So in marriage, one of the things we have to learn to do is share. Problem is, sometimes sharing isn’t easy. And sometimes sharing means someone else loses – as in loses something. As is loses the nail clippers that you both share. And sometimes that seems to happen over and over and over.

When that happens, there’s only one thing to do.

Not share any longer. 🙂

After going through countless nail clippers, we finally argued (jokingly) the other day about who keeps losing them. And of course we blame each other. And of course I’m right. I always put them back where they are supposed to go.

But he thinks the same thing of himself. He thinks it’s all my fault.

So when he came home the other day and saw two new nail clippers on the kitchen counter, he immediately started to tell me that one would be for me and one for him – as if that wasn’t why I’d gotten two to begin with.

And I one up-ed him. I was prepared with masking tape for us to label ours with our names so that there could be no confusion about whose is whose. Then time would tell who loses the clippers. Oh yes.

We then ran off to hide our clippers in different spots in the house where the other person can’t find them. That way, we can determine who is the one responsible for losing them by seeing who loses theirs first. It’s very scientific.

Of course I’m sure he’d rather grow claws than have to come and get my nail clippers and admit that he lost the battle! It may take some time, but I am sure that some day soon I will report my victory. 🙂

We gotta have a little fun, you know?

Like this cake – this cake is super fun! I mean, look at all those sprinkles! Don’t they just scream fun and happy?

I loved the peanut butter version of this cake so much, I decided to make a funfetti version. I have a bit of a funfetti addiction, so it was only natural that it would happen.

This cake is fairly simple to put together. The only baking required is for the brownies. I used a from scratch brownie, but you could definitely use a box mix if you prefer. You’d probably need two boxes to get enough batter for 3 brownies.

The brownies are filled with layers of the best cookie dough ever – cake batter! I used my beloved Funfetti Cake Mix, but you could use a white or yellow make mix too. The cookie dough is eggless, so no need to worry about baking. Just mix everything together!

They layers are held together with chocolate ganache and it makes a wonderful, rich combo!

I finished the cake off with more ganache on top, some chocolate icing and sprinkles. I even pressed sprinkles into the sides of the cookie dough layer. Is there such a thing as too many sprinkles? No? Ok, good. Because they are an early celebration of the day I win the toe nail clipper battle. 🙂

Description

This Cookie Dough Brownie Layer Cake with funfetti is a totally decadent treat! Layers of brownies and edible funfetti cookie dough are topped with a delicious chocolate ganache & more sprinkles!

Ingredients

BROWNIES

  • 1 1/2 cup vegetable oil
  • 3 cups sugar
  • 3 tsp vanilla extract
  • 6 eggs
  • 1 1/2 cup flour
  • 1 cup cocoa (I use Hershey’s Special Dark)
  • 3/4 tsp baking powder
  • 1/4 tsp salt

COOKIE DOUGH

  • 1 1/2 cup butter, softened
  • 1 cup sugar
  • 1 1/2 tsp vanilla
  • two 15.25 oz boxes funfetti dry cake mix, heat treated
  • 1 1/3 cups flour, heat treated
  • 34 tbsp milk
  • 45 tsp sprinkles
  • 3/4 cup white chocolate chips
  • 3/4 cup chocolate chips

CHOCOLATE GANACHE

  • 12 oz semi-sweet chocolate chips, divided
  • 1 cup heavy whipping cream, divided

CHOCOLATE FROSTING

  • 1/4 cup butter
  • 1/4 cup shortening
  • 2 cups powdered sugar
  • 1/4 cup cocoa
  • 1 tbsp water or milk
  • sprinkles, for topping, if desired

