Guinness Chocolate Brownies

Guiness_Brownies-featured

These Guinness Chocolate Brownies are some of the moistest brownies ever and they are an awesome combination of cakey and fudgy. You will not be able to stop eating them. I have spent the better part of the last couple weeks of my life on these brownies, no joke. I wanted the most perfect version of a guiness brownie to share with you. But before I dive into all that, I have a confession. Get ready. I don't like beer. I know, I know. How can I post a recipe with beer in it when I don't like beer. I can't explain it except to say that it's my dad's fault. I clearly got my taste buds from him - he also does not like beer. It's a thing and he passed it on to me. I have tried so many times to like it. It just won't work. So I fully expected to not like these brownies. I have a coworker who … [Read more...]

Mini Baileys Chocolate Cheesecake Trifles

Baileys_Chocolate_Cheesecake_Trifles-featured

These Mini Baileys Chocolate Cheesecake Trifles are full of chocolate and Baileys flavor! I am totally in love with the fun mix in textures. Between no bake cheesecake, cookie crumbles and whipped cream - these trifles have it all! You know those days where you totally think you're killin' it? At least in one aspect. And then... Well, that happened to me the other day. I bought all the stuff to make dinner in the slow cooker for a night the latter part of last week. I try to have a slow cooker meal at least one night a week - usually Wednesday, since that's the night we go to small group. Well for some reason I just could not remember to put everything into the slow cooker in the morning. Twice I forgot to do it. Twice. #fail So finally Monday morning, I was all ready to go. The meat … [Read more...]

Green Smoothie

Green_Smoothie-featured

Don't let the color fool you, this Green Smoothie tastes anything but green. It is sweet, refreshing and the perfect way to begin the New Year - and your mornings. I hope you had a wonderful New Year's Eve and are ready for an exciting 2015! I have no idea what's in store, but I'm sure it'll be an adventure. :) We rang in the new year with our small group. It was laid back, but a lot of fun. And of course there was champagne. I have to say though, I'm glad the holidays are over. I love them and I love seeing all of our family, but man was it busy. And after all the food I stuffed myself with, I'm ready to get back into the swing of things and back into the gym. I've been slacking lately just trying to keep up with everything that's been going on since Thanksgiving. I'm not really a believer in … [Read more...]

Mint Oreo Cheesecake

Mint_Oreo_Cheesecake-featured

This Mint Oreo Cheesecake is exactly as it sounds - a mint Oreo crust filled with chopped mint Oreos, chocolate sauce and mint cheesecake! It’s a mint chocolate lover’s dream! This cheesecake was made especially for my bloggy BFF, Julianne from Beyond Frosting. This Friday is her second blogiversary, so I wanted to help celebrate with something I knew she’d love. If there are two things I know she’s a fan of it’s mint chocolate and cheesecake, so this dessert is perfect for her! I love making cheesecakes. Certainly, I have always loved eating them as well. Growing up, cheesecake was well known to be my favorite. These days, it’s hard for me to pick a favorite type of cake because I love them all, but cheesecake remains a top lover. Thing is, I’m picky about my cheesecake. It must be thick, … [Read more...]

Mint Chocolate Brownie Brittle Bark

Mint Chocolate Brownie Brittle Bark

This Mint Chocolate Brownie Brittle Bark is smooth, crunchy and super easy to make. It comes together in no time and is great as a snack and perfect for sharing! So with many of our friends starting to have kids, it seems one of the first things we do when we see the babies for the first time is try to decide who the baby looks most like. Mom or dad? Then, as they grow up, there's still those comments about who the kids are more like. And even as an adult, it happens. "oh, you get that from your father." Usually it's the bad stuff that one parent is blaming on the other. I totally get it. Whatever bad things our kids do one day, I'm definitely blaming on the hubs. And the truth is, I'm very much like my parents. The good and the bad. Today let's talk about ways that I'm like my dad. 1. … [Read more...]

