This Chocolate Coconut Cake was a huge hit! The chocolate cake is my favorite chocolate cake - it's moist for days and super chocolatey. And the coconut icing and toasted coconut is full of flavor and compliments the cake perfectly. If you saw my "Let's Chill" post from Labor Day, this is the cake with a slice missing that was sitting in the cake carrier with ice packs taped to it. :) I took it to the tailgate for the WVU vs. Alabama football game that weekend. It's not necessarily football food, but I was tasked with bringing sweets and since I'd made this, it was one of the things I brought. These Pumpkin Cookies are full of cinnamon, spice and everything nice! Then they are topped with cinnamon glaze. They were a massive hit with all of my taste testers and have me craving all things pumpkin. :) As far as cookies go, these are certainly more of the cakey variety, but they are absolute cookie perfection. They are super moist, and the glaze makes them even moister. Plus, the spices in the cookie and the additional cinnamon in the glaze ramp up the flavor and will make you want to shove 5 cookies in your mouth at a time. I might have done it myself. Ok not really, I do have some self control. These Caramel Apple Cookie Cups are my first real taste of fall! A brown sugar cookie cup is filled with caramel, then topped with cinnamon apples and it is SO good! Kind of like an apple pie in a cookie! The hubs went nuts over them and has officially named them the best thing I’ve ever made - with some serious enthusiasm. :) I have kind of fallen in love with cookie cups lately. There will be more to come. I love that they are a fun way to add more texture, layers and flavors to a cookie. The possibilities are endless when you have that little cup to fill with goodies. So you know how I mentioned last week that our air conditioning hasn't been up to par lately and we installed fans? Well we finally got someone out to the house yesterday to check things out. The hubs had a break from lessons and was able to be there, which was great. Turns out, we have a leak of the coolant, or whatever it's called, in the air conditioning unit. The good news is that it's still under warranty, so it can be replaced. So did you watch the USA vs Germany World Cup game today? I'd say it was a great game, but we lost. That's not so great.
