This Crock Pot Red Beans and Rice recipe is my new favorite meal. Not only is it FULL of flavor, but it’s also the easiest thing to make. Just toss it in the crock pot, go about your day, and enjoy it at dinner time!
Best Beans and Rice Recipe
Red beans and rice is actually a popular New Orleans cajun meal, but it was introduced to me in college by a roommate of mine. I’m not sure where her recipe came from, but I fell in love. When I found this recipe I knew I had to try it and I fell in love all over again. I had forgotten just how good this stuff is. It has so much flavor and just enough spice. If you are a fan of sausage and beans there is no doubt you will love this.
And again it is incredibly easy. I mean who doesn’t love a good crock pot meal? The only thing required is little bit of veggie and sausage chopping. And truthfully you can buy most veggies already chopped if you really want to.
I do warn you though that it makes A LOT! It could easily feed 8-10 people. And it is quite filling with all the beans, sausage and rice -though I don’t add too much rice to mine. The good stuff is in the red beans and rice. You could definitely cut the recipe in half and though I haven’t tried it, I’d imagine you could freeze it (not the rice though – eww).

- 1 lb bag of dried red beans
- 7 cups water
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 3 garlic cloves, chopped or minced
- 2 cans Campbell’s chicken broth
- 1 1/2 pounds smoked sausage
- 2 tablespoons Creole Seasoning
- Rice
