Homemade Popsicles Recipe

I don’t know about you, but it has been crazy hot in Atlanta recently. You just step into the sun and sweat like crazy. Well, these popsicles are the prefect treat on a hot day like that – cool and refreshing! Plus, with the addition of Lucky Leaf Peach Pie filling, they are the perfect summer-y fruit flavor!

I have been dying over peaches lately. It is peach season and I love baking with them, so when Lucky Leaf sent me some peach filling to bake with, I couldn’t wait! Their pie fillings are delicious and are great for using in baking.

I tried their cherry filling a few months ago in this ice cream cake and loved it. The peach filling was delicious too and the flavor is perfect in these popsicles.

The popsicles are thick and creamy in texture and full of peaches. The peach mixture is layered with a cinnamon streusel and the combination, quite frankly, rocks.

When frozen, the streusel is a little cake-like in taste and texture. The combination of creamy and cake-y is terrific and SO good!

How to Make Peach Streusel Popsicles

The base begins with cream cheese and is flavored with sugar, cinnamon, sour cream, milk and cinnamon. It’s so quick and easy to mix together with a mixer. Then just stir in the pie filling – juices and all. The juices help flavor the cream cheese mixture and the peach chunks are delicious! I love the taste of them frozen.

The peach slices are a bit bigger than you need, so you can run a knife through them after you’ve mixed them in (that’s how I did it) or you can cut them up before you add them to the cream cheese mixture. The peaches are sot and eat to cut, they just need to be a little smaller so that they fit nicely into the popsicle mold.

The peach mixture is layered with the streusel – which you definitely don’t want to leave out! The bites with the peach mixture and the streusel together are my favorite! The important thing about making the streusel is to keep the butter cold when you mash it together, so that it stays crumbly.

With the pie-like flavor and streusel combo, these popsicles will satisfy many cravings all in one – ice cream, cake and pie! The perfect treat! 🙂

Peach Streusel Popsicles

Description

These Peach Streusel Popsicles are the prefect cool and refreshing treat for a hot day. Loaded with cinnamon and brown sugar, they’re like a peach pie in popsicle form!


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup brown sugar
  • 1/3 cup milk
  • 12 tsp cinnamon
  • 1/4 cup sour cream
  • 1 can Lucky Leaf Peach Pie Filling

CINNAMON STREUSEL

  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup butter, cut in pieces

ADDITIONAL

  • Popsicle sticks
  • Popsicle mold

Instructions

1. Combine cream cheese, powdered sugar, brown sugar, milk, cinnamon and sour cream and mix well.
2. Pour pie filling into a bowl and chop up peaches so they’ll fit well in the popsicle mold. Add pie filling to cream cheese mixture.
3. In another small bowl, combine flour, brown sugar and cinnamon. Add butter and mash into the dry mixture until crumbly.
4. Fill popsicle mold about halfway with peach mixture.
5. Add a layer of cinnamon streusel.
6. Fill remaining space with more peach mixture.
7. Add a popsicle stick and fill in the area around the stick with more streusel.
8. Place into freezer until fully frozen, at least 4 hours. To help remove popsicles from mold when frozen, run under warm water and allow to sit for about 5 minutes.
