Cookie Dough Brownie Layer Cake
So in marriage, one of the things we have to learn to do is share. Problem is, sometimes sharing isn’t easy. And sometimes sharing means someone else loses – as in loses something. As is loses the nail clippers that you both share. And sometimes that seems to happen over and over and over.
When that happens, there’s only one thing to do.
Not share any longer. 🙂
After going through countless nail clippers, we finally argued (jokingly) the other day about who keeps losing them. And of course we blame each other. And of course I’m right. I always put them back where they are supposed to go.
But he thinks the same thing of himself. He thinks it’s all my fault.
So when he came home the other day and saw two new nail clippers on the kitchen counter, he immediately started to tell me that one would be for me and one for him – as if that wasn’t why I’d gotten two to begin with.
And I one up-ed him. I was prepared with masking tape for us to label ours with our names so that there could be no confusion about whose is whose. Then time would tell who loses the clippers. Oh yes.
We then ran off to hide our clippers in different spots in the house where the other person can’t find them. That way, we can determine who is the one responsible for losing them by seeing who loses theirs first. It’s very scientific.
Of course I’m sure he’d rather grow claws than have to come and get my nail clippers and admit that he lost the battle! It may take some time, but I am sure that some day soon I will report my victory. 🙂

Like this cake – this cake is super fun! I mean, look at all those sprinkles! Don’t they just scream fun and happy?
I loved the peanut butter version of this cake so much, I decided to make a funfetti version. I have a bit of a funfetti addiction, so it was only natural that it would happen.
This cake is fairly simple to put together. The only baking required is for the brownies. I used a from scratch brownie, but you could definitely use a box mix if you prefer. You’d probably need two boxes to get enough batter for 3 brownies.
The brownies are filled with layers of the best cookie dough ever – cake batter! I used my beloved Funfetti Cake Mix, but you could use a white or yellow make mix too. The cookie dough is eggless, so no need to worry about baking. Just mix everything together!
They layers are held together with chocolate ganache and it makes a wonderful, rich combo!
I finished the cake off with more ganache on top, some chocolate icing and sprinkles. I even pressed sprinkles into the sides of the cookie dough layer. Is there such a thing as too many sprinkles? No? Ok, good. Because they are an early celebration of the day I win the toe nail clipper battle. 🙂

- 1 1/2 cup vegetable oil
- 3 cups sugar
- 3 tsp vanilla extract
- 6 eggs
- 1 1/2 cup flour
- 1 cup cocoa (I use Hershey’s Special Dark)
- 3/4 tsp baking powder
- 1/4 tsp salt
COOKIE DOUGH
- 1 1/2 cup butter, softened
- 1 cup sugar
- 1 1/2 tsp vanilla
- two 15.25 oz boxes funfetti dry cake mix, heat treated
- 1 1/3 cups flour, heat treated
- 3–4 tbsp milk
- 4–5 tsp sprinkles
- 3/4 cup white chocolate chips
- 3/4 cup chocolate chips
CHOCOLATE GANACHE
- 12 oz semi-sweet chocolate chips, divided
- 1 cup heavy whipping cream, divided

- 1/4 cup butter
- 1/4 cup shortening
- 2 cups powdered sugar
- 1/4 cup cocoa
- 1 tbsp water or milk
- sprinkles, for topping, if desired

Hi! How do I heat treat the cake mix?
Spread it evenly on a baking sheet and bake for about 5 minutes at 350 degrees Fahrenheit.
I made this cake for my sons birthday it was a bummer. Everyone I shared this with agreed it was just too intensely packed with sugar. While the idea is nice maybe finding a balance of light and heavy within the layers would have helped this cake.
There’s no doubt this is a heavy, dense and intense cake. Just looking at it you can tell it’s full of sugar. I’m sorry you weren’t happy with it. Perhaps something that is a play on these flavors would be better for your tastes. I don’t usually recommend freezing fully made cakes. There can be condensation during thawing that can add moisture to the cake and possibly make things soggy. It helps to that it in the fridge, but I still don’t typically recommend it. That said, you could certainly try it.

Sure, it’ll just have a little bit different flavor.
Do you need to keep the cake refrigerated if making ahead of time?
I would, yes. Just bring to room temperature prior to serving.
How do you store this? Do you leave it on the counter or put it in the fridge?
You could leave it out of the fridge for up to 24 hours, but then would want to refrigerate it. Bring it back to room temperature before serving, though.
This sounded so decadent and there are just four of us here, so I cut the recipe in half and used six inch pans. It turned out great! Very rich!

Amazing recipe! Made it for my sons seventh birthday. He loves brownies, and wanted cookie dough, so this was perfect. Tweaked it a bit and only did two layers of brownie and one of cookie dough, but used extra cookie dough to make little ball bites. Can’t wait to eat it! He wanted a dino theme, so I decorated it with his toys and a rice krispie/fondant volcano. Looking forward to trying more of your recipes, this one was fun.

Heat treating is a way to kill the nasty germs but keeps the flour usable for mixing into cookie dough. The raw flour is heated to high enough temperatures, through and through, to make sure all the bad bacteria is eradicated.Oct 16, 2019. Just use the microwave and check That temperature hit 165 degrees.

