bar. They’re a bit more portable. So today I bring you Strawberry Cream Cheese Bars.

And they are just what I wanted them to be. Soft. Chewy. Pink. Strawberry. Cream Cheese-y. Sprinkle-y. And very easy to make.

You start with by mixing the ever fabulous strawberry cake mix with melted butter and milk. Press half of it into the bottom of a greased 9×13 pan. You may think you won’t have enough to cover the bottom of the pan, but you will. Trust me.

Then mix together the cream cheese, sugar and vanilla. Spread it over the strawberry layer.

Crumble the other half of the batter on top of the cream cheese mixture, sprinkle on some cute Valentine’s Day sprinkles and bake!

The hardest part is waiting until they’re cool to eat them. Delish!

Valentine’s Day Strawberry Cream Cheese Bars

Description

These are Strawberry bars filled a cream cheese filling! A delicious combination!


Ingredients

DOUGH

  • 1 box of strawberry cake mix
  • 1/3 cup butter, melted
  • 1/3 cup milk
  • Sprinkles for the top (optional)

FILLING

  • 16 oz cream cheese, room temperature
  • 1 cup sugar
  • 1 tsp vanilla

Instructions

1. Combine cake mix, melted butter, and milk in a mixing bowl. Mix well.
2. Spread half of the batter in a greased 9×13 pan. The dough is fairly sticky so I used some parchment paper to help spread it more easily.
3. Combine cream cheese, sugar and vanilla in another bowl and mix well.
4. Spread the cream cheese mixture over the layer of strawberry dough in the pan.
5. Crumble the remaining batter on top of the cream cheese.
6. Bake at 350 degrees for 25 minutes. Do not over bake. Let cool completely before cutting into squares.
Store in a covered container in the refrigerator because of the cream cheese. Can be served closer to room temperature, if preferred.
