Fresh Strawberry Cupcakes

Strawberry_Cupcakes-featured

These Strawberry Cupcakes are soft, fluffy, moist and deliciously strawberry! There are pieces of chopped strawberry in the cupcake and pureed strawberries in the icing. No artificial flavor here - all flavor and color is from fresh strawberries. Yum! I've been wanting to give a makeover to the strawberry cupcakes I did back when I first started the blog. While delicious, I felt they could be even better! And since I've been on a mission recently to make the perfect vanilla cupcake (have you seen the picture of all the cupcakes on instagram?), I decided this was the perfect time. Plus, it's springtime. Well, kind of. Spring doesn't really seem to want to stick around. My vanilla cupcake will be coming your way soon, but first I just had to share these strawberry cupcakes. They are a … [Read more...]

Carrot Cake Gooey Bars

Carrot_Cake_Gooey_Bars-featured

These Carrot Cake Gooey Bars are sweet, full of pineapple, coconut and white chocolate, and super moist! Can you believe Easter is less than a week away?! It has totally snuck up on me! I am not at all prepared. I will probably be running around like a crazy person on Thursday or Friday night trying to get everything together. Normally my mom pretty much takes care of meals when we are all together for holidays - even when it's at our house. She prefers doing it and since I work full-time, she likes to take the load off of me. I do not complain. I tend to be a bit of a control freak and little OCD about certain things, but we pretty much do things the same way anyway. I am her daughter after all. I totally grew up cooking with her. So much of what I do is simply because she did it that … [Read more...]

No Bake Key Lime Cheesecake in a Jar

No_Bake_Key_Lime_Cheesecake_In_A_Jar-featured

These No Bake Key Lime Cheesecakes in a jar are super fantastic! They are so incredibly easy to make and have the perfect key lime flavor - not too strong, but plenty key lime-y! Plus, today is an awesome day! Myself and about 20 other bloggers have come together to throw a surprise virtual baby shower for Lisa from Wine and Glue! One of the great things about blogging is meeting other bloggers and becoming friends. They can be so super supportive, it's really amazing and has quickly become one of my favorite parts. I haven't actually met Lisa in person, but I just love her and her blog! And I hope to meet her in person one day! Reading her story about her last child, Elliot, absolutely touched me. Warning, you may need tissue. My younger brother and I were both born with potentially life … [Read more...]

Fruit Cheesecake Sugar Cookie Cups

Fruit_Cheesecake_Sugar_Cookie_Cups-featured

These Fruit Cheesecake Sugar Cookie Cups are fresh, fruity and totally perfect for spring! Easter dessert maybe? The combination of moist and chewy sugar cookie, smooth no-bake cheesecake and fresh fruit is such a wonderful mix of taste and texture. I want them all to myself! :) I recently got the chance to try a bag of Zulka Morena Pure Cane Sugar. It's a non-GMO verified and vegan morena sugar. A morena sugar is one that doesn't undergo conventional refining processes, which remove the complexity and flavor in raw sugar cane after it's been processed. Zulka's sugar has a more natural, slightly brown color to it. The granules are also bigger than regular granulated sugar, but it's completely interchangeable with regular sugar -> 1 cup regular sugar = 1 cup Zulka sugar. And it packs a big, … [Read more...]

Deviled Eggs Two Ways

deviled_eggs_featured

Deviled eggs are one of my favorite things about Easter. I make them for other holidays as well, but Easter is the main one given all the eggs. So today I'm sharing my super simple traditional recipe with only 3 ingredients, as well as a dressed up version with bacon, jalapenos and cilantro. Traditional Deviled Eggs (left) and Bacon, Jalapeno and Cilantro Deviled Eggs (right) I have been making my traditional deviled eggs every year since I can remember. As kids, my younger brother and I would hunt for eggs in the morning and then my mom would make brunch. Or dinner depending on how late it got - she's never been one to be on time (love you mom :) ). I always helped her in the kitchen (not just for Easter) and I always made the deviled eggs. Always. Even after all these years, I still LOVE … [Read more...]

Super Moist Carrot Cake with Cream Cheese Icing

Carrot_cake1

Carrot cake is a classic for Easter. If there's one thing bunnies like just as much as hiding Easter eggs it's carrots, right? Or did I just make that up? Whatever. It sounds good. And since the Easter bunny likes carrots (in my world anyways) it makes sense we'd put carrots into cake form to celebrate, no? So that's what I did. And I don't know about you, but while I really love the flavor of carrot cake (with cream cheese icing - swoon) I'm not really a fan of nuts in my cake. Or raisins. Raisins go in cookies, not cake. So while you could easily add nuts and raisins to your cake, I didn't include them in mine. Or the coconut. I like coconut flavor, but not the flakes. It's like eating paper. Ok now that I've told you all the things I don't like, here are the reasons I am in love with this … [Read more...]

Reese’s Easter Egg Puppy Chow

reeses_easter_egg_puppy_chow_featured

Another holiday brings with it another wonderful and festive puppy chow. This time it's an Easter puppy chow! I love how easily puppy chow is changed up for different holidays and it's always such a fun and delicious treat. And the hubs LOVES it! I always know when I make it that he won't be far behind, waiting to run off with it. And by the way, can you believe Easter is in March?!? It's so early this year and it's throwing me off. I keep thinking March is nice and calm - no big plans to make. But no, Easter is actually in 2 weeks! It's crazy! But let's get back to this puppy chow... When I saw a bag of these Reese's easter eggs in the store about a month ago I immediately bought a bag. Before I even made it home I was ripping into the bag. As soon as I tasted them I knew they needed to be made … [Read more...]
