Easy Homemade Pancakes

Pancakes are one of my all-time favorite breakfast ideas. They are easy to throw together and are made with ingredients you typically already have in your kitchen. Plus, they are easy to change up with different mix-ins and toppings. There’s a reason these are a classic breakfast favorite right?

This easy pancake recipe makes fluffy pancakes just begging to be stacked tall and drenched in maple syrup. I like to serve them with fresh fruit like blueberries and strawberries, which is the twins favorite combo. In fact, this pancake recipe is so easy that I’ve been making it for them before their swimming lessons early in the morning!

What You’ll Need

Making pancakes from scratch only requires a few simple ingredients. (You can even use this recipe to make a DIY pancake mix ahead of time – see details later in this post.)

To make homemade pancakes you will need:

  • All-purpose flour – I haven’t tested this with whole wheat flour.
  • Sugar – The recipe calls for regular white sugar, but you could also use light brown sugar.
  • Baking Powder – This helps the pancakes rise and achieve a super fluffy texture.
  • Salt – Adding salt to recipes in moderation can enhance the sweetness.
  • Egg – This also makes the pancakes fluffy while also supporting the structure of the pancake.
  • Milk – Any kind of milk will do, including plant based milks.
  • Butter – I prefer to use unsalted butter. If you are using salted butter you may need to adjust the amount of salt used separately.
  • Vanilla – Always use pure vanilla extract.

That’s it! Odds are you already have most of this in your kitchen. These pancakes were meant to be.

How to Make Homemade Pancakes from Scratch

So now that I’ve told you these are easy, fluffy and delicious, let’s talk about how to make them.

  • Combine the dry ingredients and the wet ingredients separately. Mix the wet ingredients in a medium bowl. Use a large bowl for the dry ingredients.
  • Add wet ingredients to the dry ingredients. Gently fold them together. You don’t want to do this too brusquely or overdo it. It can over develop the gluten in flour and end up giving you dense, tough pancakes. You’ll end up with some lumps in your batter and that’s ok.
  • Heat the griddle. Let the batter rest while you heat your griddle or pan. Give the batter another little stir before using it and you’ll notice any remaining lumps will break up a bit.
  • Cook your pancakes. Spoon batter onto your griddle about 1/4 cup to 1/3 cup at a time, depending on how large you want your pancakes to be.
  • Flip. You’ll know they are ready to be flipped when they’ve got bubbles coming through the top and the edges are set. I usually cook them until they are just about done, so after I flip them, they just need a little more time to finish cooking the other side so that it’s golden.
  • Dig in! Finally, serve your pancakes warm with your favorite maple syrup!

Tips for Success

  • Don’t over mix. Be sure not to over mix your pancake batter so that you don’t get tough, dense pancakes. Lumps are ok.
  • Use a flat cooking surface. For a nice looking pancake, cook on a flat surface. A griddle is preferable.
  • Make smaller pancakes. Don’t make your pancakes too large, or they’ll be difficult to flip.
  • When to flip a pancake: Your pancakes are ready to be flipped when you see plenty of bubbles coming through the surface and the edges are set.
  • Pancake mix-in ideas: Mix ins make these even more fun! Try adding sprinkles, chocolate chips or fresh fruit to your batter.

How to Make Pancake Mix with this Recipe

If you wanted to make these pancakes even easier to make, you could combine the dry ingredients ahead of time and have it in your pantry as a pancake mix. You’ll want to put it in an airtight container. It should keep well, as long as the flour and baking powder you use is fresh.

Can I Freeze These?

These pancakes do wonderfully when frozen and reheated! I’ve been doing it a ton with the boys. The mornings are rushed, so frozen is a nice shortcut.

You can either layer parchment paper between the pancakes when you freeze them so they don’t stick to each other, or you can lay the pancakes out individually onto a parchment lined baking sheet and freeze them that way. Once frozen, pop them all into an airtight container or bag.