I found this recipe in August of 2018 to make for sons birthday. He wanted brownies instead of a cake so I searched the internet for a special brownie cake and found this. The cake was a huge hit. Then, this weekend the kids asked me to make this cake again (just cause) but they wanted Heath. The recipe was a breeze to modify for their request. I used vanilla bean cake mix and added 1.5 c of chopped Heath to the mix instead of the white and chocolate chips. On the top, I added more chopped Heath but otherwise, followed the original recipe. How would you go about cutting this recipe in half?
I haven’t ever tried it. But you’d want to cut all ingredient amounts in half and probably try a 5 or 6 inch pan.

I found this cake in early 2015, and it has been my go-to favorite since. It is a tall cake, and extremely rich (just my style–gotta be worth eating!). When serving, we do _thin_ 1/2″ slices. This is what people can eat without waste (they could always come back for seconds). This cake can easily serve 24 people this way. (I slice up the leftover cake, individually wrap the slices in plastic wrap, place in a gallon freezer Ziploc and celebrate for another month with the leftovers!)
I do a few alterations – skip the frosting, use mini chocolate chips (or chop ’em) for inside the cake/cookie dough, and I usually use a brownie mix (with chocolate chips in it).

Has anyone used Pillsbury Gluten Free Funfetti cake mix, and also substituted Cup 4 Cup gluten free flour for the regular flour in this recipe. Just wondering if it still comes out ok.
I haven’t tried it or had anyone mention it, so I can’t say for sure.
I went ahead and tried it, using King Arthur GF brownie mix, GF funfetti cake mix, and also the flour mentioned above. It turned out awesome, and no one knew. 🙂

With the latest news about uncooked flour being the cause of food poisoning in raw dough, I was thinking of just baking a few layers of cooked funfetti cake to put between the brownie layers. Would you recommend added all the additional ingredients you list prior to baking, or just following the boxed recipe?

If you are going to make the box mix as a cake, I’d just follow the box recipe. Another option could also be to toast the flour a bit so that it “cooks” but can still be used as a dry ingredient.
I’m not the biggest fan of brownies so I’m going to do blondies with white chocolate chips. Thanks for the idea!

THANK YOU for this recipe! Had a huge success with this cake and everyone absolutely loved it. For as many steps as it is, it actually wasn’t too tough (I was making it after work and nervous I’d be up all night, but it went super smoothly!). I’m generally opposed to using boxed mixes, but it totally makes sense in this cookie dough and I’m so glad I followed that. Will definitely be making again.

Alrighty, so the funfetti brownie cake is freaking AWESOME. Seriously. But you have to take off the icing, not the ganache, but the icing. The icing uses shortening and honestly tastes… unpleasant. My boyfriend and I took the icing off, and the cake was amazing.
My heart just fluttered. This is amazing! It is gorgeous and I hope to try it soon!

If you have regular vanilla cake mixes, that would work. You’d just add sprinkles to it. If you don’t have cake mixes, I’m not sure without testing it.
About how many does this feed? Thinking of making one for my daughter’s birthday party! Assuming I’m going to have to double it and use rectangle pans. Or I cold always make some cupcakes to set around the cake for those who would prefer that over cake..
It’s a pretty rich cake, so I’d say it’d make at least 12 slices.
Just made this for my sons birthday. It came out beautifully and tasted nice but was incredibly rich. No one was able to finish a normal sized slice even though everyone enjoyed it. The leftover slices were left on the counter overnight and were still moist in the morning so it does keep well,much better than normal cake. Make sure you have lots of people to share this with.

If you can’t find funfetti, you could use a regular vanilla cake mix with some added sprinkles.

Yes, I’d recommend refrigeration.
I made this cake for Thanksgiving. It was a huge hit. I do want to warn others, it is a very timely project and your kitchen will get filthy. But its worth it when you get a result like this!

Hi Karen! I do my best to describe that in #5 of the instructions under the section about assembling the cake. I put saran warp in the bottom of the pan and up the sides and use that to lift the cake out when it’s done. You can also add a cake cardboard circle underneath the cake and on top of the saran wrap to help in stay steady.

Just made this cake for a birthday and everyone loved it! No one could eat more than a small piece because it’s so rich so we ended up with 24 pieces of cake. I wrapped up the left overs in Saran Wrap and froze them. We look forward to having more cake later 😄

Awesome! So glad you like it! I store it in the fridge, but let it sit out for maybe 20 minutes before serving.
How far in advance can you make this and would you leave it in the fridge until a few hours before serving
I’d probably refrigerate it for a few hours once it’s all put together so that the cookie dough firms up a bit. Then take it out maybe 20 minutes before serving, so it isn’t too hard.

I made the cookie dough/brownie/funfetti cake, as requested for a birthday. I followed the recipe exactly, and my cake is the image of the cake picture posted. Even as I was making this cake I wondered how anyone could eat it, but as it was a request I continued. It is truly an inedible, heavy mass of fat and sugar. Nobody ate more than a morsel. Yes, it is pretty, but disgusting.
Absolutely disguting! This cake looks gorgeous, but is waaaay too overloaded with sugar. It does not taste good whatsoever!!
