Trust me when I tell you that you want to make this Smores Cheesecake. The combination of thick and creamy chocolate cheesecake, melty toasted marshmallows and graham cracker crust is totally to die for and the perfect summer dessert! Plus, get pumped because this week is S'mores Week!! A bunch of wonderful bloggers will be bringing you s'mores inspired desserts all week long! So it rained here a good bit of the weekend. It finally stopped Sunday, but it stayed wet and dark and cloudy even when the rain stopped. Fortunately it wasn't also cold. But all that rain meant indoor activities which meant a lot of chillaxin' on the couch and checking out stuff on Netflix. Saturday morning, the hubs slept in. I didn't. I don't seem to be able to do that anymore and it makes me sad. Between my … [Read more...]

Raspberry Chocolate Cupcakes

Raspberry_Chocolate_Cupcakes-featured

These Raspberry Chocolate Cupcakes are a classic flavor combination! I used my favorite chocolate cupcake and topped it with a delicious raspberry icing that uses fresh raspberry puree. Delish! So you know how I mentioned last week that our air conditioning hasn't been up to par lately and we installed fans? Well we finally got someone out to the house yesterday to check things out. The hubs had a break from lessons and was able to be there, which was great. Turns out, we have a leak of the coolant, or whatever it's called, in the air conditioning unit. The good news is that it's still under warranty, so it can be replaced. The bad news is that he couldn't actually find where the leak was coming from and he has to find that before they can do whatever has to be done for the warranty. So … [Read more...]

Strawberry Dulce De Leche Cake

Strawberry_Dulce_De_Leche_Cake-featured

This Strawberry Dulce De Leche Cake is just heavenly! It may seem like an odd combo - until you taste it. It's made with layers of moist vanilla cake filled with dulce de leche, strawberries and vanilla buttercream. Yum! So the hubs was totally cracking me up yesterday morning: Since I started volunteering with the 2 year olds on Sunday mornings, the hubs and I's actual church service attendance has been a bit spotty. For a while we tried to go to the early service and then I stayed for the later one that I volunteered for. But eventually, the hubs took some Sunday morning lessons since that day and time was specifically requested. However a couple months ago, we finally attended service together again and it reminded us how much we enjoy that on our Sunday mornings. The hubs requested that we … [Read more...]

Lemon Cookie Cake

Lemon_Cookie_Cake-featured

This Lemon Cookie Cake is soft and chewy and has a lovely light lemon flavor! It’s topped with a lemon buttercream and is the perfect summer-y cookie cake! So summer tv is pretty lousy, am I right? There’s just not much on, with the exception of wonderful guilty pleasures like 'The Bachelorette'. To make up for the lack of interesting things to watch recently, I finally jumped onboard the Downton Abbey train. Hooked, I tell you! I finally finished the fourth season last night. Honestly, I found the end of the fourth season to not be nearly as exciting as the ends of seasons two and three, but certainly less depressing than the end of season three. When the hubs was out of town last weekend, I was constantly at war with myself over whether or not to bake or watch Downton Abbey. Most of the … [Read more...]

Banana Split Icebox Cake

Banana_Split_Icebox_Cake-featured

This Banana Split Icebox Cake is a blend of some of my favorite fruity flavors! Banana, pineapple, strawberry and cherry all make an appearance and are topped with chocolate and caramel sauce! No bake, easy to make banana split heaven! No bake desserts like this one are great right now, since it's getting so darn hot. Our upstairs bedroom has been heating up during the day recently and it hasn't been so good. We need to get someone out to service the air conditioning, but can't seem to get on it. Instead, we bought fans. The hubs and I have been talking about getting fans for forever, even before the bedroom started getting warm. But Lowes had a 20% off deal over the weekend, so we jumped on it. Of course once we had the fans, the hubs wouldn't rest until they were installed. So Sunday night … [Read more...]

Neapolitan Millionaire Cake

This Neapolitan Millionaire Cake is a fun mix of flavors and textures! It's got chocolate cake on the bottom, strawberry cheesecake in the middle and vanilla bean mousse on top. A beautiful party in your mouth! Well I hope everyone had a great weekend and enjoyed the holiday. The hubs was out of town until late Saturday night, so I actually spent some time baking and catching up on some shows. It's always nice to get a little time to catch up on my girly shows that the hubs doesn't watch. :) I did still get together with some friends for dinner and fireworks. I love watching fireworks and the past couple years we've had rain, so it was nice to finally see some fireworks this year! Saturday I spent the third Saturday morning in a row taking Jessie (our black lab) to the vet. She has terrible … [Read more...]

Peach Pie Cupcakes

Peach_Pie_Cupcakes-featured

These Peach Pie Cupcakes are all my favorite elements of peach pie rolled into a cupcake - cinnamon, sugar and of course, peaches. They’re moist, fluffy and will be your new favorite summertime cupcake! So do you remember the Thick and Chewy Chocolate Chip Cookies I posted last week? And how the hubs wasn’t going to stop pestering me until I made him more? Well I finally did at the end of last week and he was thrilled. A little later he went to go get another cookie and saw that I’d eaten one. He was not happy. Apparently, if I want cookies, I have to make my own because those are his. I’m sorry, did I make those? Doesn’t that make them mine and I’m just kindly sharing. ;) He’s such a nut. And big cookie guy. He didn’t actually get around to tasting these Peach Pie Cupcakes because they … [Read more...]

Red Velvet Oreo Trifles in a jar

Red_Velvet_Oreo_Trifle_in_a_Jar-featured

These Red Velvet Oreo Trifles in a jar have layers of moist red velvet cake, chopped Oreos, no bake Oreo cheesecake and chocolate sauce! Chocolatey, easy to make and so tasty! So we had kind of a crazy Saturday night. We out on the boat during the day, which we hadn't done in a few weeks. It started out great - we took our black lab and our friends brought along their dog. It ended up not being too terribly hot, so the dogs actually did pretty well. The lake was pretty busy though so we waited until a little later to start tubing and wake boarding. The last tuber was the hubs, who decided he wanted me to come out and ride with him, so I did. Unfortunately, on our first run we hit a pretty big wave and when I came down on the tube, my chest hit first and my back bent, with my legs kind … [Read more...]

Baklava Poke Cake

This Baklava Poke Cake is full of cinnamon, walnuts and honey! The flavor combination is seriously addicting and tastes just like you're eating a cake version of the real thing. So did you watch the USA vs Germany World Cup game today? I'd say it was a great game, but we lost. That's not so great. However, we can take solice in the fact that we still get to move on to the next round. The dream is still alive! I'm not really an avid soccer watcher or anything, but the hubs likes it and some of my coworkers are pretty big soccer fans so I've actually seen quite a bit of soccer since the World Cup's been on. In fact, I work full-time for a smaller company and enough of them were totally into it that we actually got to watch the game during lunch. One of my coworkers, who is totally into … [Read more...]

Thick and Chewy Chocolate Chip Cookies

Chocolate_Chip_Cookie-featured

These Chewy Chocolate Chip Cookies are thick and full of chocolate chips! The hubs and I are totally in love with them. I've already promised to make them again - stat! When I went down to Miami in May for the BlogHer Food Conference, I stayed with some friends the first night I got down there. My friend Natalie, being an awesome friend and knowing that I am obviously a massive sweets lover, had some of her favorite cookies waiting for me to try. They were delicious! Some of the things I noticed most about those cookies were how big and thick they were and how much delicious chocolate was in every bite! I knew I needed to make my own. Having just the right amount of chocolate chips is something we all try to get right. I've seen chocolate chip cookies with mini chocolate chips to try to … [Read more...]