How to Reheat Extras

To reheat them, microwave one pancake for about 20 seconds. Add another 5-10 seconds as you add additional pancakes. If you know you’re going to have pancakes in the morning, you could even pop the number of pancakes you’ll need into the fridge the night before so they thaw (which is what I’ve been doing). Either way, these reheat beautifully.

Fluffy Homemade Pancake Recipe

Description

This Homemade Pancakes Recipe makes soft & fluffy pancakes. Get ready to dig into a stack of the best pancakes you’ve ever had!


Ingredients

  • 2 cups (260g) all-purpose flour
  • 4 tbsp (52g) sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 1/2 cups (360ml) milk
  • 4 tbsp (56g) butter, melted and slightly cooled
  • 2 tsp vanilla extract

Instructions

  1. Combine the flour, sugar, baking powder and salt in a large bowl.
  2. In a large measuring cup, combine the egg, milk, butter and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and gently fold them together until well combined, but still a little lumpy. You don’t want to over mix them or they could end up less fluffy and tough. The batter should be relatively thick, but easily pourable.
  4. Set the batter aside to rest while you heat the griddle, 5-10 minutes. Any remaining lumps with start to soften as the moisture soaks in. Gently stir again.
  5. Heat a griddle or non-stick pan over medium-low heat and melt a little butter to grease it. Pour batter onto the pan and let it spread out into a round pancake. I used about 3 tablespoons of batter per pancake.
  6. Allow to cook until bubbles appear on the surface and the edges are set, then flip and cook until golden.
  7. Continue cooking with the remaining batter.
  8. Serve pancakes with maple syrup or your choice of toppings.

    Wonderful flavor. They were a little thinner than I like so I added an extra tsp of Banking powder and 1 Tbsp flour. Warm the milk for 1 min in the microwave so the melted butter will mix in. Cook time should be very very short…don’t over cook …I am always surprised taking them off the heat thinking they r probably not cooked through but they are perfect.

    not one to usually write reviews, but I have been making this recipe forever now… I searched and searched for a fluffy pancake recipe that didn’t have buttermilk (my boyfriend doesn’t like the flavor of it) and this recipe is better than any other buttermilk pancake recipe I’ve ever made. My son loves it, my mom, myself… Anyone who has ever tried them loves them. I’ve mixed in strawberries, blueberries, and chocolate chips, they’ve allll been delicious. There is only 1 small change I would make, and it’s when adding the melted butter. I struggled a little when adding the butter to the .ilk and egg mixture because the butter would get cold again and end up clumpy. So I found that if I mix the milk and egg mixture to the flour then add the butter, it solves that problem. I never noticed a difference doing it either way except it was less messy because ethe butter doesn’t get stuck to the measuring cup but other than that the recipe is perfect as is! Thank you so much for these pancakes! Myself andy family thank you as well 😁

    So FLUFFY!!! AND delicious!!! We put a Christmas spin on this recipe. We used oat milk, oat eggnog and a 1/4 heavy cream for the milk. We omitted the salt and cut the sugar by half using organic coconut sugar and organic raw sugar. We put a dash of cinnamon in too. We followed the rest of the recipe to a T.. We put just a touch of Burbon barrel aged syrup on top of the cakes. We will be making this recipe again and again. Not a fan of processed store bought “food” and I have tried a few other recipes and they were just eh. Your recipe is perfection. Thank you.

      Freezing is definitely fine. So that they don’t stick, you can freeze them individually or with parchment paper between them.

      It’s possible that you over measured the flour. A food scale is best, otherwise try using a spoon to spoon flour into your measuring cup. You don’t want to pack the flour in.

    Never had a better pancake! We always use instant pancakes and we didn’t have any so we tried this. So so good! My butter was chunky because when it hit the milk and eggs it got cold so I’m not sure what I did wrong but they still tasted great!

