Can you tell I’m good at math? 😉

Well growing up, I actually was pretty decent at math. At least until I hit Calculus. Then I got lost. I no longer do math.

The other thing I got good at as a kid was hiding things. My favorite things. Dessert things.

My younger brother and I would always hide our favorite foods from the other when we didn’t want the other to be able to eat them all. Usually it was frozen treats of some sort and we’d have to find some stealthy spot behind the peas where the other wouldn’t venture to look. Then we got a second fridge in the garage and it opened up a whole new possibility of hiding places.

And it wasn’t just the freezer. My parents still live in the same house and it’s got a nice big pantry. The sides actually go back into the walls a bit so it’s like there’s deep, dark caves on either side of the shelves. You know what those deep, dark caves are good for? Hiding stuff. Like food. Particularly the Thin Mint Girl Scout cookies you want all to yourself.

Oh yea, that happened.

And the hiding wasn’t limited to myself and my brother.

On any given day you could find stashes of candy that my parents had hidden (and still do hide) for themselves. Problem was my dad’s hiding spot became known. I knew just where to find that licorice candy he was keeping from me. And if I only took a couple pieces at a time…

Not that long ago, the hubs and I were visiting them (my parents) and they’d recently discovered a new favorite cookie. A chocolate covered marshmallow thing.

Well my dad couldn’t find them in the pantry and had been looking for a couple days when he finally asked my mom what happened to them. She went into the pantry and came right back out with them.

After that, about 5 minutes of heckling and joking with her began as my dad accused her of hiding them from him. It was pretty fun to watch. And you know she’s using those deep, dark caves to her advantage. 😉

Well deep, dark caves is what you will need when you make these. They are so delicious and you will want to eat as many of them as you can, but you won’t be the only one. If you aren’t careful someone might just eat them right out from under you!

They were devoured at our small group and at home. They didn’t last a full day after I’d taken pictures of them and declared them fair game.

Having the caramel replacing the marshmallows was a smart move on my part. And every caramel krispie treat bite is only made better by the chocolate covered caramel pockets formed by the Rolos. If you’re a fan of caramel, chocolate and some crunch, these are a no brainer.

Plus, they’re made right on the stove just like a regular rice krispies. Which means no turning on the oven, my friend. It also means they’re quick to make. Just melt the caramel, butter and milk together and add in the rice krispies and Rolos. The hardest part is waiting for them to cool to cut into squares.

And they would be a great way to use up some leftover Halloween candy. Any candy with caramel and/or chocolate would be tasty in these – milky ways, snickers, twix, M&Ms – the possibilities are endless! And so tasty!

Caramel Rolo Rice Krispie Treats

Description

These Caramel Rolo Rice Krispie Treats are stuffed with tons of rolos and caramel, and you don’t even have to use marshmallows to make them! So good they’ll put you in a caramel coma!


Ingredients

  • 1/4 cup milk
  • 1/2 cup of butter
  • one 14 oz bag Kraft caramels
  • 56 cups rice krispies
  • one 12 oz bag Rolos
  • 1 cup butterscotch chips, optional
  • 1 cup semi-sweet chocolate chips, optional

Instructions

1. Line a 9×13 pan with parchment paper.
2. Cut all Rolos into halves.
3. Melt caramels, butter and milk together over medium-low heat.
4. When melted and smooth, remove from heat, then add rice krispies and halved Rolos and mix well. Don’t over mix, as the Rolos will soften from the heat and you don’t want them to lose too much of their shape.
5. Press into pan. Don’t press down too much or the rice krispies will be hard when cool.
6. Allow to cool, lift out of the pan with the parchment paper.
7. Melt butterscotch chips in a bowl in the microwave, using 30 second increments so that it doesn’t burn .
8. Drizzle melted butterscotch across the top of the rice krispie treats.
9. Repeat steps 7 and 8 with the semi-sweet chocolate chips.
10. Allow to cool, then cut into squares.

    Dear Lindsey , had a question regarding the Rice Krispies with the rolos. When I went to put the rolos and the Rice Krispies in the pot should it have been off the heat. I did shut off the heat but most of the rolos melted. Was trying to avoid that. I read what you said about not over mixing. That I did. I am sure it still tase good.you also did a caramel and chocolate drizzle?

      Hi Shari! Yes, taking them off the heat would be best. The rolos will melt a bit and lose their normal shape, but most should stay intact enough to give you the nice pockets of caramel. I’ll add the instructions for the drizzle on top – I used melted butterscotch chips and chocolate chips.

    The first time I had Rolo’s was when I was a little girl traveling with my family to Chicago. I remember getting them at the hotel and sharing one with my dad who proceeded to eat the whole pack.