Instructions

1. Line the bottoms of three 8 inch cake pans with parchment paper and grease the sides. Preheat oven to 350 degrees.
2. Mix together the oil, sugar and vanilla extract.
3. Add eggs and mix until well combined.
4. Combine flour, cocoa, baking powder and salt.
5. Slowly add dry ingredients to the egg mixture until well combined.
6. Pour the batter evenly into the three pans and spread evenly.
7. Bake for 25-30 minutes, or until a toothpick comes out with a few crumbs.
8. Remove brownies from oven and allow to cool for about 10 minutes in the pan, then remove to cool on wire rack.
9. While brownies cool, make cookie dough.
To make the cookie dough:
1. Cream butter and sugar together until light and fluffy, about 3-4 minutes.
7. Mix in vanilla extract.
8. With the mixer on low speed, add one entire box of dry cake mix, plus 1 1/2 cups from a second box of cake mix and mix until combined.
9. Add 1 cup flour and mix until combined.
9. Add milk and up to an additional 1/3 cup of flour to preferred thickness.
10. Stir in sprinkles and chocolate chips. Dough will be thick. Set aside.
To assemble cake:
Once the brownies are cool, it’s time to put the layers together. You can pile the cookie dough onto the brownies, stack the layers and leave messy layers, or use the method I used for having clean edges/sides of the cake.
1. Place half of chocolate chips in a metal bowl.
2. Microwave half of the heavy cream until it starts to boil. Remove from microwave and pour over chocolate chips.
3. Cover bowl with saran wrap for 5-7 minutes.
4. Whisk chocolate and cream until smooth.
5. Using one of the same 8 inch cake pans that you baked the brownies in, put parchment paper or saran wrap in the bottom and up the sides of the pan. You will use it to lift the layers out of the pan.
6. Place the first brownie into the bottom of the pan.
7. Add about 3 tbsp of chocolate ganache on top of the brownie and spread into a thin layer. This will help the cookie dough stick to the brownie.
8. Put half of the cookie dough into the pan and spread evenly on top of the brownie.
9. Remove the first two layers from the cake pan and place on it’s serving dish.
10. Repeat steps 5-8 with the second brownie and remaining cookie dough. Then remove from pan.
11. Put another 3 tbsp of chocolate ganache on top of the cookie dough layer from the first section of cake and spread thinly.
12. Place the second section of cake onto the first.
13. Put another 3 tbsp of chocolate ganache on top of the cookie dough layer on top (the fourth layer) and spread thinly.
14. Top with remaining brownie. Press sprinkles into sides of cookie dough, if desired.
To finish off cake:
1. Place remaining chocolate chips in a metal bowl.
2. Microwave remaining heavy cream until it starts to boil. Remove from microwave and pour over chocolate chips.
3. Cover bowl with saran wrap for 5-7 minutes.
4. Whisk chocolate and cream until smooth.
5. Allow to sit for a few minutes until it just starts to thicken, then pour over the top of the cake.
6. Place cake in refrigerator and make the chocolate icing.
7. To make the icing, beat the shortening and butter together until smooth.
8. Slowly add the powdered sugar and cocoa and mix until smooth.
9. Add water or milk and mix until smooth.
10. Remove cake from fridge, and pipe icing onto the top edge of the cake. Top with sprinkles.

I made this cake for my sons birthday it was a bummer. Everyone I shared this with agreed it was just too intensely packed with sugar. While the idea is nice maybe finding a balance of light and heavy within the layers would have helped this cake.

    1. Lindsay

There’s no doubt this is a heavy, dense and intense cake. Just looking at it you can tell it’s full of sugar. I’m sorry you weren’t happy with it. Perhaps something that is a play on these flavors would be better for your tastes. My recipes that include cookies and brownies are often fairly sweet, but this cheesecake might be more along the lines of something you would enjoy. https://www.lifeloveandsugar.com/oreo-brookie-cheesecake/

    1. Lindsay

I don’t usually recommend freezing fully made cakes. There can be condensation during thawing that can add moisture to the cake and possibly make things soggy. It helps to that it in the fridge, but I still don’t typically recommend it. That said, you could certainly try it.

  2. Joyce Beams

Made thus a few years ago for memorial day weekend – ridiculously delicious! Wanting to make again this weekend. Hoping to do in cupcake form. Has anyone done this?

    1. Lindsay

You could leave it out of the fridge for up to 24 hours, but then would want to refrigerate it. Bring it back to room temperature before serving, though.

  3. Anna Lisa Griffith

This sounded so decadent and there are just four of us here, so I cut the recipe in half and used six inch pans.  It turned out great!  Very rich!

  4. Jen

Amazing recipe! Made it for my sons seventh birthday. He loves brownies, and wanted cookie dough, so this was perfect. Tweaked it a bit and only did two layers of brownie and one of cookie dough, but used extra cookie dough to make little ball bites. Can’t wait to eat it! He wanted a dino theme, so I decorated it with his toys and a rice krispie/fondant volcano. Looking forward to trying more of your recipes, this one was fun.

  5. Maria

please explain how to heat treat the flour and cake mix for the edible cookie dough portion of this cake.

    Thank you.