      The butter is warm and is being added to cold ingredients, so that can happen. You can let the butter cool a bit before adding it if you like, but it really should be fine even if it’s a little lumpy.

    You should make the bannana and keep the chocolate chips, I don’t know if you have kisses chocolate, but if you use an ice cream scooper, scoop some pancake in it then insert the kisses, it melts in the middle, and it is a nice surprise!!!

    SOOOOOOOO good !!! Iove it. I made it for my parents with my brother and it was DELICIOUS. I only made 1/2 of the recipe because I did’nt know how many pancakes it makes. It makes a LOT! I was able to make 12 little pancakes!!!!!!! And there was still some batter left over. We are gluten intolerint so, we put gluten free all purpuse flower and it worked the same.         The packaging is labelled Plain Flour, described as unbleached wheat flour. I believe it’s the same as all-purpose flour. No, I don’t mean self- raising flour.

    Ok, not going to lie, these were really good, but I have never ever put butter in my pancakes and it gave my mix a really greasy texture to my batter. The batter would not spread out on the pan. I guess really thick pancakes were good, but the inside of them I could not get done without burning the pancake itself. I’m not trying to hate or anything, but it was kind of a difference to my normal recipe I use to make pancakes from scratch.

      This recipe made it into my recipe book! I try a lot of recipes throughout the web, but very few make it into my book to keep as my “go to” recipe for a dish of any kind. I like the idea of pancakes, but unless they’re sourdough flapjacks or a crepe, I always walk away disappointed. Not this time! Wow. My husband doesn’t like pancakes, but after trying them on Friday, he requested them again for Sunday! I agree with a previous comment —you don’t need to add anything on top, they’re amazing by themselves!  The alterations I had to make based on our ingredients on hand were using 3/4c half n half and add water to make it to the 1 1/2c milk. I also do not have any vanilla extract so I just left it out. Thanks to you and this recipe, my husband and son sing my praises (which keeps me cooking for them 😉)

      It’s hard for me to say without being there, but generally this will be a little lumpy and that’s totally ok and basically how it should be. If you have no lumps at all, you probably have over mixed it. As for runny – hard to say but if they don’t over spread after you try one or two pancakes, it should be fine.

    We have tried a LOT of different recipes over the years, even recipes from well-known chefs and cookbook authors. I made this recipe this morning and we all agreed that these are easily the best we have tried. I can’t see any reason to seek out any more recipes. Thank you for this!

    I have found my new favorite pancake recipe! I have been on the hunt fora couple months and tried several different ones online that were good, but not GREAT! These were perfect!! I did have to add more water to mine as they were a bit thick, however I didn’t have any milk on hand so initially I had to substitute with equal parts water and whole whipping cream so maybe thats why?? Anyway, even after adding maybe an additional 1/3 to 1/2 cup water they were still DELICIOUS!! Thanks for a wonderful recipe!!!

        I’ve made this recipe at least a dozen times since I discovered it and it’s great! So versatile too. I have made the recipe exactly to the letter and also frequently make subs and it still turns out well. My most common alteration is the following: 
        Sub 1/4 cup of almond flour for 1/4 cup of the all purpose flour
        Add 1/4 cup old fashioned oats (can also use 1 packet of instant oats in any flavor or plain) plus 1 tbs flax seed meal to the dry ingredients 
        Soak 1tbs chia seeds in 1/4 cup water or apple juice for 10 minutes and stir well into the into the liquid ingredients 

        And usually after pouring the batter in the pan I add a few slices of banana & blueberries to each pancake to make a smiley face for my kids.

         We go on lots of nature hikes on the weekends and this never fails to fill them with energy!

    I’m not a huge fan of pancakes, but now and then I get a craving, Made this recipe this morning and will keep it in the 5 star recipe box!! I did find the batter a bit too thick so added a bit more milk. I also added cinnamon and grated apples. They turned out so fluffy! I will keep leftovers in the freezer then pop them in the toaster for quick snacks, I will also being sharing this recipe with our neighbours who have a large maple sugar bush. Pancakes are served every day there with the fresh maple syrup!!

