It's an apple spice blondie filled with apples, topped with a no bake caramel cheesecake, topped with cinnamon apples and even more caramel sauce. This Chocolate Coconut Cake was a huge hit! The chocolate cake is my favorite chocolate cake - it's moist for days and super chocolatey. And the coconut icing and toasted coconut is full of flavor and compliments the cake perfectly. If you saw my "Let's Chill" post from Labor Day, this is the cake with a slice missing that was sitting in the cake carrier with ice packs taped to it. :) I took it to the tailgate for the WVU vs. Alabama football game that weekend. It's not necessarily football food, but I was tasked with bringing sweets and since I'd made this, it was one of the things I brought. These Pumpkin Cookies are full of cinnamon, spice and everything nice! Then they are topped with cinnamon glaze. They were a massive hit with all of my taste testers and have me craving all things pumpkin. :) As far as cookies go, these are certainly more of the cakey variety, but they are absolute cookie perfection. They are super moist, and the glaze makes them even moister. Plus, the spices in the cookie and the additional cinnamon in the glaze ramp up the flavor and will make you want to shove 5 cookies in your mouth at a time. I might have done it myself. Ok not really, I do have some self control. These Caramel Apple Cookie Cups are my first real taste of fall! A brown sugar cookie cup is filled with caramel, then topped with cinnamon apples and it is SO good! Kind of like an apple pie in a cookie! The hubs went nuts over them and has officially named them the best thing I’ve ever made - with some serious enthusiasm. :) I have kind of fallen in love with cookie cups lately. This Caramel Sauce is a very easy one to make - and it’s my favorite! I love the flavor that you get from a caramel made with brown sugar! And this version is harder to burn and ruin - a definite plus! Fall is quickly approaching and I’ve been enjoying some seriously nice weather recently. We have a little outdoor area at the building where I work. I can sit in the shade and work and the last few days have been beautiful - almost chilly. This Monster Cookie Cheesecake Pie is everything you'd want - a delicious, soft monster cookie stuffed with a creamy peanut butter cheesecake. The whole thing is chewy, peanut buttery and totally yummy! So I mentioned Friday that I was going to see Boyz II Men and En Vogue in concert Friday night and I just wanted to tell you - it was AMAZING! If they are coming to your city, you have got to go! First of all, the venue was awesome. I'd never been to Chastain Park, so we were totally unprepared, but it's totally unique. It's outdoors and has tons of space between each row, so shaking my tail feather was not a problem at all. :) And you can bring in tv trays and coolers.
