Raspberry Chocolate Cupcakes

These Raspberry Chocolate Cupcakes are a classic flavor combination! I used my favorite chocolate cupcake and topped it with a delicious raspberry icing that uses fresh raspberry puree. Delish! So you know how I mentioned last week that our air conditioning hasn't been up to par lately and we installed fans? Well we finally got someone out to the house yesterday to check things out. The hubs had a break from lessons and was able to be there, which was great. Turns out, we have a leak of the coolant, or whatever it's called, in the air conditioning unit. The good news is that it's still under warranty, so it can be replaced. The bad news is that he couldn't actually find where the leak was coming from and he has to find that before they can do whatever has to be done for the warranty. So … [Read more...]

Red Velvet Oreo Trifles in a jar

Red_Velvet_Oreo_Trifle_in_a_Jar-featured

These Red Velvet Oreo Trifles in a jar have layers of moist red velvet cake, chopped Oreos, no bake Oreo cheesecake and chocolate sauce! Chocolatey, easy to make and so tasty! So we had kind of a crazy Saturday night. We out on the boat during the day, which we hadn't done in a few weeks. It started out great - we took our black lab and our friends brought along their dog. It ended up not being too terribly hot, so the dogs actually did pretty well. The lake was pretty busy though so we waited until a little later to start tubing and wake boarding. The last tuber was the hubs, who decided he wanted me to come out and ride with him, so I did. Unfortunately, on our first run we hit a pretty big wave and when I came down on the tube, my chest hit first and my back bent, with my legs kind … [Read more...]

Red Velvet Ice Cream Cake

Red_Velvet_Ice_Cream_Cake-featured

This Red Velvet Ice Cream Cake might just be my new favorite cake, period. I couldn't decide if I want to give it all away so that I couldn't eat it all or just give in and eat it every last bite. The longer it stayed in the house, the more I ate. And not only do I have a great cake today, I joined together with some other bloggers for a giveaway! Woohoo! But back to the cake for a minute... One of my great taste testers said, and I quote, "You told me it was good, but you didn't tell me it was this good!" Well friends, you can't tell me I didn't tell you now. It is that good! I utilized my favorite, super moist red velvet cake, originally from Bakerella but with a tad more cocoa. The cake alone is amazing. The cake layers sandwich ice cream that is just full of red velvet cake crumbs, as … [Read more...]

No Bake Strawberry Milkshake Cheesecake

No_Bake_Strawberry_Milkshake_Cheesecake-featured

This No Bake Strawberry Milkshake cheesecake might be my favorite cheesecake yet! While it’s not my first time baking with strawberry Nesquick, I’ve officially decided that it is magical when added to desserts and this cheesecake is no exception! It’s worth breaking a diet for. I know. I did it. :) As you read this (assuming you’re reading it the day it posted), I am on my way to the BlogHer Food Conference in Miami!! I cannot wait! It'll be so fun to see friends, meet new ones and spend time with my roomie Julianne. We met back in February and she is the best! Plus, I’m stoked to be back in South Florida for a few days. I’ve decided it’s my heaven. I love it. The only bummer is that the hubs couldn’t come with me - he has to work. I can’t wait to tell you all about the trip when I’m back. If … [Read more...]

Fresh Strawberry Cupcakes

Strawberry_Cupcakes-featured

These Strawberry Cupcakes are soft, fluffy, moist and deliciously strawberry! There are pieces of chopped strawberry in the cupcake and pureed strawberries in the icing. No artificial flavor here - all flavor and color is from fresh strawberries. Yum! I've been wanting to give a makeover to the strawberry cupcakes I did back when I first started the blog. While delicious, I felt they could be even better! And since I've been on a mission recently to make the perfect vanilla cupcake (have you seen the picture of all the cupcakes on instagram?), I decided this was the perfect time. Plus, it's springtime. Well, kind of. Spring doesn't really seem to want to stick around. My vanilla cupcake will be coming your way soon, but first I just had to share these strawberry cupcakes. They are a … [Read more...]

