Guinness Chocolate Brownies

Guiness_Brownies-featured

These Guinness Chocolate Brownies are some of the moistest brownies ever and they are an awesome combination of cakey and fudgy. You will not be able to stop eating them. I have spent the better part of the last couple weeks of my life on these brownies, no joke. I wanted the most perfect version of a guiness brownie to share with you. But before I dive into all that, I have a confession. Get ready. I don't like beer. I know, I know. How can I post a recipe with beer in it when I don't like beer. I can't explain it except to say that it's my dad's fault. I clearly got my taste buds from him - he also does not like beer. It's a thing and he passed it on to me. I have tried so many times to like it. It just won't work. So I fully expected to not like these brownies. I have a coworker who … [Read more...]

Mini Baileys Chocolate Cheesecake Trifles

Baileys_Chocolate_Cheesecake_Trifles-featured

These Mini Baileys Chocolate Cheesecake Trifles are full of chocolate and Baileys flavor! I am totally in love with the fun mix in textures. Between no bake cheesecake, cookie crumbles and whipped cream - these trifles have it all! You know those days where you totally think you're killin' it? At least in one aspect. And then... Well, that happened to me the other day. I bought all the stuff to make dinner in the slow cooker for a night the latter part of last week. I try to have a slow cooker meal at least one night a week - usually Wednesday, since that's the night we go to small group. Well for some reason I just could not remember to put everything into the slow cooker in the morning. Twice I forgot to do it. Twice. #fail So finally Monday morning, I was all ready to go. The meat … [Read more...]

Pecan Caramel Turtle Candy Bars

Caramel_Chocolate_Pecan_Turtle_Bars-featured

These Pecan Caramel Turtle Candy Bars are a fun, easy bar version of a Turtle candy. And to make them even better, they are another recipe from my grandmother's cookbook. So the weather here has been kind of crazy lately. Not Boston crazy, but Atlanta crazy. Like 60s one weekend, then freezing rain and ice a week or two later. Like, how does that work? About this time last year we had the Snowpocalypse. Ice for days and stranded cars everywhere. Fortunately the hubs mad me leave work earlier, so I ended up getting home just as it was starting to get bad. The weather we've had this week has been nothing compared to that, but it is seriously cold. And even though the roads are fine, the ice on our bushes and trees is pretty thick. Some people lost power and some trees were down, but we were fine. … [Read more...]

Red Velvet Cheesecake

Red_Velvet_Cheesecake-featured

This Red Velvet Cheesecake is one of the smoothest and creamiest cheesecakes I think I've ever made. It is insanely good and has the light tang that is so loved in a red velvet dessert. The cream cheese whipped cream on top finishes it off perfectly! Red velvet is one of those flavors that people seem to either love or hate. Some people are just like, red what? That's a cake? And some people think it's basically the same thing as chocolate. It's kind of like the mystery cake flavor. What I really love about it is the tang from the buttermilk and the slight flavor of the vinegar. I don't know how to exactly describe the vinegar taste since it's not like you're actually eating vinegar, because that would be gross. But it ads a very specific flavor that I've come to really love in red velvet. I … [Read more...]

Conversation Heart Chocolate Bark

Conversation_Heart_Bark-featured

This Conversation Heart Chocolate Bark is a great, easy treat for Valentine's Day and it uses one of my favorite things about the holiday - conversation hearts. Is it just me, or is it hilarious that the little things the hearts say are all hip now with things like hashtags? Cracks me up. :) So lately I've been trying to be healthier. I got way off track over the holidays, with so much going on and so much good food. Now I'm eating better, working out harder and eating very little of what I'm baking. It's kind of sad to not eat as much of the yummy stuff I make, and yet I feel much better in general when I feel healthier. So much of healthy eating and working out for me is about how I feel. Sure, I care about my weight, probably too much, but I hate it even more when I don't feel good in my skin. … [Read more...]

Valentines Day Rice Krispie Treat Cupcakes

Valentines_Day_Rice_Krispie_Treat_Cupcakes-featured

These Valentine's Day Rice Krispie Treat Cupcakes are super cute to share for Valentine's Day! They are actually flavored with a strawberry cake mix, but you could use any flavor. The pink cake mix is what gives them their pretty color. They're topped with vanilla icing and a festive gummy heart. I'm in love with them! Can you believe Valentine's Day is just a few weeks away? There's not nearly as much prep as at Christmas, but I know some people and kids put quite a bit into it. I know I used to love getting my Valentines and candy together to give to my friends. I think if I were to pick out valentines right now, I'd go for the Disney princesses. I'm a lifelong fan. But as an adult, it's not nearly as fun. The hubs and I really don't do that much for it, but that's on purpose. We did more when … [Read more...]

Nutella Red Velvet Poke Cake

Nutella_Red_Velvet_Poke_Cake-featured

So if you haven't noticed yet, I'm a big fan of poke cakes. I love how easy they are and how they are soaked with yumminess and guaranteed to be moist for days. This Nutella Red Velvet Poke Cake is no exception. A delicious red velvet cake is soaked with a combination of sweetened condensed milk and Nutella and then topped with a Nutella whipped cream! So the other day, the hubs and I were driving home and my car beeped at us to remind us that my one of my tires was still low on air. The beeping had started weeks ago, but we hadn't done anything about it yet. The hubs found a gas station with an air pump thingy (do those have a word?) and proceeded to fill up the tire. Here's the conversation that ensued when he got back in the car: Hubs: "Man, you're tire was really low. Like 10 PSI low. … [Read more...]

Triple Berry Trifle

Triple_Berry_Trifle-featured

This Triple Berry Trifle is absolutely delicious! It’s light, both in flavor and calories, fruity, and I could’ve eat the entire thing on my own. It’s completely addicting, which turns out great in this case, because it feels so guilt free. Perfect for those trying to eat a little healthier, but also great for summer and 4th of July (I like to plan ahead. :) ) So I know you might be wondering why I’d post a recipe featured lots of fresh fruit smack dab in the middle of winter. Well, let me tell you, because there are many reasons. 1. This dessert is so nice and light, it seemed like a great time for it. Angle food cake is pretty light as far as cake goes, and cool whip is light and can be fat free. Pudding is pretty light. Fruit is fruit - healthy. It makes this such a great dessert option for … [Read more...]

Green Smoothie

Green_Smoothie-featured

Don't let the color fool you, this Green Smoothie tastes anything but green. It is sweet, refreshing and the perfect way to begin the New Year - and your mornings. I hope you had a wonderful New Year's Eve and are ready for an exciting 2015! I have no idea what's in store, but I'm sure it'll be an adventure. :) We rang in the new year with our small group. It was laid back, but a lot of fun. And of course there was champagne. I have to say though, I'm glad the holidays are over. I love them and I love seeing all of our family, but man was it busy. And after all the food I stuffed myself with, I'm ready to get back into the swing of things and back into the gym. I've been slacking lately just trying to keep up with everything that's been going on since Thanksgiving. I'm not really a believer in … [Read more...]
