This Baileys Chocolate Pie is an amazing mix of chocolate and Baileys! It has Baileys in every chocolatey layer - the filling, the ganache and the whipped cream! It's rich in flavor and smooth and velvety in texture. The texture of each layer is slightly different though, so if you're a texture person like me, it's fun. :) The filling is smooth, thick and pudding-like. The ganache is thicker and richer. Will eat it straight out of the carton. But recently, I've been playing around a little more with making my own whipped cream. I was SO excited to make this cake! And I couldn't wait to share it with you. I mean, how cool is a pound cake that has shamrocks hidden inside? And not just shamrocks, but a four leaf clover?!? It reminded me of a king cake - whoever gets the slice with the baby has special privileges...or something. In this case if you get the slice with the four leaf clover you get good luck!! How awesome is that?! So I got all my ingredients together and bought this shamrock cutter from Michaels. Again, SO SO excited. So after a short break, I'm back with more Baileys treats. St. Patrick's Day needs to get here fast before I overload on Baileys. Today it's in the form of cookie balls. Cookie balls? Yes, cookie balls. No cake here. And not because I don't love cake. I LOVE cake. But these are even easier because there's no baking involved. That's right. You don't even have to turn on your oven. And yet when you bite into these delightful little balls of joy, you'd never know there was no cake involved. And they are best if you make them and then let them sit overnight. Since you guys liked my Valentine's Day version of puppy chow so much, I decided to make a St. Patrick's Day version. As you can probably tell given that this is my second puppy chow post in the last 3 posts - puppy chow is my new favorite thing to make. There are 3 reasons for that. 1. It's so easy to make and change up 2. It's delish and feels less guilty than cake 3. The hubs eats it up like crazy, which means I don't have to do all the dirty work. Sweet! This time I added some Baileys - oh yea! I am a big Baileys fan. And the Baileys in this is seriously awesome and really comes through. But you could easily make this without it and just have a festively colored puppy chow. So with St. Patrick's Day coming up, I'm really fired up for some Baileys treats. I'm a fan. And I've been making this bunt cake for years now. Back when we lived in South Florida it made an appearance at my old job every year. It was one of my co-worker's birthday and she always requested it. I made it this week hoping to take it to our small group. I guess I made it a little too soon though. The hubs normally doesn't demolish a cake - he prefers cookies and puppy chow. But he surprised me this week. It blew me away how quickly he went through this thing. I was lucky to have half of it left. Well I hope everyone had a happy Thanksgiving! I know we had a great one, despite all the crazy driving and traffic. Now we get to look forward to Christmas - my favorite holiday and also my birthday. I wish I could say I'm kicking the week off with a fabulous Christmas themed treat, but alas I haven't quite been on the ball yet. I plan to hop on it this week though. Instead I bring you another wintery treat inspired by a ski trip that the hubs and I took back in February. We were out at Lake Tahoe, which is absolutely gorgeous, but much better skiing than we are skiers. I actually got WAY overconfident in my abilities and decided to try snowboarding with my husband.