    Wow,  Delicious.  I cut the recipe in half as there is only two of us.  I did use 1 egg as there is no way to half an egg.  Fluffy, light.  One pancake was more than enough for me.

    Loved this recipe, my family raved! I could watch the pancakes fluffily rise on my griddle, and to whomever asked, I added chopped bananas and chocolate chips right into each pancake as they hit the griddle — perfection!
    Also, i used almond milk due to dietary constraints, and they were as good as any they’ve had before! Thank you!

        I doubled the recipe for my large family and the batter came out too thick, like muffin batter. Had to thin it with milk and another egg, but then the consistency wasn’t right, so I had to add a bit more flour and baking powder. In the end, they were still delicious and everyone loved the flavour, but there was definitely something off with the measurements and consistency when doubled.

      I’ve actually been wanting to test this, but I haven’t yet. I’m sure adding chopped bananas would be fine without much change. But I’d like to try adding mashed banana and will share the results when I do.

    This recipe is fantastic! My family loves them, they taste great. We love them, now the family request I make them from scratch. No more box pancake mixes.

    I have only one question. The recipe says pour into pan. Each time I have made these wonderful pancakes. The batter is not something which can be poured. It’s fluffy, thick I have been able to scoop up and put on pan. Then take a spoon using a curricular motion to gently spread the pancake out. What might I be doing wrong. I measure each item.

      I’m not sure that you’re necessarily doing anything wrong. I actually use a squeeze bottle, so I suppose I just assumed it would pour well. They usually spread on their own pretty well for me. You could certainly try adding a touch more milk if you feel like the texture would be improved by it.

      Only thing I subbed was coconut sugar I don’t know if that makes a difference since that’s all I had on hand. The recipe only needed more liquid, so I upped the vanilla and added a bit of water to the mix. They turned out GREAT ( better than what I’d get at restaurants)! Thank you for the recipe!

    I made these today and they were fluffy and delicious. I have 4 stars because they were hard to make a flat round cake even when I put more milk in. The dough was super doughy and not easy to pour. Easy and good.

      I’ve tried a few recipes and this is the best. I use an egg ring to get them perfectly round and added a bunch of choc chips. Kids and wife loved them.

    This recipe was easy and the pancakes are great. I substituted the milk with buttermilk and did not use the butter. I also added a little more milk to make the batter a little more pourable. This recipe is a keeper!

    This did not work for me at all. My batter was a runny lumpy mess, and they were so thin despite me not overworking the batter as instructed. The one good thing I can say is that they smelled great. But I think I’ll stick with the pancake recipes that have more than just five reviews.

    I tried this recipe Today. It’s My first time making pancakes with the ingredients I have available at home as I usually buy boxed pancake mixes. Turned out perfectly. I used 1 Whole can evaporated milk instead coz we ran out of fresh milk and added a little water to reach the desired consistency of the batter.

      I used can milk also. Maybe adding water is what I should do next time. As my batter is fluffy, thick. I have to scoop the batter then spread out. They taste great and are fluffy. My family loves them, they’ve become once a week guarantee.

      These are fantastic!! So light and fluffy and delicious – rave reviews from the whole family! They yield a lot so if it’s for 2 people you can half the recipe, (depending on how hungry you are.) 11/10 would make again!

    I wanted homemade pancakes for breakfast on Saturday and looked up a recipe. Followed it to a “T” and it was awful! We ended up having cereal (again!). These look amazing and i will definitely try them next time! Hope you and your family are doing well!

I made it again this morning, the best pancakes ever. Light and fluffy and better than any store bought. The recipe is easy, simple and just plain good. Really doesn’t even need syrup.       Just made these. Added some coconut, awesome recipe. Much better than boxed garbage. I used 1% milk, but will try buttermilk next time. These are extremely light, fluffy and thick.
