A Fun & Easy Way to Enjoy Smores Dessert

Do you ever feel like you’re just constantly multitasking? And it’s hard to turn it off?

This week has felt that way for me.

Work has been pretty busy. The blog is busy. Life is busy. It feels like there’s a million moving parts to keep track of. Between all of it I kind of thought my head might explode yesterday.

My initial reaction when I feel like there’s just so much to do is to just keep going and try to get it all done. I almost decided to just skip working out so that I’d have more time.

Then I decided that working out might be the best thing. Not only for obvious health reasons, but also because it forces me to just stop for a little bit. Get my mind back in order. When I’m working out, I can’t really be doing a million things at once. I can think about doing a million things at once, but at least I can’t do them. 🙂

And yesterday my mom called in the middle of my cardio. Usually I prefer not to chat and do cardio, but she doesn’t care if I sounded out of breath. And it was good because then I just chatted and my mind got a break too.

I felt much more refreshed afterwards and less stressed and like my head might explode. Yay for that! 🙂

Then I went home and had a smores ice cream bar. All better!

How to Make these Smores Ice Cream Bars

So these smores ice cream bars start off with a graham cracker crust. The chocolate ice cream has toasted marshmallows mixed in, which I love. They add a bit of crunch and texture to the smooth and creamy ice cream.

And even better, the ice cream doesn’t need an ice cream machine. It’s my favorite way to do it. The base of the ice cream is cream cheese and Cool Whip – yummy! If you don’t care for Cool Whip, you can use homemade whipped cream. It won’t make a difference, but I do love the ease of Cool Whip sometimes.

The bars are topped with more toasted marshmallows and honestly, you could probably add even more of them. They are just so darn good! Just be aware – they are kind of sticky to work with. You want to make sure to let them cool a little bit after you toast them – I find them easier to work with that way.

I drizzled on some chocolate sauce (is ice cream ever complete without it?) and a little bit of mini chocolate chips, but that’s completely optional.

What isn’t optional is enjoying these bars. They are super easy and delicious!

Smores Ice Cream Bars

Description

These Smores Ice Cream Bars are the perfect summer treat! Cold and refreshing, and with the exception of toasting the marshmallows, they are completely no bake! You’re going to love this fun smores dessert idea.


Ingredients

CRUST

  • 1 1/4 cup graham cracker crumbs
  • 5 tbsp butter, melted
  • 4 tbsp sugar

ICE CREAM AND TOPPING

  • 8 oz cream cheese, room temperature
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/2 cup cocoa
  • 1 tsp vanilla extract
  • 8 oz Cool Whip (or homemade whipped cream)
  • 2 1/2 cups mini marshmallows
  • chocolate sauce
  • handful of mini chocolate chips, optional

Instructions

1. Place mini marshmallows onto a cookie sheet lined with parchment paper. Space them out as best you can so they don’t stick together too much.
2. Bake at 350 degrees on convection bake for 5-7 minutes or until browned.
3. Remove from oven and set aside to cool.
4. Line a 9×9 cake pan with parchment paper that sticks up above the sides.
5. Combine graham cracker crumbs, butter and sugar.
6. Press graham cracker mixture into the bottom of the pan.
7. Mix together cream cheese, sugar and milk. It will be lumpy.
8. Add cocoa and vanilla and mix well.
9. Fold in cool whip.
10. Fold about half of the marshmallows into the ice cream mixture. If they stuck together when toasted, pull them apart as best you can.
11. Spread ice cream into an even layer on top of the graham cracker crust.
12. Top ice cream with remaining toasted marshmallows, chocolate sauce and mini chocolate chips, if using.

      It’s not a traditional ice cream that uses an ice cream machine, but it’s nice and easy and you really can’t tell the difference. 🙂 I hope you’ll give it a try.
