So we had kind of a crazy Saturday night. We out on the boat during the day, which we hadn’t done in a few weeks.

It started out great – we took our black lab and our friends brought along their dog. It ended up not being too terribly hot, so the dogs actually did pretty well. The lake was pretty busy though so we waited until a little later to start tubing and wake boarding.

The last tuber was the hubs, who decided he wanted me to come out and ride with him, so I did.

Unfortunately, on our first run we hit a pretty big wave and when I came down on the tube, my chest hit first and my back bent, with my legs kind of flying up behind me. I heard a pretty loud crack and immediately let go of the tube.

I totally though I’d just broken my back. It seriously scared me. The hubs had our friends call 911, but I realized I was fine before they sent anyone, so that was good. It took a minute for me to make sure I could still move everything and was fine, but we still went to the ER to get looked at. I was really lucky it wasn’t worse. I really thought it was going to be.

Fortunately, the X-ray looked good. I just have to go to an orthopedist now to make sure the stuff that doesn’t show on an X-ray is all good too.

They gave me a pretty massive shot to the butt, which was a first, for the pain. That thing knocked me out. I was talking all kinds of gibberish, which the hubs found amusing.

Now I’m laid up with some pain killers and muscle relaxers. It made for relaxing Sunday for me to edit these pictures. 🙂

These trifles received a big thumbs up from everyone! I only made about half of what the recipe actually makes and I should have made the whole batch! Everyone loved them. Who doesn’t love layers of red velvet, chocolate and Oreos? Total yum in my book.

And everything is way cuter in jars, don’t you think? I just love them. I can’t decide if I like the bigger or smaller ones better.

I ended up making a mixture of both sizes. The recipe below lays out how to make the larger 8 oz ones, but there are notes for how to make the 4 oz ones too. The bigger ones are basically just an extra round of the layers.

I sure wish I had some of these Red Velvet Oreo Trifles left right now while I’m laid up on the couch. They’d be gone in no time! 🙂

Red Velvet Oreo Trifles in a jar

Description

These Red Velvet Oreo Trifles in a jar have layers of moist red velvet cake, chopped Oreos, no bake Oreo cheesecake + chocolate sauce! Easy & so tasty!


Ingredients

RED VELVET CAKE LAYERS

  • 1 egg
  • 1/2 + 1/8 cup oil
  • 1/2 + 1/8 cup buttermilk
  • 1/2 tbsp vinegar
  • 1/2 tsp vanilla
  • 1 oz red food coloring
  • 1 1/4 cups flour
  • 1 cup sugar
  • 1 tbsp cocoa
  • 1/2 tsp baking soda

OREO CHEESECAKE LAYERS

  • 16 oz cream cheese, room temperature
  • 1 cup sugar
  • 2 tsp vanilla
  • 16 oz Cool Whip
  • 2 cups Oreo crumbs*
  • 2530 Oreos, cut into pieces*
  • Chocolate sauce

Instructions

1. To make red velvet cake, prepare an 8 inch cake pan. Preheat oven to 350 degrees.
2. Whisk together all wet ingredients in a large bowl until combined. Set aside.
3. In a large mixing bowl, whisk together all dry ingredients until combined.
4. Add wet ingredients to dry ingredients and mix on medium high until completely combined.
5. Pour batter into cake pan.
6. Bake at 350 degrees for 19-21 minutes or until a toothpick inserted comes out clean.
7. Allow to cool for a few minutes and then remove to a wire rack to finish cooling.
8. To make Oreo layer, add cream cheese, sugar and vanilla to a bowl and beat until smooth.
9. Fold in Cool Whip and Oreo Crumbs.
10. To layer trifles, cut cake into 12 slices. About one slice will be used per trifle.
11. Crumble about half of one slice of cake into the bottom of a jar.
12. Top with a layer of chopped Oreos.
13. Top Oreos with a layer of Oreo cream cheese mixture.
14. Add a layer of chocolate sauce.
15. Repeat steps 11-14.
16. Refrigerate trifles until ready to eat.

Notes

To make trifles in smaller jars, skip step 16, and only have one of each layer. It will make about 24 trifles.
*You’ll need most of two 14.3 oz boxes of regular Oreos

    Hi Lindsay! I”m trying to put together a Valentine’s day themed care package for my boyfriend. I read that desserts in jars travel fairly well, and he only lives three hours away. Would you think that the trifles would ship well? They look amazing.
