Can you believe it's August already? The year is just flying by! Truthfully I'm a little torn about moving so rapidly towards fall. I don't have kids yet, so back to school doesn't effect me too much - there's just more traffic going to work in the mornings. It's more that I don't want to see the warm weather go. Walking Jessie (our black lab) in super cold weather is the worst. Worse that sweating while walking her. Plus, I've been digging cold treats recently. And those are perfect in warm weather. But I can carry those into winter, right? I mean, ice cream is totally a year round thing. And I love all the fresh fruit right now! My husband has declared these to be "the best cookies he's ever had." That is quite a statement, isn't it? They are full of strawberries, blueberries, white chocolate, cinnamon and oatmeal and I have to say - I agree with him. Normally I chase after him to try the things I make. He can be a great tester most of the time, but since he's not as into sweets as I am sometimes getting him to eat much of it is a bit of work. He'll tell me he really likes something and then let it sit for days. Eventually I'll assume he doesn't want it (or more honestly, I'll no longer to be able to resist) and eat it myself. Deviled eggs are one of my favorite things about Easter. I make them for other holidays as well, but Easter is the main one given all the eggs. So today I'm sharing my super simple traditional recipe with only 3 ingredients, as well as a dressed up version with bacon, jalapenos and cilantro. Super Moist Carrot Cake with Cream Cheese Icing

Carrot cake is a classic for Easter. If there's one thing bunnies like just as much as hiding Easter eggs it's carrots, right? Or did I just make that up? Whatever. It sounds good. And since the Easter bunny likes carrots (in my world anyways) it makes sense we'd put carrots into cake form to celebrate, no? So that's what I did. And I don't know about you, but while I really love the flavor of carrot cake (with cream cheese icing - swoon) I'm not really a fan of nuts in my cake. Or raisins. Raisins go in cookies, not cake. So while you could easily add nuts and raisins to your cake, I didn't include them in mine. Or the coconut. I like coconut flavor, but not the flakes. It's like eating paper.