No_Bake_Key_Lime_Cheesecake_In_A_Jar-featured

These No Bake Key Lime Cheesecakes in a jar are super fantastic! They are so incredibly easy to make and have the perfect key lime flavor - not too strong, but plenty key lime-y! Plus, today is an awesome day! Myself and about 20 other bloggers have come together to throw a surprise virtual baby shower for Lisa from Wine and Glue! One of the great things about blogging is meeting other bloggers and becoming friends. They can be so super supportive, it's really amazing and has quickly become one of my favorite parts. I haven't actually met Lisa in person, but I just love her and her blog! And I hope to meet her in person one day! Reading her story about her last child, Elliot, absolutely touched me. Warning, you may need tissue. My younger brother and I were both born with potentially life … [Read more...]

Baileys Chocolate Cookies

Baileys_Chocolate_Cookies-featured

These Baileys Chocolate Cookies are so moist, chewy and flavorful, you will not want to share. They have just the right amount of Baileys flavor - not too overpowering, but definitely there. And the white chocolate on the outside gives it that extra boost of chocolate flavor, as well as a bit of crunch and variety in texture. I think these might be my new favorite cookie. They are definitely the hubs’ new favorite. I got up last Saturday morning to make them before we left to go do some things that he need to do. I was trying to hurry since I didn’t want to make him late. I was starting to think I was going to be short on time and have to put the dough in the fridge and finish the other half of the cookies later. Then he tasted one of the cookies. All of a sudden he was trying to eat all … [Read more...]

Baileys Chocolate Pie

Baileys_Chocolate_Pie-featured

This Baileys Chocolate Pie is an amazing mix of chocolate and Baileys! It has Baileys in every chocolatey layer - the filling, the ganache and the whipped cream! It's rich in flavor and smooth and velvety in texture. The texture of each layer is slightly different though, so if you're a texture person like me, it's fun. :) The filling is smooth, thick and pudding-like. The ganache is thicker and richer. And the whipped cream is light and…whipped. Mmmm. If you haven't noticed already, I'm a Baileys fan. I'm not really a big drinker, but I love to bake with it. I've made a number treat with it, like No Bake Baileys Cookie Balls and Baileys Puppy Chow. This pie is being added to the list. However, if you aren't as big a fan of Baileys as I am, it's really easy to reduce the amount use to … [Read more...]

Baileys Chocolate Whipped Cream

This Baileys Chocolate Whipped Cream is light and delicious! Perfect for topping your favorite dessert! So you see, I've always been a big fan of Cool Whip. Love the stuff. Will eat it straight out of the carton. But recently, I've been playing around a little more with making my own whipped cream. And not just as a replacement for Cool Whip in recipes, but flavoring it and really making it tasty! And you guys. Flavored and fun whipped creams are no joke. So tasty. So easy. And so fun to eat. I mean, forget about putting it on something. Just use your finger or a spoon. I think half of my whipped cream gets eaten that way. Cool Whip definitely has it's place in my heart still, but it's now a shared space. I've been inspired by friend Julianne from Beyond Frosting in this whipped cream adventure of mine. … [Read more...]

Mint Oreo Icebox Cake

mint-oreo-icebox-cake-featured

This Mint Oreo Icebox Cake is perfectly minty and so easy to make! It's no bake and I'm a big fan of no bake. Certainly by now you know that I also love a more complicated dessert and beautiful cakes as much as the next person, but there are definitely times that easy, quick and super tasty is all you need. This is one of those recipes for one of those times. And it's perfect for sharing with friends! And I need an easier dessert to make this weekend. I felt restricted because our garbage disposal was jammed, so no water would go down the drain and when I tried to use the dishwasher, water started filling up the sink. Eek! So, our Saturday night was spent doing two things. 1. We saw 'The Lone Survivor'. O.M.G. Have you seen that? Amazing. Must see. It absolutely blows my mind that our service … [Read more...]