    1. Maria

Heat treating is a way to kill the nasty germs but keeps the flour usable for mixing into cookie dough. The raw flour is heated to high enough temperatures, through and through, to make sure all the bad bacteria is eradicated.Oct 16, 2019. Just use the microwave and check That temperature hit 165 degrees.

  6. Amy

Looks amazing! Planning on making this this week. Can you make it with a boxed brownie batter? Just seeing if there are any time cutting hacks! Thanks!

  7. Veronica

I made this cake for my daughter’s birthday party and she absolutely loved it! The brownie layer is a great touch.

  8. Shilo Eddy

I found this recipe in August of 2018 to make for sons birthday. He wanted brownies instead of a cake so I searched the internet for a special brownie cake and found this. The cake was a huge hit. Then, this weekend the kids asked me to make this cake again (just cause) but they wanted Heath. The recipe was a breeze to modify for their request. I used vanilla bean cake mix and added 1.5 c of chopped Heath to the mix instead of the white and chocolate chips. On the top, I added more chopped Heath but otherwise, followed the original recipe. Thanks for this awesome recipe!

      1. Jeska @ brookie recipe

Pure deliciousness! I know what I’m baking for my daughter’s birthday. She’s going to LOVE It.

        Thanks for sharing Lindsay!

    1. Lindsay

I haven’t ever tried it. But you’d want to cut all ingredient amounts in half and probably try a 5 or 6 inch pan.

  9. Holly

Hello, just seen this cake recipe and I’m thinking of making for my son’s birthday this weekend. Only thing is, where I live I can’t get hold of funfetti cake mix. Do you think I could just use a packet of birthcake mix and add sprinkles?

  10. Rebecca

The recipe says to cream the butter and sugars for the cookie dough part but only one sugar is listed. Am I missing something? Thanks!

    1. Lindsay

You are correct, it should read butter (1 1/2 cup) and sugar (1 cup) for the cookie dough. Thanks for the catch. I have changed the recipe. I hope you enjoy!

  11. Katie

I found this cake in early 2015, and it has been my go-to favorite since. It is a tall cake, and extremely rich (just my style–gotta be worth eating!). When serving, we do _thin_ 1/2″ slices. This is what people can eat without waste (they could always come back for seconds). This cake can easily serve 24 people this way. (I slice up the leftover cake, individually wrap the slices in plastic wrap, place in a gallon freezer Ziploc and celebrate for another month with the leftovers!)
I do a few alterations – skip the frosting, use mini chocolate chips (or chop ’em) for inside the cake/cookie dough, and I usually use a brownie mix (with chocolate chips in it).

  12. Bella Hardy

Wow! This is gorgeous. I bet it would be scrumptious brownie layer cake amazing for kids. Will definitely try this for my family. Thanks for sharing Lindsay!

  13. Marcy

Hi Lindsay! I just came across your beautiful site! I am going to be making edible cookie dough flavors to scoop into sugar cones for my son’s birthday party. Could you give me an idea of how many cups your confetti cookie dough recipe makes that you use in the Funfetti Cake Batter Cookie Dough Brownie Layer Cake? I won’t be making the cake, just the edible cookie dough :). Thank you!!

  14. Jill Roberts @ WellnessGeeky

Legit speechless, these funfetti cake batter cookie dough brownie layer cake recipe look unreal! My kids would love it!

  15. Pam

Has anyone used Pillsbury Gluten Free Funfetti cake mix, and also substituted Cup 4 Cup gluten free flour for the regular flour in this recipe. Just wondering if it still comes out ok.

      1. Pam

I went ahead and tried it, using King Arthur GF brownie mix, GF funfetti cake mix, and also the flour mentioned above. It turned out awesome, and no one knew. 🙂

  16. Kelly

Where has this recipe been hiding all my life? It not only sounds delicious, it’s absolutely stunning! Totally making this and eating this ASAP this weekend!

  17. Jen

With the latest news about uncooked flour being the cause of food poisoning in raw dough, I was thinking of just baking a few layers of cooked funfetti cake to put between the brownie layers. Would you recommend added all the additional ingredients you list prior to baking, or just following the boxed recipe?

Can’t wait to try it! Thanks!

    1. Lindsay

If you are going to make the box mix as a cake, I’d just follow the box recipe. Another option could also be to toast the flour a bit so that it “cooks” but can still be used as a dry ingredient.

  18. Megan

I’m not the biggest fan of brownies so I’m going to do blondies with white chocolate chips. Thanks for the idea!

