Raspberry Chocolate Cupcakes

These Raspberry Chocolate Cupcakes are a classic flavor combination! I used my favorite chocolate cupcake and topped it with a delicious raspberry icing that uses fresh raspberry puree. Delish! So you know how I mentioned last week that our air conditioning hasn't been up to par lately and we installed fans? Well we finally got someone out to the house yesterday to check things out. The hubs had a break from lessons and was able to be there, which was great. Turns out, we have a leak of the coolant, or whatever it's called, in the air conditioning unit. The good news is that it's still under warranty, so it can be replaced. The bad news is that he couldn't actually find where the leak was coming from and he has to find that before they can do whatever has to be done for the warranty. So … [Read more...]

Red_Velvet_Oreo_Trifle_in_a_Jar-featured

These Red Velvet Oreo Trifles in a jar have layers of moist red velvet cake, chopped Oreos, no bake Oreo cheesecake and chocolate sauce! Chocolatey, easy to make and so tasty! So we had kind of a crazy Saturday night. We out on the boat during the day, which we hadn't done in a few weeks. It started out great - we took our black lab and our friends brought along their dog. It ended up not being too terribly hot, so the dogs actually did pretty well. The lake was pretty busy though so we waited until a little later to start tubing and wake boarding. The last tuber was the hubs, who decided he wanted me to come out and ride with him, so I did. Unfortunately, on our first run we hit a pretty big wave and when I came down on the tube, my chest hit first and my back bent, with my legs kind … [Read more...]

This Baklava Poke Cake is full of cinnamon, walnuts and honey! The flavor combination is seriously addicting and tastes just like you're eating a cake version of the real thing. So did you watch the USA vs Germany World Cup game today? I'd say it was a great game, but we lost. That's not so great. However, we can take solice in the fact that we still get to move on to the next round. The dream is still alive! I'm not really an avid soccer watcher or anything, but the hubs likes it and some of my coworkers are pretty big soccer fans so I've actually seen quite a bit of soccer since the World Cup's been on. In fact, I work full-time for a smaller company and enough of them were totally into it that we actually got to watch the game during lunch. One of my coworkers, who is totally into … [Read more...]

Thick and Chewy Chocolate Chip Cookies

Chocolate_Chip_Cookie-featured

These Chewy Chocolate Chip Cookies are thick and full of chocolate chips! The hubs and I are totally in love with them. I've already promised to make them again - stat! When I went down to Miami in May for the BlogHer Food Conference, I stayed with some friends the first night I got down there. My friend Natalie, being an awesome friend and knowing that I am obviously a massive sweets lover, had some of her favorite cookies waiting for me to try. They were delicious! Some of the things I noticed most about those cookies were how big and thick they were and how much delicious chocolate was in every bite! I knew I needed to make my own. Having just the right amount of chocolate chips is something we all try to get right. I've seen chocolate chip cookies with mini chocolate chips to try to … [Read more...]

Blueberry Coconut Bundt Cake

Blueberry_Coconut_Bundt_Cake-featured

This Blueberry Coconut Bundt Cake is moist, delicious and a new favorite flavor combination for me. I've been kind of into blueberries recently. They are a bit of a new thing for me. I've always loved them in some things - like blueberry muffins, for example. But I was never totally into eating them on their own. That has changed lately and now I really enjoy them. Plus, they are totally good for you. One of those super fruits! Which by the way totally makes this a super cake and by super I mean healthy. Ok not really, but kinda. I mean, there's fruit in it. That counts for something, right? Like breakfast? But back to the berries. Now that I'm into them, I want to bake them into everything. I had some left over from making the Red Velvet Ice Cream Cake, so while trying to figure out … [Read more...]

Red Velvet Ice Cream Cake

Red_Velvet_Ice_Cream_Cake-featured

This Red Velvet Ice Cream Cake might just be my new favorite cake, period. I couldn't decide if I want to give it all away so that I couldn't eat it all or just give in and eat it every last bite. The longer it stayed in the house, the more I ate. And not only do I have a great cake today, I joined together with some other bloggers for a giveaway! Woohoo! But back to the cake for a minute... One of my great taste testers said, and I quote, "You told me it was good, but you didn't tell me it was this good!" Well friends, you can't tell me I didn't tell you now. It is that good! I utilized my favorite, super moist red velvet cake, originally from Bakerella but with a tad more cocoa. The cake alone is amazing. The cake layers sandwich ice cream that is just full of red velvet cake crumbs, as … [Read more...]

Did you know that June 14 is National Strawberry Shortcake Day? It's true! So today I am celebrating with this Strawberry Shortcake Cheesecake. It combines three of my favorite things - cake, strawberries and cheesecake - into a beautiful dessert that is perfect for celebrating this fun day! If you've been reading the blog a while, then you know I love strawberries. They've been my favorite fruit since I was a kid. My dad will still buy them for me when they're in season and I'm coming to visit. So when I was asked to help Driscoll's Strawberries celebrate Strawberry Shortcake Day, I could not wait. Strawberry shortcake has been a classic dessert for more than 100 years and Dricoll's is easily the strawberry brand I prefer in my shortcake. They always have the best smelling, prettiest berries! I … [Read more...]

Strawberry and Blueberry Cheesecake Icebox Cake

Strawberry_and_Blueberry_Cheesecake_Icebox_Cake-featured

This Strawberry and Blueberry Cheesecake Icebox Cake has become a new family and friend favorite. It boasts a very simple list of ingredients and it’s no bake, which are both big selling points in my book. And if your experience with it is anything like mine, you’ll have people hounding you for the recipe. I made this for Memorial Day. It was the perfect time to make it really - it will now serve double duty. A festive, holiday appropriate dessert - which doesn’t often happen in a food blogger’s home where holiday appropriate desserts are made a month or more in advance - that can still be posted for another upcoming holiday. Score! I made it the night before Memorial Day while my mom was putting dinner together for that night (Sunday). That means I had my mom, dad, husband and sister all hovering … [Read more...]

Mint Chocolate Cookie Cups

These Mint Chocolate Cookie Cups are little bites of heaven. A soft, chocolate cookie with an Andes mint stuffed in the middle is topped with mint buttercream and a chocolate drizzle. They were devoured by all. Have you ever had one of those days where you went out on the lake and had a lovely, relaxing day. You ate good food, enjoyed good company, got a little sun kissed, went tubing for the first time in a year since you can't ski or wakeboard, then you totally crash that night, completely exhausted but grateful for the fun day you had, then you dream about sunscreen and afternoon naps only to wake up in the morning and not be able to move your arms because you are so sore from said tubing? Yea, yesterday was that morning. Oh. my. goodness. My arms and chest. Putting on clothing was a … [Read more...]

This No Bake Strawberry Milkshake cheesecake might be my favorite cheesecake yet! While it’s not my first time baking with strawberry Nesquick, I’ve officially decided that it is magical when added to desserts and this cheesecake is no exception! It’s worth breaking a diet for. I know. I did it. :) As you read this (assuming you’re reading it the day it posted), I am on my way to the BlogHer Food Conference in Miami!! I cannot wait! It'll be so fun to see friends, meet new ones and spend time with my roomie Julianne. We met back in February and she is the best! Plus, I’m stoked to be back in South Florida for a few days. I’ve decided it’s my heaven. I love it. The only bummer is that the hubs couldn’t come with me - he has to work. I can’t wait to tell you all about the trip when I’m back. If … [Read more...]
