Caramel Apple Blondie Cheesecake

This Caramel Apple Blondie Cheesecake is pure caramel apple heaven, I kid you not. It's an apple spice blondie filled with apples, topped with a no bake caramel cheesecake, topped with cinnamon apples and even more caramel sauce. It's one of my new favorite desserts ever and the perfect way to start off Apple Week! This week my bloggy BFF, Julianne, and I will be bringing you all the apple recipes you'll need for fall! Get ready, because we've got some awesome recipes planned. And before I go any further, I want to thank everyone who read, commented, emailed, etc in response to my post on Friday. Thank you so much for the support. I'm trying to respond to everyone, but haven't been able to get to everyone yet, so know that I appreciate it SO much! So this weekend was quite nice. Funny … [Read more...]

Pumpkin Cookies with Cinnamon Glaze

These Pumpkin Cookies are full of cinnamon, spice and everything nice! Then they are topped with cinnamon glaze. They were a massive hit with all of my taste testers and have me craving all things pumpkin. :) As far as cookies go, these are certainly more of the cakey variety, but they are absolute cookie perfection. They are super moist, and the glaze makes them even moister. Plus, the spices in the cookie and the additional cinnamon in the glaze ramp up the flavor and will make you want to shove 5 cookies in your mouth at a time. I might have done it myself. Ok not really, I do have some self control. But it took all of it to not do that. :) One thing to note when baking these is that unlike the other cookie recipes I have where you want to under bake the cookies just slightly, you don't want … [Read more...]

Caramel Apple Cookie Cups

These Caramel Apple Cookie Cups are my first real taste of fall! A brown sugar cookie cup is filled with caramel, then topped with cinnamon apples and it is SO good! Kind of like an apple pie in a cookie! The hubs went nuts over them and has officially named them the best thing I’ve ever made - with some serious enthusiasm. :) I have kind of fallen in love with cookie cups lately. There will be more to come. I love that they are a fun way to add more texture, layers and flavors to a cookie. The possibilities are endless when you have that little cup to fill with goodies. Since apples and caramel are the perfect pair, and I could just eat caramel with a spoon, I filled these cookie cups with it. Topped with cinnamon apples, these are some seriously dressed up cookies. Eaten warm, they are … [Read more...]

Cranberry White Chocolate Chip Cookies

These Cranberry White Chocolate Chip Cookies are some of my favorites! And with the cranberries, they are a perfect treat for the holidays. I have always loved this flavor of cookie, but the last time a made them was a couple years ago and they were from a mix (gasp!). I don't actually have anything against mixes, but I do like having control over just how perfectly my cookie tastes. I'm a control freak like that. ;) And these babies are just like I like them - full of cranberries and white chocolate, and soft and chewy. They're also pretty big cookies. The more, the merrier I say. And this is a merry time of year. And guess who was merry this weekend! Yes, I was. But mostly is was Jessie (our black lab). She turned 3 on Friday! I can't believe she's already 3. She'll always be my baby. :) I … [Read more...]

Plus, I get to give one of my awesome readers (maybe you!) a gift card too! Does it get any better? Though I'm sure you can guess from the pictures and title of the post which dessert I chose to recreate, let's start by taking a look at the line up of desserts, shall we? Pumpkin Cupcakes with Maple Cinnamon Cream Cheese Icing

I'm so excited to share my first pumpkin recipe of the season with you! These pumpkin cupcakes are so moist, wonderfully spiced and pumpkiny! And the icing is pure heaven. Cinnamon and maple compliment the pumpkin perfectly! If you've tried my carrot cake, this is actually a new version of that recipe. And that cake is awesome! My niece turns 10 in a couple weeks and it made it onto her birthday list (right behind the ipad and headphones :) ). It totally amazed me how my nieces absolutely loved that cake when I made it for Easter a couple years ago. They've never forgotten it either. And these cupcakes are just as tasty - but with pumpkin and instead of carrot, and a few other differences. And who doesn't love a good cream cheese icing? This one is a lighter cream cheese icing. I wanted a bit … [Read more...]

Sweet Potato Casserole with Marshmallows

Can you believe Thanksgiving is only a week away?! It's crazy! And it's time to start planning out your meal if you haven't already. Last week I shared one of my Thanksgiving essentials - Cheesy Hash Brown Casserole. Today I share with you another true essential. Sweet Potato Casserole with marshmallows. No nuts here, my friends. I like it sweet, remember? Without this, my Thanksgiving feast is pretty much over. For the past few years I've been working on perfecting these sweet potatoes. They truly are my favorite and they must be just the right combo of enough sweetness, marshmallows and the right consistency. Not too runny. I could eat these for every meal, every day. Even for dessert. So if you don't already have a recipe you love, or even if you do, these would be some good ones to try. … [Read more...]

Double Pumpkin Butterscotch Rice Krispy Treats

I'm a fan of rice krispy treats. They seem fairly guiltless. And when you spice 'em up a little, you get to pack a lot flavor into fewer calories than cake requires. And there are days that I just shouldn't eat cake. Sad as it may be. I'm not one of those naturally skinny people. I have to work at it. So I worked really hard this past weekend and made these tasty treats. :) And they really do have a lot of flavor. A little more butterscotch-y than pumpin-y, but still yummy. They were quite popular among our friends. If you're anything like my husband, than you're tired of all the pumpkin already. But if you're like me then you're still excited about it. At least for another few weeks. Which would be good because I'm not done with pumpkin yet. So go ahead and enjoy these until I give you … [Read more...]

Cheesy Hash Brown Casserole

This is one of my very favorite things to make eat. I actually try not to make it often because it makes quite a bit and I just can't stop eating it! Cheese and hash browns are an unbeatable combo. And the mix of salty and sweet is amazing. Plus, it's so easy to throw together. It's sweet, you ask? Why yes, I love sweet. You could take the sweet out, but I'd be sad. The sweet comes in on top of the casserole. The original recipe (I don't actually know where the original is from. For me it came from a friend over the phone years ago.) calls for regular old cornflakes crushed up and mixed with butter on top. I did that for a while, but my only problem with that was that after I used the 2 cups of crushed cornflakes that I needed, I still had quite a bit left in the box. And I don't eat unsweetened … [Read more...]

Overnight Pumpkin Spice Baked French Toast Casserole

The name of this recipe sure is a mouthful! It's a modified version of the Overnight Cinnamon Baked French Toast Casserole recipe(also a mouthful) from a couple weeks ago. In the spirit of the holidays and all things pumpkin I "pumpkin-ified" it - much to my husband's dismay. He gets pretty tired of all the pumpkin spice stuff everywhere this time of year. :) So in an effort to not have to eat the whole thing by myself, I made it at my parents house when we visited a couple weekends ago. It is was a big hit! And since my mom was going out of town the next day and was trying to get rid of everything in her fridge, I took the leftovers to a friend when I went to see her later that day. Unfortunately I didn't realize just how much of a hit it was with my dad. He went looking for the leftovers later … [Read more...]