Mini Strawberry Cheesecake Cookie Cups

Strawberry_Cheesecake_Cookie_Cups-featured

These Mini Strawberry Cheesecake Cookie Cups are little bites of heaven! A soft and chewy cookie filled with a no-bake cheesecake filling. They're even tastier than I had pictured in my mind. I love it when that happens! :) Yesterday was a crazy travel day! I'm in Salt Lake City for the Build Your Blog Conference hosted by the sisters of Six Sister's Stuff this weekend and I couldn't be more excited! Getting here was not easy though! I had a flight delayed, which was going to make me miss my connection. So I changed flights and decided to go through Philadelphia rather than Houston, TX. I figured if I was potentially going to get stranded somewhere, Philly would be best since my mom just happens to be working there this week. I ended up with a canceled flight, then a new flight, which was then … [Read more...]

Layered Red Velvet Cheesecake Bundt Cake

Red_Velvet_Cheesecake_Bundt_Cake-featured

This Layered Red Velvet Cheesecake Bundt Cake is the perfect red velvet cake! Perfectly moist and tasty, the cheesecake swirl layered in it makes it even tastier! Red velvet + cheesecake = match made in heaven. But before I dive into the recipe, I must tell you about what happened when shopping with the hubs this weekend. Nothing ground breaking, but he always manages to surprise me - and make me laugh. :) We were running a marathon of errands. And no errand run would be complete without a trip to Target. Is it even possible to walk out of Target without buying something you didn’t go in planning to buy? Nope! Especially with that little section near the door where you can always find super cute sprinkles for $1. For once, I’d almost made it! BUT! As the hubs and I are walking through the … [Read more...]

Red Velvet Cupcakes with Cream Cheese Frosting

Red_Velvet_cupcakes_cream_cheese_frosting-featured

Red Velvet cupcakes are a classic - especially with a delicious cream cheese frosting. And these cupcakes are super moist and stay that way for a number of days! I didn't really grow up eating red velvet cupcakes, despite growing up in the south. But the last few years, since diving into the sweets world, I've known a few people that are BIG fans. One them being a co-worker of mine. Last summer I think it was, we were in D.C. for work. We had some downtime and found ourselves on the same road where Georgetown Cupcakes and Sprinkles Cupcakes are. Being the crazy cake fan I am, I ended up with like 15 cupcakes to sample. I LOVE trying different flavors and comparing. And believe it or not, we hit the stores at just the right time - no lines! Seeing that I didn't grow up eating red velvet, I … [Read more...]

Valentine’s Day Strawberry Cream Cheese Bars

valentinesstrawberrycreamcheesebars_featured

So I'm on a bit of a strawberry kick after making the Valentine’s Day Strawberries and Cream Puppy Chow. I've always been a strawberry fan and pink is the perfect Valentine's Day color! It's the perfect color for any occasion actually. My favorite way to eat a strawberry cake is with cream cheese icing, hands downs. But I didn't want a cake. I wanted a bar. They're a bit more portable. So today I bring you Strawberry Cream Cheese Bars. And they are just what I wanted them to be. Soft. Chewy. Pink. Strawberry. Cream Cheese-y. Sprinkle-y. And very easy to make. You start with by mixing the ever fabulous strawberry cake mix with melted butter and milk. Press half of it into the bottom of a greased 9x13 pan. You may think you won't have enough to cover the bottom of the pan, but you will. Trust … [Read more...]

Valentine’s Day Strawberries and Cream Puppy Chow

valentines_puppy_chow_featured

I am so in love with this puppy show. It tastes awesome and is SO addicting! It's adorable and totally festive for Valentine's Day. It's easy to make and inexpensive. AND, as far as sweet treats go, it's fairly guilt free. Does it get any better? The day I took pictures of this beautiful puppy chow, the hubs was helping me out holding some things. I was all focused on my pictures, when I hear crunching. I look up at him and he's smiling and stuffing his face. He was in love. He declared that people were going to "love this stuff." That night we had some friends over and it didn't stand a chance. Gone. He was even happier at that point because he was right. Can you be right though if I never disagreed? Oh well, I'll let him have it. ;) And I'm so in love with the little boxes I put it in. … [Read more...]