  19. Ali

    Hello Lindsay!

I have just found your cake receipt on Pinterest and would love to make this cake for my boyfriends birthday! Sadly I am not able to get the Funfetti cake mix in Germany – not even online, grrrr! Do you have any suggestions how i can make a similar mix?

Thanks for your answer in advance,

    Greetings from overseas!
    Ali

    1. Lindsay

You could just use a vanilla cake and add a few more sprinkles. That should be pretty similar. Do you have access to other cake mixes?

  20. Sues

THANK YOU for this recipe! Had a huge success with this cake and everyone absolutely loved it. For as many steps as it is, it actually wasn’t too tough (I was making it after work and nervous I’d be up all night, but it went super smoothly!). I’m generally opposed to using boxed mixes, but it totally makes sense in this cookie dough and I’m so glad I followed that. Will definitely be making again.

If anyone wants to see what mine looks like, you can see it here: https://www.wearenotmartha.com/2015/10/friday-im-in-love-2-let-there-be-cake/

  21. SailorMea

Alrighty, so the funfetti brownie cake is freaking AWESOME. Seriously. But you have to take off the icing, not the ganache, but the icing. The icing uses shortening and honestly tastes… unpleasant. My boyfriend and I took the icing off, and the cake was amazing.

  22. Michelle

This cake looks amazing and I definitely want to try it one day, but I just had to say that your story about the nail clippers had me cracking up! I swear that my husband and I had almost the exact same situation at our house and now we each have our own pair!

  23. Brendon Callaghan

    hello

i was wondering if you had an Australian substitution for the funfetti cake mix Plz.

    thank you again 🙂

    1. lifeloveandsugar@gmail.com

If you have regular vanilla cake mixes, that would work. You’d just add sprinkles to it. If you don’t have cake mixes, I’m not sure without testing it.

  24. Jyllian

About how many does this feed? Thinking of making one for my daughter’s birthday party! Assuming I’m going to have to double it and use rectangle pans. Or I cold always make some cupcakes to set around the cake for those who would prefer that over cake..

  25. lisa

Just made this for my sons birthday. It came out beautifully and tasted nice but was incredibly rich. No one was able to finish a normal sized slice even though everyone enjoyed it. The leftover slices were left on the counter overnight and were still moist in the morning so it does keep well, much better than normal cake. Make sure you have lots of people to share this with.

    1. lifeloveandsugar@gmail.com

If you can’t find funfetti, you could use a regular vanilla cake mix with some added sprinkles.

Maybe I am being dim, but when you put the brownie in the pan and then do the cookie dough layer how exactly are you getting it back out again?
    Thanks!

    1. lifeloveandsugar@gmail.com

Hi Karen! I do my best to describe that in #5 of the instructions under the section about assembling the cake. I put saran warp in the bottom of the pan and up the sides and use that to lift the cake out when it’s done. You can also add a cake cardboard circle underneath the cake and on top of the saran wrap to help in stay steady.

Hi Lindsay, I´m from Germany and I would like to do this cake, but I don`t understand what shortening is 😀 And I couldn´t find a funfetti dry cake mix in any shop, how can I replace it??? And can I use normal chocolate bars and crush them instead of chocolate chips???

    1. lifeloveandsugar@gmail.com

OMG, you made a big version! I love it! It looks awesome!! I’m so glad you enjoyed it! 🙂

Just made this cake last night to surprise my husband for his birthday. I am too excited togive itto him. Thank you for suchs great idea. How should I store it. Fridge or counter?

    1. lifeloveandsugar@gmail.com

Awesome! So glad you like it! I store it in the fridge, but let it sit out for maybe 20 minutes before serving.

    1. lifeloveandsugar@gmail.com

I’d probably refrigerate it for a few hours once it’s all put together so that the cookie dough firms up a bit. Then take it out maybe 20 minutes before serving, so it isn’t too hard.

I made the cookie dough/brownie/funfetti cake, as requested for a birthday. I followed the recipe exactly, and my cake is the image of the cake picture posted. Even as I was making this cake I wondered how anyone could eat it, but as it was a request I continued. It is truly an inedible, heavy mass of fat and sugar. Nobody ate more than a morsel. Yes, it is pretty, but disgusting.

    1. Sara

Absolutely disguting! This cake looks gorgeous, but is waaaay too overloaded with sugar. It does not taste good whatsoever!!
